Spring Fling: 14 Strawberry Recipes

May is the start of strawberry season and here is a round up of 14 irresistible strawberry recipes!

Each year in May we have our Strawberry Festival in Oxnard, Ca.  It's filled with lots of booths selling artistic creations and crafts, food vendors selling strawberry delicacies, and then there's the heavenly strawberries themselves!  We always bring home a flat of these gems so I can make all the different dishes that include this luscious fruit.

Below is a round up with links to 14 of my favorite strawberry recipes.  I hope you enjoy them.



1.  Strawberry Lime Slushy - perfect to cool down with on a summer afternoon.









2.  Grandma Landon's Strawberry Cake - a throwback recipe that is the best around!






3.  Strawberry Pear Smoothie - The perfect drink during the Spring when strawberries are popping up and pears are still around.  The pears lend a delicate flavor that compliments the strawberries.





4.  Spinach and Strawberry Salad - The perfect light salad.  Simple and delicious.  Great for Mother's day, Easter, or Memorial Day.






5.  Strawberry Banana Pancakes - get ready for all those Spring brunches.  This recipe is a crowd pleaser!






6.  Strawberry Shortcake Scones - I've made these scones for Mother's Day for many years.  They are elegant, flavorful, and lend something special to the day.

13.  Mixed Berry Oatmeal Bars - I love these bars.  These are the best snacks!  I made these recently to take along with us on a road trip to Oceanside.

Spring Fling: Berry Almond Smoothie Bowl

Start your day with a refreshing smoothie bowl filled with raspberries and almonds, and topped with blueberries, coconut, and more almonds.  The best way to start the day!



Berry Almond Smoothie Bowl


I've been obsessed with Acai and Smoothie (MGG calls them smoodie) bowls for about 6 months now.  I've always loved smoothies and have quite a few recipes on this blog, but there is something so naughty about putting it in a big bowl and adding all the toppings.  It's like a decadent treat that is so much tastier than oatmeal or cereal.   

This is a my Berry Almond Smoothie Bowl.  It's filled with my favorite berry, raspberries with an additional of some almonds for a protein burst and some cinnamon for a little warmth.  This is combined with a Greek yogurt, banana, and milk base to create the "bowl", then it's topped with sweet blueberries, coconut flakes, and a sprinkle of sliced almonds.  Heaven in a bowl!

What Ingredients do I need?

  • frozen raspberries
  • 1 large banana
  • Greek yogurt
  • 2% milk
  • sliced almonds
  • ground cinnamon
  • vanilla extract
  • fresh blueberries
  • unsweetened coconut flakes


Substitutions and Variations

  • Top with chocolate chunks.
  • Change up the toppings: strawberries or blackberries are great, or add some sliced bananas.
  • Granola would make a great topping.
  • Leave the almonds out of the smoothie and the topping for a nut free dish.
  • Use almond milk or soy milk if you prefer.



Kitchen Tips and Notes

  • Always use frozen raspberries to get the slushy thick smoothie.
  • Frozen bananas will help, but are not necessary.
  • If your smoothie comes out to thin you can add some ice cubes and blend that in to thicken it up, or add a little more yogurt.
  • Make sure to use a powerful blender.

Berry Almond Smoothie Bowl


serves 1


2/3 cup frozen raspberries
1/2 large banana
1/2 cup plain Greek yogurt
1/2 cup 2% milk
5 tablespoons sliced almonds, divided
1/4 teaspoon ground cinnamon
1/8 teaspoon vanilla extract
1/4 cup blueberries
1 tablespoon unsweetened coconut flakes

Blend raspberries, banana, yogurt, milk, 3 tablespoons almonds, cinnamon, and vanilla in a blender until very smooth.

Pour the smoothie into a bowl and top with blueberries, the remaining 2 tablespoons almonds and coconut.

Mango Pina Colada Smoothie

Add of bit of tangy sweetness to your typical pina colada flavors of pineapple and coconut all in a healthy smoothie.  You will swear you are on a beach somewhere!

A great way to start the day is with a healthy smoothie and what better than one that takes you away to a tropical beach.  With flavors of mango, pineapple, and coconut you'll be whisked away to a tripical island in the carribean.

Full of healthy ingredients like pineapple, mango, banana, and coconut milk this smoothie comes together in a few minutes and is full of vitamins and protein.  A satisfying breakfast that tastes like heaven is on the horizon.

What Ingredients do I need?

  • banana
  • frozen mango
  • frozen pineapple
  • coconut milk
  • greek yogurt


Substitutions and Variations
  • Use coconut flavored greek yogurt for a stronger coconut flavor
  • Use any non dairy milk - or use regular milk in place of the coconut milk
  • Add a dash of vanilla for a boost of flavor




Kitchen Tips and Notes

  • freeze your ripe bananas for making smoothies
  • place the liquid in the bottom of the blender to assist in the mixing
  • Using frozen fruit make your smoothies slushy and there is no need for ice.

Mango Pina Colada Smoothie

serves 2

1 cup greek yogurt
1/2 banana
3/4 cup frozen pineapple
3/4 cup frozen mango
1/2 cup lite coconut milk

In a blender add coconut milk, yogurt, and the fruit.  Blend on high until blended.  If the mixture is too thick add an additional splash of coconut milk and blend again.  Serve immediately.

Tropical Smoothie

Filled with pineapples and strawberries this smoothie will have you starting your day with visions of the tropics!

I made this smoothie back around Easter time and totally forgot to post about it.  It is a delightful smoothie that you will sure to love.  Dreams of tradewinds and palm trees come to mind when tasting this tropical flavored smoothie.  The flavors of coconut milk, banana, strawberries and pineapple mixed together make the most luscious smoothie.

Perfect for breakfast or as a midday snack, this smoothie hits the spot and has you dreaming you were somewhere else.

What Ingredients do I need?

  • banana
  • strawberries
  • fresh pineapple
  • coconut milk
  • greek yogurt
  • ice


Substitutions and Variations

serves 2

6 oz or 3/4 cup greek yogurt
1/2 banana
5-6 strawberries, hulled
5-6 cubes of pineapple
1 cup ice
1/4 - 1/3 cup coconut milk

In a blender add 1/4 cup coconut milk, yogurt, and the fruit.  Top with ice and blend on high until blended.  If the mixture is too thick add an additional splash of coconut milk and blend again.  Serve immediately.

Happy Labor's Day!  I hope everyone is enjoying their holiday. Here's a quick and easy recipe I wanted to share with you today.  


You may not know that I love a good farmer's market and now I'm fortunate that we have one that sets up every Wednesday in our work complex.  It's heaven to be able to go to the farmer's market during the week!  There is one particular stand that sells the best organic fruit and vegetables.  I was in heaven looking at all the food, and walked away with much more items that I should have.

One treat was their strawberries!  Plump, juicy, deep red strawberries that promised to be sweet and luscious!  I couldn't wait to get these home and make a smoothie with them.  Smoothies fall in the "fast and fresh" category and are simple, quick and absolutely delishhh!

Strawberry Cinnamon Smoothie

serves 2

1 6 oz lite vanilla yogurt
1/2 pint of strawberries, hulled
1/2 frozen banana
1/4 cup lowfat milk
1/2 tsp cinnamon
1 cup ice

Place all ingredients in a blender and blend on high until all incorporated and ice has crushed.

Pour into two glasses and serve immediately.

Tropical Sunset Smoothie

Last year for our anniversary we took a wonderful trip to Hawaii.  I'm a beach lover at heart and love all the wonderful things that Hawaii has to offer such as tropical weather, hiking, flowers, beaches, and food.

More specifically I love all the tropical flavors you can get there but one of my all time favorite fruits is the pineapple.

Since it's a hot, hot summer and I'm missing Hawaii I thought I would make a Tropical Sunset Smoothie to bring me back.  We had a smoothie bar in our resort and we loved to stop by there and grab a smoothie made with fresh fruit and sipping on it while watching the waves crash on the lava rocks.

1/2 frozen banana
1/2 cup pineapple chunks
6 whole strawberries
6 oz light vanilla yogurt
1/3 cup pineapple juice
1 cup ice cubes

Place all ingredients in a blender and blend on high until smooth.  Pour into glasses and serve with a straw.
