Winter Crostini with Goat Cheese, Cranberry & Pistachios

Every winter, there’s always that moment when you realize you need one more appetizer. Friends popping by, small get-togethers, and even impromptu gatherings.  I don't want to make something complicated or time-consuming—just a little something that feels special, looks beautiful on a platter, and makes it seem like you planned ahead.

That’s where these winter crostini come in.

It's layered with creamy goat cheese, jewel-toned cranberry preserves, and a sprinkle of chopped pistachios.  Each bite tastes tangy, sweet, and crunchy and the colors alone just feel perfect for the season—a deep red, soft white, and a pop of green—making them as eye-catching.  

Crostini are also one of my favorite hosting shortcuts. Toast the bread, spread, spoon, sprinkle—and suddenly you have an appetizer that works just as well for a cozy winter gathering as it does for a festive evening with friends. They’re simple enough for a last-minute addition, but elegant enough to hold their own on a cheese board or appetizer spread.  Another great one to try would be my Plum and Mascarpone Crostini.

Whether you’re hosting a winter get-together, setting out snacks for a special evening, or just want something small and satisfying to share, these winter crostini always fit the moment.

What Ingredients Do I Need?

  • French Baguette - The sturdy base for crostini—sliced and toasted until golden so it holds all the toppings without getting soggy.
  • Olive Oil - A light brush adds flavor and helps the bread toast up crisp and golden in the oven.
  • Goat Cheese - Creamy, tangy, and easy to spread, goat cheese balances the sweetness of the preserves perfectly.
  • Cranberry Cherry Preserves - Adds a sweet-tart pop of flavor and that deep red color that feels just right for winter.
  • Pistachios - Chopped pistachios add crunch, a hint of saltiness, and a little texture to finish each bite.




Substitutions and Variations

Substitutions
  • Swap the Cheese - Cream cheese, mascarpone, or whipped ricotta all work beautifully if goat cheese isn’t your favorite.
  • Change the Preserves - Cranberry orange, cherry, fig, or even raspberry preserves can be used depending on what you have on hand.
  • Use a Different Nut - Chopped walnuts, pecans, or sliced almonds are easy alternatives to pistachios.

Variations

  • Savory-Sweet Twist - Add a drizzle of honey and a pinch of flaky sea salt over the top just before serving.
  • Herb-Forward - Finish with a light sprinkle of fresh thyme or rosemary for an earthy winter note.




Kitchen Notes and Tips

  • Toast the baguette just until golden—over-toasting can make the crostini too hard to bite into.
  • Let the crostini cool slightly before spreading the goat cheese so it doesn’t melt.
  • For easier spreading, bring the goat cheese to room temperature first.
  • Assemble just before serving for the best texture and presentation.
  • These crostini pair well with wine, cocktails, or as part of a larger cheese board spread.

Winter Warmers: Cherry Almond Scones

Cherry Almond Scones are bursting with dried cherries and almond flavor and make the perfect coffee-break treat!

You may think that bakery goods such as scones are intimidating to make but I'm here to tell you that they really are easy.  It's a similar method to making biscuits.  Once you try it and get the hang of being very gentle with the dough you won't look back and will baking up scones on a regular basis!

For this variation of scone I've used my Basic Scone Recipe and added some plump dried cherries and a little almond extract to the mix to create a scone that is comforting and perfect for a coffee break.  With only 9 pantry ingredients and a little time you can have the scones of your dreams.

What Ingredients do I need?

  • all-purpose flour
  • salt
  • sugar
  • baking powder
  • butter - unsalted please
  • whole milk
  • egg
  • dried cherries
  • almond extract - Watkins pure almond extract is a good one to use.


Substitutions and Variations

  • I use dried fruit in these scones.  You could substitute for any other dried fruit you like such as cranberries, blueberries, apricots.  
  • Milk - I use regular whole milk in my scone recipe.  You could substitute heavy cream for a richer flavor if you would like. 
  • Cherries - You can use fresh, frozen, or canned cherries if you like.  Make sure they are pitted and you will need to pat them dry so they don't bleed too much in the dough.
  • Almonds - adding some sliced or slivered almonds to the dough, and on the tops of the scones will add some crunch and extra almond flavor.   





Kitchen Tips and Notes

  • Butter: The secret to the scone’s success is using cold, grated unsalted butter. Use the fine side of the grater and grate on a cutting board. You will want to spray the grater with non-stick spray before grating. Work fast so the butter stays cold. If you are working in a heated kitchen then you may want to transfer the butter to the freezer for a few minutes to firm up. Cold butter will keep the scones from spreading and losing their flaky & moist texture.
  • Forming scones 3 ways:
1. Dump the dough from the bowl straight on to a parchment lined baking pan. Using your hands form the dough in to a 5-6 inch circle. Cut dough in to 6 triangle wedges, pulling apart about 1/2" so there is space when baking.

2. Scoop dough using a 1/3 measuring cup and drop on to a parchment lined baking sheet.

3. Place dough on a floured board and roll dough to 1/2" thickness. Cut out scones using a round or decorative biscuit/cookie cutter.

  • Grating butter into the flour mixture is an easy way to start out with small bits of butter to work in to the flour, and less work in the end! Once you've grated the butter, you can cut in the butter using your fingers or a pastry cutter.
  • Handling the dough: You don't want to handle the dough too much. Don't knead it, just gently pat out the dough in to a 1" thick circle with your hands.
  • Use parchment paper on your baking sheet, which gives the bottoms a nice brown crust. Sprinkle sanding or sparkling sugar on the tops for an extra crunch and sweet bite.
  • How to Store Scones:  Scones are best stored at room temperature and covered for 2-3 days. If you place them in a sealed plastic bag make sure to leave an opening otherwise your scones will become soggy.  To reheat cover with aluminum foil, and reheat in the oven at 350 degrees F. for 10 minutes.  Scones can also be frozen for up to 3 months.

Cherry Almond Scones 



Yield: 12 scones

3 cups all purpose flour
3 tbsp sugar
1/2 tsp salt
4 tsp baking powder
3/4 cup butter (cold), unsalted
1/2 cup dried cherries
1 egg
1 cup whole milk
1 teaspoon almond extract
sanding sugar (optional)

Preheat oven to 450 degrees.

Add the dry ingredients to a large bowl and combine.

Using a pastry cutter cut cold butter into flour mixture until there are pea-sized pieces of butter throughout.  Add in the dried cherries and stir to distribute.  Add the milk, egg, and almond extract and mix just until combined. 

Remove the dough to a generously floured work surface and knead just until it comes together. Pat the dough out to 3/4 - 1 inch thickness and cut with a biscuit cutter.  

Place the biscuits on a baking sheet.  Sprinkle tops with sanding sugar if using.  Bake for 10 to 15 minutes or until golden brown on top.  Remove from the oven and allow to cool on a wire rack for several minutes.  Serve warm.

Summer Entertaining: Cherry Quinoa Salad

When it's cherry season this is the salad to turn to.  This salad has it all, spicy arugula, textured quinoa, tart cherries, crunchy pistachios, and creamy feta. The perfect combination salad!

This salad is light, healthy and refreshing.  It's something I have made at least 4 times since cherry season has begun.  It's so easy to through together and it's what I love about this salad!

This can be made with any grain but I love it with quinoa.  Keep in mind you can use any leftover grains for this salad the next day.

What Ingredients do I need?

  • quinoa - white or tri-colored
  • cherries
  • cucumber
  • scallions
  • pistachios
  • arugula
  • fresh parsley
  • fresh mint
  • feta cheese
  • olive oil
  • red wine vinegar
  • orange juice
  • Dijon mustard


Substitutions and Variations

  • Swap out the arugula base for spinach or spring greens
  • Don't have fresh cherries - use frozen
  • Don't care for mint? try basil or cilantro
  • Leave out the cheese or try ricotta salata
  • Try a different grain.  Farro or bulgur would be wonderful.




Kitchen Tips and Notes

  • Place everything in a large bowl and toss.
  • Use a mason jar for the salad dressing and shake until emulsified.

Cherry Quinoa Salad


serves 4


1 cup quinoa
1 cup water
2 cups of pitted and halved cherries
1 cup cucumber, diced
2 scallions chopped
1/3 cup of pistachios, chopped
2 handfuls of arugula
1/4 cup parsley, chopped
1/4 cup mint, chopped
1/3 cup feta cheese crumbled

Dressing

1/2 cup Olive oil
1Tablespoon red wine vinegar
2 tablespoons orange juice
1 tsp Dijon mustard
Salt and pepper to taste

Rinse the quinoa and it and the water to a pot and bring to a boil.  Stir, cover and reduce heat to a simmer for 15 minutes until water is absorbed.  Remove from health and keep covered for 5 minutes.  Fluff with a fork.  Allow to cool.  Once cooled, add all salad ingredients to a large bowl.

In a mason jar or a small bowl add dressing ingredients and shake or whisk until emulsified.  Drizzle the salad with the vinaigrette and toss to combine.

Summer Fresh Recipe Series: Cherry Almond Muffins

Hot from the oven, tender muffins bursting with tart cherries and sweet earthy almonds is a flavor combination that will have you going back for seconds!


Time for some more baked goods!  As the 14th installment of my Summer Fresh Recipe Series of easy summer meals using the abundance of produce available we are going to highlight Cherries today!  I love cherries, and buy them every week throughout cherry season (which is so dang short!).  Sometimes it's hard to cook with them because we eat them like candy.  I serve them sitting in a bowl of ice during the summer months.  When I do get a chance to hide some away for cooking I'm bursting with joy, and today's recipe is bursting with cherries!


CHERRY ALMOND MUFFINS

One bite and you will experience pure summer bliss.  There's something about cherries that scream summer whether it is a cherry pie, cherry ice cream, or these cherry muffins.  So get them while they are still around and make these muffins pronto.

Summer Fresh Recipe Series





Cherry Almond Muffins

serves: 6 muffins

1 egg
1/2 cup 2% milk
1/4 cup canola oil
1/4 tsp almond extract
1 1/2 cup all purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cup cherries, pitted and rough chopped
1/3 cup almonds, rough chopped


Preheat oven to 400 degrees.

In a large bowl add the egg, milk, canola oil, and almond extract and whisk until light. Add in all the dry ingredients with the exception of the cherries and almonds. Mix batter just until incorporated.  Do not over mix. Batter should be thick.  Fold in the cherries and almonds lightly until mixed throughout.

Using a large ice cream scoop, divide batter among the wells of a muffin pan sprayed with cooking spray. Top with extra sliced almonds.

Bake for 16-18 minutes until tops are light brown. Remove from the oven and allow to cool on a wire rack for 10 minutes. Serve warm.

Labor Day is coming up and a great holiday to celebrate with the last of summer food.  I'm going to be bringing you several posts with dishes to celebrate with.  First up is another great pasta salad.  

Everyone needs an easy yet scrumptious side dish and this is absolutely The BEST Broccoli Pasta Salad I've ever had.  It was adapted slightly from a recipe I found on Pinterest from Tiffany's blog Pics and Pastries.  To me this pasta salad screams summer!

Imagine a pasta salad that includes fresh crunchy broccoli, sweet & tart cherries, and doused in a creamy 3 cheese ranch dressing.  Oh yum!  The combination of sweet/tart (cherries) and spicy/savory (bell peppers) just work wonders with the crunch of the broccoli.  The perfect way to use fresh summer vegetables.  I can truly say this is the best broccoli salad around!

The BEST Broccoli Pasta Salad

serves 6



6 oz bow-tie pasta
1/2 - 1 red bell pepper, diced
1/2 - 1 orange bell pepper, diced
1 head broccoli
1/3 cup dried cherries
3/4 cup Three Cheese Ranch dressing (such as Kroger or Kraft brand)
Kosher salt &  fresh ground pepper to taste


In a large pot of boiling water cook pasta according to box directions.  During the last 4 minutes of cooking add the broccoli head to blanch.  Broccoli should turn bright green.  Remove broccoli and drain pasta.  Allow pasta to cool.

Chop broccoli into florets.  Add to medium bowl.  Add diced bell peppers to the bowl along with the cherries. Add cooled pasta and toss to combine.  Add dressing and toss to coat.  Refrigerate 1 hour.  Serve cold or room temperature.  May add extra dressing if needed.
