Spicy Beef, Snow Peas, Mushroom, and Carrot Stir Fry

We are having a heat wave here in Southern California.  In a time where we usually have June gloom we are having 100 degree weather for a week straight and no end in site.

The last thing I want to do is spend time heating up the kitchen to get dinner on the table.  Nope...not gonna do it.  So one can never have enough 30 minutes meals on hand for days like this, and because this is way BETTER THAN TAKEOUT there's no need to call out for food!

Today, let's talk about a one skillet meal full of beef and vegetables coated with a spicy sauce.  With one skillet (or wok) you can have dinner on the table in less than 30 minutes.  Can't beat that in this heat!

SPICY BEEF, SNOW PEAS, MUSHROOM, AND CARROT STIR FRY


A nice sirloin steak cut into thin strips will give you nice tender beefy bites.  Make sure to cut it across the grain so that it isn't tough when you bite into it.  For the veggies I chose ones that cook quickly and compliment the beefy flavor.  Shredded carrots lend a touch of sweet, while mushrooms (baby bella or white button will both work) lend a earthy meaty flavor.  The snow peas lend crunch and texture and a pop of green to the dish.  Oh, and lets not forget to add in some cashews for a little crunch.  I love them and add them to all my stir frys.

The sauce carries the heat with the addition of chili garlic sauce.  You can adjust that up or down depending on if you want it super spicy or leave it out if you don't want the kids to have it.  The sauce is easy to throw together, but make sure to do this first, as stir frys come together quickly and you want it ready to put in a finish the dish off.

So dinner is done in 30 minutes and the kitchen stayed cool.  But, it's still hot outside so I think a mojito is calling me while I sit and watch the sunset!

Spicy Beef, Snow Peas, Mushroom, and Carrot Stir Fry

serves 4

Sauce:
1/4 cup soy sauce
2 tablespoons dry sherry
1 tablespoon granulated sugar
2 teaspoons cornstarch
1 teaspoon rice vinegar
2 teaspoons chili garlic sauce (such as Lee Kum Kee)
1 tablespoon minced peeled fresh ginger
2 tablespoons sesame oil
2 tsp garlic, minced

Stir Fry:
2 Tbls canola oil
3/4 lb beef sirloin, thinly sliced against the grain into strips
1 cup carrots, shredded
1 1/2 cups snow peas
8 oz baby bella mushrooms, sliced
1/3 cup cashews, whole
Basic Steamed White Rice


In a small bowl mix together the soy sauce, sherry, sugar, cornstarch, rice vinegar, chili garlic sauce, ginger, sesame oil, and garlic.  Set aside.

Heat a skillet over medium high heat.  Add oil and allow to heat.  Add sirloin and cook about 5-7 minutes until cooked to about medium well.  (cook less for medium doneness).  Remove from the skillet to a pan.  Add carrots, mushrooms, and snow peas to the skillet.  Cook about 5-7 minutes until mushrooms have let out their moisture and the veggies are crisp tender.  Add the cashews and stir to lightly toast.  

Add back the beef, stir the sauce and pour over the beef and veggies.  Mix to coat thoroughly.  Place on a serving platter and serve with hot cooked rice.

Blackberry Jalapeno Glazed Pork Tenderloin with Roasted Vegetables

BLACKBERRY JALAPENO GLAZED PORK TENDERLOIN 

THIS is the recipe of the SUMMER!!!  If you make only one new grilled dish this summer make this one.  Otherwise you will be missing out on a dish that totally knock your socks off.  This spicy sweet Blackberry Jalapeno glaze covers a juicy grilled pork tenderloin that elevates this dish to outstanding!

I modified his recipe just a bit.  He brines his pork tenderloin first.  Since I think that a pork tenderloin is tender and juicy as it is I skipped that part.  Plus it made this quicker to prepare and it came out fantastic without the brine.  

The sauce really is the kicker to this dish.  Something this bold needs to have a great side dish that compliments it without overpowering it.  Roasted vegetables are the perfect side dish for that.  I chose multi-colored carrots of yellow and orange, along with fresh green beans, and cauliflower.  (MGG loves his cauliflower!)  Roasting is easy to do so this side dish basically takes care of itself while you grill the pork.

This dish is outrageously good!  Try it at your next opportunity and double it if you want to invite friends over.  Great for Father's Day or any celebration, or just a weekend cookout.  You will be the envy of the crowd, and the new master griller in town!

Blackberry Jalapeno Glazed Pork Tenderloin with Roasted Vegetables


Pork:
1 tablespoon olive oil
1 teaspoon freshly cracked black pepper

1 1 1/2 pound pork tenderloin, silver skin removed

Blackberry Jalapeno Glaze:
1 tablespoon unsalted butter
1 to 2 roasted jalapenos, seeded, minced
1 tablespoon chopped garlic
1/2 cup seedless blackberry preserves
1 1/4 cup wine, preferably Merlot
1/2 teaspoon cornstarch


Vegetables:

1 head cauliflower
1 small bunch of multi-colored carrots
1/2 lb fresh green beans





Make the Blackberry Jalapeno Glaze:
Add the butter to a saucepan over medium-high heat. Once melted, add the jalapenos and garlic and saute for 3 to 4 minutes. Stir in the blackberry preserves and 1 cup wine and combine well. Simmer until reduced by half. Add the cornstarch to the remaining 1/4 cup red wine in a small bowl and mix well. Pour the cornstarch mixture into the pan and cook for 5 to 6 minutes more. Keep the glaze warm until serving.

Preheat oven to 450 degrees.

Prepare the vegetables by cutting the stalk off of the cauliflower and cut into florets. Place on a sheet pan along with the carrots. Make sure not to overlap. Place in the oven and cook for 15 minutes. Remove pan from the oven and flip the vegetables and add the green beans. Return to the oven for another 10-15 minutes until caramelized.

Meanwhile preheat a grill or grill pan to medium heat.

Add the pork tenderloin to the grill and cook for 6 minutes on each side, browning evenly and the internal temperature registers 135 degrees on an instant-read thermometer. At this point, evenly spread 1/4 cup of the glaze over the pork. Cook for an additional 4 to 5 minutes. Remove the pork from heat to a cutting board and keep it warm tented with aluminum foil. Temperature should be around 155 to 160 degrees.

Slice the pork, arrange the slices on a serving platter and serve with remaining warm glaze and roasted vegetables.

Savory Garlic Parmesan Potato Wedges

I think I've been on a potato kick lately. 

A few weeks ago I brought you my go to recipe for Outrageous Oven Fries.  I make this recipe quite often because it's easy, and it goes with so many dishes.

Today we are going to showcase another recipe that is based on some potato wedges we had at a local restaurant we love.  Potatoes  wedges with the skin kept on and fried but topped with a sprinkle of garlic and Parmesan which just melts all over the top! Oh the smell of garlic and cheese on fries is AMAZINGLY good.

SAVORY GARLIC PARMESAN POTATO WEDGES

MGG was talking about those fries the other day so we set out of try and make them slightly healthier, at home!  To accomplish that is to remove all that fat from frying which baking or roasting does.   I've mentioned before that we ALWAYS make oven fries because it cuts the calories by like a gazillion calories....can't beat that if you are craving fries!  

You're gonna love this recipe as this is soooo EASY to make!  The oven really does all the work and with just a little time you have wonderful Savory Garlic Parmesan Potato Wedges to serve as a snack, appetizer, or side dish.  Make a bunch, because they won't last long!

I find that if you buy smaller russet potatoes they are easier to cut into wedges.  Make sure to give the skin a good scrub since you'll be leaving those on like "home fries".  Using garlic powder instead of fresh allows the garlic to stick to the fries better during baking, plus I use finely grated Parmesan which also help with the coating.  Simple and easy is what I love and these potatoes are gonna become a family favorite in your household, no doubt!

Savory Garlic Parmesan Potato Wedges

serves 4


3-4 small russet potatoes
4 tablespoons olive oil
2 teaspoons garlic powder
½ cup shredded Parmesan cheese


Preheat oven to 450.  Place a piece of parchment paper on a large baking sheet.  (Easy clean up)

Scrub the potatoes really well.  Leaving the skin on cut the potatoes into wedges.  Place in a medium bowl.

Drizzle with olive oil and toss to coat.  Sprinkle potatoes with garlic powder, tossing to coat well.  Place the cheese on a plate or pie pan and dredge the potatoes in the cheese so that they stick and are coated well.  Place on the prepared baking sheet, skin sides down and make sure they are not touching. 

Bake for 25-30 minutes until potatoes are slightly crispy and golden brown. Serve immediately.

    I have to say that I'm totally smitten with citrus this year.  

    I recently went on a shopping spree and bought citrus laundry detergent.  You guys!! this stuff is awesome.  Then I went and bought citrus kitchen cleaner, shampoo, body wash, and a even a pint of lemon cream pie ice cream!  I'm in Heaven!!!

    So since I'm on a roll I thought I'd carry over the theme and make you a great summer dessert.

    LUSCIOUS LEMON STRAWBERRY ANGEL DELIGHT

    This dessert is easy to put together.  It can serve a few or a crowd, and is creamy and luscious.  The tart lemon totally compliments the sweet strawberries.  These top some angel food loaf that has been pulled into bite sized pieces.  I placed them all in some cute dessert bowls and layered on the lemon pudding and berries.  Top it with some whipped topping or whipped cream and you are set.

    This would be the perfect dessert for any BBQ, cookout, or FATHER'S DAY party you may be having.

    Luscious Lemon Strawberry Angel Delight

    1 pkg (3/4 oz) lemon instant pudding
    2 cups of milk
    1 pre-made angel food loaf
    1 pint of strawberries, hulled and sliced
    whipped topping 

    In a bowl combine the pudding and the milk. Stirring to combine until all pudding granules are dissolved. Place cling wrap directly on pudding to avoid a skin from forming and place in the refrigerator to set.  

    Tear the angel food loaf into medium bite size pieces.  Hull and slice the strawberries.  To assemble:  Place pieces of cake on dessert bowl or plate.  Top with about 1/4 c of pudding drizzling over the cake.  Scatter about 1/4 cup of strawberries over the pudding.  Add a dollop or two of whipped topping.  Serve.

    Food to Go: Spicy Hot Ham & Swiss Croissants

    Food to Go:  Spicy Hot Ham & Swiss Croissants - Steamy hot sandwiches fresh from the oven that are so mouthwatering, and travel like a dream! Slice of Southern

    We are going on a picnic this weekend!

    MGG and I found a wonderful place to relax and have a picnic in Griffith Park.  It's a beautiful area with lot of shade trees, flowers, and a huge grassy area perfect to laze away the afternoon and have a picnic with great food.

    On the menu will be some favorites of our such as my Garden Fresh Pasta Salad, Fruit Salad with a Red Currant Raspberry Sauce  , Orange Ice Tea, and Banana Pudding Jars, but the star of the show will be these outstanding sandwiches. 

    Steamy hot sandwiches fresh from the oven that are so mouthwatering, and travel like a dream!  One of my favorite sandwiches is a Hot Ham & Cheese.  I've upped the anti on these by making a spicy condiment and placing it all on a hot flaky croissant.  Heaven!

    SPICY HOT HAM & SWISS CROISSANTS

    These sandwiches are bursting with flavor.  Melty Swiss cheese is the perfect compliment to the delicious deli ham.  The spicy mustard sauce bumps up the flavor and gives them that extra POW that takes these to the next level!  

    Oh! and they travel soooo well.  Wrapped up in aluminum foil and hot from the oven just pop them in a bag.  They will stay warm until you reach your destination which could be a park, beach, potluck party or a pool party. We've even taken them to an outdoor concert and they were easy to eat and they taste outstanding.

    Spicy Hot Ham & Swiss Croissants

    serves 4

    4 Tbls Spicy Brown Mustard
    2 Tbls Mayonnaise
    8 slices of Swiss Cheese
    1 lb of deli sliced ham
    4 Croissants
    Aluminum Foil

    Preheat the oven to 350 degrees.  In a small bowl add the mustard and mayonnaise and mix well.
    Split each croissant and spread the mustard mixture on each side.  Add 1/4 of the ham to the bottom slice and top with 2 slices of cheese.  Place the top of the croissant on the sandwich.  Repeat with remaining croissants.

    Wrap each sandwich with aluminum foil and place them on a baking sheet.  Place in the oven and cook for 15 minutes.  You want to heat the ham and melt the cheese really well.  Remove from the oven and serve, or pack and take to your destination.
