Cinnamon Croissant French Toast with Maple Syrup and Blueberries

Try my Cinnamon Croissant French Toast with buttery cinnamon bread, golden crisp edges, maple syrup, and fresh blueberries. An easy, cozy breakfast for four!

Cinnamon Croissant French Toast with Maple Syrup and Blueberries

Sometimes the best breakfast ideas come from what you already have in your kitchen! After making a batch of my Bakery-Style Blueberry Maple Pecan Muffins, I had a handful of fresh blueberries left over. And when I spotted a loaf of cinnamon croissant bread at Pavilions, I knew exactly what I wanted to make next—French toast!

Now, I've made plenty of French toast over the years, but using cinnamon croissant bread takes this breakfast favorite to another level. The bread has that wonderful buttery richness of a croissant, with a lovely swirl of cinnamon running through it. It's already delicious on its own, but dipped in a simple egg custard and cooked until golden? Oh my goodness!

What I especially love about this Cinnamon Croissant French Toast is the texture. The inside becomes wonderfully soft and custardy, while the outside develops those lightly crisp, golden edges that make French toast so irresistible. I found that cooking it over medium heat was the secret to getting that beautiful color without overcooking the center.

And those leftover blueberries? They turned out to be the perfect finishing touch! Their fresh, juicy sweetness is delicious alongside the warm cinnamon flavor and a generous drizzle of pure maple syrup. Sometimes the simplest combinations really are the best.

This is the kind of breakfast that makes an ordinary morning feel a little special. It's cozy, comforting, and just indulgent enough for a leisurely weekend brunch, yet easy enough to whip up whenever you're craving something delicious.

So grab a cup of coffee, warm up the skillet, and let's make some French toast!

Enjoy!

Ingredients

The beauty of this French toast is how a few simple ingredients come together to create something that tastes a little extraordinary. The cinnamon croissant bread does much of the work, adding buttery richness and warm cinnamon flavor before we even begin cooking.

Cinnamon Croissant Bread: The star of this recipe! Its buttery texture and cinnamon swirls create a rich, flavorful French toast with a tender interior and beautifully golden edges.  I found mine in the bakery section of the grocery store.

Eggs: Give the custard its structure and help create that soft, rich center.

Milk: Combines with the eggs to make a smooth custard that gently soaks into the bread. I use 2% milk, but whole milk works beautifully, too.

Vanilla Extract: Adds a lovely warmth that complements the cinnamon in the bread.

Salt: Just a pinch balances the sweetness and enhances the other flavors.

Butter: Used for cooking, it helps create a golden exterior and adds another layer of rich flavor.

Fresh Blueberries: Their juicy, slightly tart sweetness is a wonderful contrast to the rich French toast.

Pure Maple Syrup: The perfect finishing touch! Its deep, natural sweetness pairs beautifully with cinnamon and buttery croissant bread.

Equipment

You won't need any special equipment to make this delicious breakfast. Just a few basic kitchen tools will have you enjoying homemade French toast in no time.

Large Nonstick Skillet or Griddle: A roomy skillet or griddle allows the French toast to cook evenly and develop a beautiful golden exterior. I've had this griddle for years and it's still like brand new.  No hot spot and has excellent heat retention.

Shallow Baking Dish: Perfect for whisking together the custard and dipping the bread slices.  Make your baking dishes do double duty.  They're helpful tools and not just for baking!

Whisk: Helps blend the eggs and milk into a smooth, even custard.

Wide Spatula: Makes flipping the French toast easy without tearing the delicate bread.

Measuring Cups & Spoons: For getting the custard proportions just right.

Let's Make It Together

We'll start by whisking together the eggs, milk, vanilla, and a pinch of salt in a shallow dish. Nothing complicated here—just a simple custard that will turn our cinnamon croissant bread into something wonderful.

Next, warm a little butter in a skillet over medium heat. While the butter melts, dip a slice of bread into the custard, dip each side for only 5 seconds per side turning gently. You want the bread to absorb some of that lovely mixture without becoming overly saturated.  Allow any excess custard to drip off.

Place the bread in the warm skillet and let it cook until the underside is beautifully golden. Flip it carefully and cook the other side until lightly crisp and the center is cooked through.

Continue with the remaining slices, adding a little more butter to the skillet as needed.

Arrange the French toast on plates, scatter fresh blueberries over the top, and finish with a generous drizzle of warm maple syrup.  That's it, simple and delicious!

Perfecting the Cooking Process

The secret to really good French toast is finding that perfect balance between a soft, custardy center and a golden, lightly crisp exterior. Since cinnamon croissant bread is naturally rich and tender, it doesn't need a long soak. I found that dipping each slice into the egg mixture for about 5 seconds per side was just right—enough to absorb the custard without becoming soggy. Cooking over medium heat was another key to success! It allows the outside to develop that beautiful golden crust while the center cooks through and stays wonderfully soft. Too low, and the bread stays pale; too high, and the outside browns before the center is ready. It's a simple technique that makes all the difference!

Add Your Touch

One of the things I love about French toast is how easily you can change the toppings to suit your mood or whatever fruit you have on hand.

Try Different Berries: Fresh raspberries, strawberries, or blackberries would be equally delicious.

Add Toasted Pecans: Sprinkle chopped toasted pecans over the finished French toast for a little crunch. This would be especially good with the maple syrup!

Make It Extra Indulgent: Add a dollop of lightly sweetened whipped cream or a dusting of powdered sugar.

Try Warm Apples: Sauté thinly sliced apples in a little butter until tender for another cozy autumn variation.

Use a Different Bread: Brioche or challah can be substituted if cinnamon croissant bread isn't available. Add a little cinnamon to the custard to recreate that warm flavor.

Add a Hint of Orange: A little fresh orange zest in the custard brings a lovely brightness that complements the blueberries.

Swap the Milk: Whole milk or half-and-half can be used for an even richer custard.

Set the Mood

Meals taste even better when the table feels inviting.  Here are a few simple ways to set the mood for this recipe.

Sometimes a simple breakfast turns into something special with just one unexpected ingredient. For this recipe, it was that wonderful cinnamon croissant bread! Its buttery richness and warm cinnamon flavor make the most delicious French toast, especially when paired with fresh blueberries and pure maple syrup.

And I love that those extra blueberries from my muffin baking found their way into another delicious breakfast. There's something satisfying about using what you have on hand and creating a completely different dish.

Before You Start

What is cinnamon croissant bread?
Cinnamon croissant bread is a rich, buttery loaf inspired by croissant dough, with cinnamon incorporated into the bread. It's typically sold sliced and has a tender texture that makes it especially delicious for French toast.

Where can I find cinnamon croissant bread?
I found mine at Pavilions in the bakery section. Availability varies by store, so check your local grocery bakery or specialty bread section.

Can I use regular croissants instead?
Yes! Croissants can make delicious French toast. Slice them in half and dip them gently into the custard. Because they're delicate, they may need less soaking time.

Can I use brioche or challah instead?
Absolutely! Both breads make excellent French toast. Since they don't necessarily have cinnamon baked in, add about ½ teaspoon ground cinnamon to the custard for a similar flavor.

Why is my French toast soggy?
French toast can become soggy if the bread absorbs too much custard or if the skillet isn't warm enough. Give the slices a brief dip and cook over medium heat until both sides are golden and the center is set.

How do I get crispy edges?
Use a little butter in a properly heated skillet and avoid overcrowding the pan. Medium heat allows the bread to brown gradually while the custard cooks through.

Can I use frozen blueberries?
Yes, although fresh blueberries are especially nice for topping. If using frozen berries, gently warm them in a small saucepan until thawed and juicy. They'll create a delicious, lightly saucy topping.

Can I make this French toast ahead of time?
French toast is best served fresh, but you can prepare the custard ahead and refrigerate it in a covered container for up to 24 hours. Whisk again before using.

How do I keep French toast warm while cooking several batches?
Place finished slices in a single layer on a baking sheet in a 200°F oven while you cook the remaining bread. Avoid stacking them, which can soften the crisp edges.

Can I freeze leftover French toast?
Yes! Allow the slices to cool completely, then freeze them in a single layer before transferring to a freezer-safe bag. Separate layers with parchment paper and freeze for up to 2 months for best quality. Reheat in a toaster oven or oven until heated through.
