We can't get through summer without a good grilled steak and some wonderful sides.  Beef is my choice of meat when grilling but MGG really likes to keep it light with fish or chicken most often with the occasional beef dish thrown in.  But today is all about the beef!  

My favorite cut of beef is a filet mignon for it's tenderness but today we are going to play around with another favorite, the flank steak.  Flank steak is a long flat, tougher cut of meat that sits along the belly of a cow. It has tons of intense beefy flavor and it's the perfect cut for marinating and grilling which increases the tenderness.  The results? A juicy tender cut of meat!

Eat it thinly sliced and cut against the grain for maximum tenderness.

Two tips for grilling flank steak:

  • Best when cooked to medium rare or medium.  If you cook this any longer the meat will not be as tender.
  • Tough fibers all run in a single direction so it is imperative that you cut "across the grain" to ensure you get tender slices of beef. This allows you to sever those fibers and  makes the meat easier to chew.

About Marinating
Flanks steaks take well to marinades and they can help to tenderize the meat. We have a standard marinade for most of our beef recipes that we call our "house marinade".  It is made up of delicious ingredients such as balsamic vinegar,  mustard, Worcestershire sauce, and lots of garlic and herbs.  Yum!  This flavor bomb enhances the meat and gives you one heck of a tasty piece of steak!  Try it on other cuts of steaks too.

I find that the easiest way to marinade any piece of meat is to mix the marinade and put it in a ziploc bag along with the meat.  Seal it tight and slosh that marinade all over the meat making sure it's all coated.  Then pop it in the refrigerator for 3-4 hours turning it over every so often so coat all sides with the deliciousness.  

How to cook flank steak
High heat and quick cooking is the best way to cook flank steak.  It can be grilled, seared, braised or stuffed.  Today we are going to grill it.  You can use an outdoor grill or inside on a grill pan.  It cooks fairly quickly and you don't want to cook this above medium or it will become tough.  Medium rare is best.

Just about anything from potatoes to corn go with steak.  Here are some of my favorites:

Grilled Flank Steak with House Marinade

2-3 pound flank steak
2 T balsamic vinegar
1 lemon, juiced
1 1/2 T Dijon mustard
1 T Worcestershire sauce
2 T finely minced garlic
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp dried thyme
1 tsp paprika
1/4 cup olive oil

Place the flank steak in a ziploc bag.  Mix the remainder of the ingredients in a measuring cup and mix well to blend.  Pour over the flank steak and seal the bag.  Rotate the bag so that the marinade covers all sides of the meat.  Place in the refrigerator and allow to marinate for 3-4 hours turning over every so often.  Remove the bag from the refrigerator and set it on the counter allowing the meat to come to room temperature for about 1 hour.

Preheat an outdoor grill with cover down to high heat.  Alternatively, you can preheat an indoor grill pan over high heat.  Once heated reduce temperature to medium high. Oil the grill grates so the meat does not stick.  Remove steak from the marinade and place on the grill.  Cook on the first side for 6 minutes.  Turn and cook on the second side until the temperature reaches 145 degrees for medium rare.  Remove from the grill and tent with foil allowing to rest for 5 minutes.

Cut meat across the grain into thin strips.  Serve.

Summer is on a roll here and we're spending long hot days by the pool.  The last thing I want to do is cook elaborate meals during the summer.  Who wants to sit in a hot kitchen cooking up a main dish along with side dishes, and a dessert?  Not me!

During the summer months I change my cooking style completely so that I have more time to spend playing and relaxing with family and friends.  Quick meals that are super simple to prepare and that are minimally processed are the way we roll around here.  That means a lot of farm to table dishes such as cold salads, sandwiches, rice bowls and stir frys.  Quick, fast, and fresh.  That's my summer motto!

DILL GARDEN SALAD

So often we will just have burgers, or grilled chicken and I make a couple of easy side dishes to go along with them.  Ones we can eat on during the week as well.  This Dill Garden Salad is exactly that.  Simple to throw together and fresh as can be.  Using vibrant tomatoes from my garden, along with crisp cool cucumbers, some sweet peppers, and dousing all this freshness with a dill laced creamy dressing this side dish salad will be on your menu all summer long!

I LOVE anything with dill.  It's one of my favorite herbs and this salad showcases if perfectly.  If you don't like dill then you could substitute it for tarragon if you like, however, dill really brings out the flavors of the tomatoes and the cucumbers.

So head over to the farmers market and pick up some fresh vegetables to make this salad.  It is so simple to make and it tastes fresh and light.  Just like summer!

Dill Garden Salad

serves 6

3 cups chopped English cucumbers
1 large tomato, seeded and cut into 1/2-inch pieces
1 small sweet red pepper, chopped
2 tablespoons chopped sweet onion
3 tablespoons light mayonnaise
4 teaspoons olive oil
2 teaspoons rice vinegar
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
2 1/2 teaspoons fresh dill, chopped


In a large bowl, combine cucumbers, tomato, red pepper and onion. In a small bowl, whisk mayonnaise, oil, sugar, vinegar, salt, garlic powder and pepper until blended. Stir in dill. Spoon dressing over salad; toss to coat.  

Serve at room temperate or refrigerated.  Refrigerate any leftovers for 2 days.

Lighter Strawberry Crisp

They've been saying that we've had so much rain here in Southern California that the strawberries have taken a hit this year, but I'm here to tell you "nuh uh!, this year's strawberries are super juicy and sweet!"

This leads me to pick up a pound of strawberries each time I go to the store, and I go to the store quite often, so the strawberries are starting to pile up!

Not to worry.  I have the perfect solution for that...

LIGHTER STRAWBERRY CRISP

Oh yes, please!  Let's make a Strawberry Crisp that is bursting with juicy strawberries topped with a light crunchy topping.  It all but screams summer!  This dish is one of my go to desserts.  It will feed a crowd or a family (depending on how much you eat!).  We actually served this at out 4th of July party and it was the first item go.

Fruit is a wonderful item to create dessert from.  I've made this a little healthier by keeping the sugar content down as well as the butter.  It still has that homey, comforting feeling but is a much lighter and lower carb/calorie version.  Desserts don't have to be laden with fats and empty calories to taste good.  Just try this version for yourself and you'll definitely want 2nds or 3rds.  Go ahead...I won't tell!

Strawberry Crisp



serves 6




6 c (about 1-1/2 pounds) strawberries, hulled and quartered

1 Tbls fresh lemon juice
2 Tbls all-purpose flour
3 Tbls light brown sugar, divided
1/3 c all purpose flour
1/3 c rolled oats
1/2 tsp baking powder
1/2 tsp cinnamon
1/8 tsp salt
3 Tbls cold unsalted butter, cut into pieces
Vanilla Ice Cream (optional topping)





Preheat oven to 375F.


Lightly grease an oval baking dish with cooking spray.

Add the strawberries to the bottom of the dish and toss with lemon juice. In a small bowl, combine the flour and 1 Tbls of brown sugar and mix until combined. Add this to the strawberries and mix to combine. Set aside.

In a medium bowl, whisk together flour, oats, baking powder, cinnamon, salt and remaining brown sugar. Cut in butter with a pastry cutter or by rubbing with your fingers until mixture is crumbly. Sprinkle crumb mixture over the strawberries. 

Place in the oven and bake for 30 to 35 minutes, or until top is golden brown and fruit is bubbling. Remove from the oven and allow to cool 10 minutes. Serve with ice cream if desired.

Quick and Easy Watermelon Lemonade

I just love summertime.  There is nothing like a great summer song, feeling that tingle on your skin from the hot sun, and a cold drink.

I always used to associate summer with Sunkist soda pop.  Do you remember that commercial that played "Good Vibrations"?  To me that' was the epitome of summer when I was growing up.  These days I'm more of a lemonade kinda girl.  I just love the tartness of the lemons, and the thirst quenching flavor on a hot summer day.  

Since the 4th of July is right around the corner I usually serve a pitcher of lemonade to have during our days activities and with whatever items we grill for our All-American dinner.  So let's change up the standard lemonade and give it a little pizzazz by adding some additional fruit infused flavor.

QUICK AND EASY WATERMELON LEMONADE

To make this easier I use a pre-made pink lemonade.  Trader Joe's a wonderful one, but any brand will do.  Just make sure it's one you like.  Next we need to make the fruit puree.  This is where the watermelon comes in.  All you need is a blender to puree the watermelon and a fine mesh strainer to remove any solids so you are left with a nice pure watermelon juice.  Now that you have that, the rest is simple.  The concoction is about a 2/3 lemonade to 1/3 watermelon juice ratio.  Served over ice you will have a frosty piece of heaven in a drink.  One that screams summer!!!

Quick and Easy Watermelon Lemonade


serves 8


8 cups of jarred Pink Lemonade (any brand)
3 cups cubed watermelon
1 tbls sugar (optional for sweetness)

Pour ready made lemonade into a bottle or pitcher. In a blender puree the watermelon. Strain through a fine mesh strainer into a bowl, discarding the solids.  Pour watermelon puree into the pitcher with the lemonade. Stir to combine.  Fill glasses with ice and lemonade.  Enjoy.

Summer Bounty Vegetable Pasta Salad

During the summer we crave quick and easy fresh salads. In an effort to use all the fresh summer vegetables we bought at the Calabasas Farmer's Market I packed a pasta salad full of veggies and Summer Bounty Vegetable Pasta Salad was born!

We got a little carried away at the farmer's market so there is a long list of ingredients, but don't be swayed, this salad comes together quickly and tastes outstanding!

What vegetables do I use? Pasta salad can start out as a blank canvas and you can change the flavor and texture of the salad by using different vegetables. We want to use what's fresh and in season during the summer months so I chose, Roma tomatoes, yellow summer squash, zucchini, broccoli, and red onion. Change this to suit the season or the vegetables you have on hand to make whole new twist to a basic pasta salad.

Is it really to make? Yes, it is! The most time spent is in chopping the vegetables which can be done while the pasta is cooking. What brings this all together is a wonderful vinaigrette made with red wine vinegar, a wonderful California olive oil, some mustard for binding, and a dash of great spices to bring in more flavor. Mix it all together and let it chill to meld the flavors and you're done!

Summer Bounty Vegetable Pasta Salad

serves 8
12 oz bow tie and penne pasta mix
2 Roma tomatoes, chopped
1 medium yellow summer squash, cut into half moons
1 medium zucchini, cut into half moons
1 medium broccoli crown, cut into florets
1/2 medium red onion, sliced
4 Tablespoons mint, chopped
4 Tablespoons parsley, chopped

Vinaigrette:
1/2 cup California olive oil
1/3 cup red wine vinegar
1 Tablespoon Dijon mustard
1 tsp dried oregano
1 tsp garlic minced
salt & pepper to taste
Bring a large pot of water to a boil.  Add some salt to the water and the pasta.  Cook according to package directions for al dente.  Drain in a colander.
Meanwhile, chop all the vegetables, parsley and mint, and place in a large bowl.  In a bowl or mason jar combine the ingredients for the vinaigrette and whisk until well combined. 
Add cooked and drained pasta to the bowl of vegetables.  Add the vinaigrette and toss to combine.  Refrigerate for 1 hour to allow flavors to blend and serve.

It's Time for Labor Day: Vanilla No Churn Ice Cream

Summer lasts well in to October in Southern California.  But I do have to say that there has been a slight change in the weather lately that hints that fall is coming.  The evenings are getting shorter and are definitely a lot cooler than usual.

So we are celebrate the last few precious evenings of summer and are planning our Labor Day weekend with the theme "The Bounty of Summer"!.  This will include a backyard BBQ, some spectacular pasta salads, easy in-season vegetable side dishes and for dessert a no churn ice cream.

This is the first time I've ventured into the "no churn" ice cream realm.  Being a lover of old fashioned goodness I was hesitant to try this.  Boy was I pleasantly surprised and wish I had joined the fun ages ago!  I decided to go with a basic vanilla recipe that could be used for a base in an ice cream bar that I'll be setting up.  We'll have a variety of different fruits, chocolate, nuts, and candy to top your sundae to your hearts desire.

Is it really no churn?  Yes, you actually can make ice cream without churning it!  As amazing as it sounds it's true, and it tastes just as amazing!  It only takes 3 ingredients to make this wonderful ice cream:  whipping cream, sweetened condensed milk, and vanilla.  I actually used a vanilla bean pastes which infused the ice cream with flavorful flecks of vanilla bean seeds.  I just love the looks of vanilla flecks running through my ice cream!  You can purchase this here.  Of course, you can always use pure vanilla extract.  Since you are only using 3 ingredients make sure to use ones that are top quality so your ice cream comes out top notch!

Does it taste like ice cream?  It actually does!  I was skeptical since I've made homemade churned iced cream all my life and I'm partial to it.  But after trying this I found that this is a great quick and easy substitute.  Lots of ice cream uses eggs that you cook into a custard base, but there are those that are just cream, half and half, and sugar.  The ingredients are similar in the no churn version and the fact that you whip the cream you are creating that air infused base which simulates churned ice cream.

What tools do I need? To make this ice cream you will need a stand or hand mixer such as this one, or this one.  You will need a rubber spatula such as this one.  Good vanilla bean paste.  Plus a freezer safe container to hold your ice cream.  I'm partial to this one because it's easy to scoop from!

Vanilla No Churn Ice Cream

Yield: 1 1/2 pints

2 cups heavy whipping cream
1 14 oz can sweetened condensed milk
2 teaspoons vanilla bean paste

Using a stand or hand mixer, whip whipping cream until stiff peaks form, about 3 minutes.  Pour in condensed milk and vanilla bean paste and gently fold into the whipped cream until combined.  Pour into a freezer safe container and place in the freezer to set 3-4 hours or overnight.

Easy Cinnamon Peach Cobbler (Family Sized)

We are hosting a huge summer bash in a couple of weeks for a bunch of friends and I've been researching and testing recipes.  The key is that they must feed a crowd but be simple to make.

Today is all about dessert!  I've been digging through our old family recipes again and came up with my version of a classic.  If you want a super easy and quick dessert to make look no further than this Easy Cinnamon Peach Cobbler.  I made this particular one family sized in an 8x8 pan for testing purposes, but just double the ingredients and place in a 9x13 pan for one that will feed a crowd.

There's nothing better than this southern dessert during the summer, especially when peaches are in season!  Oh! fresh peaches are the BEST!  We just picked up some delicious peaches that promised to be a 12 on the flavor scale (0-15, 15 being sweetest) and they sure were.  Juicy and sweet.  So make sure to use fresh ones if you can find good ones.  If not then frozen will work perfectly.

This is a cobbler that is cakey, instead of a biscuit topping or a pie crust.  You make a batter and pour it in the pan, then add the peaches on top.  The peaches sink down and the cake rises around the peaches to create a cake like cobbler. Yum!  I also added some cinnamon to the peaches to give it a little homey flavor which I adore.  Leave it out if you prefer just plain peaches.  This is excellent in taste, and couldn't be

Bring a little South to your menu and enjoy this Easy Cinnamon Peach Cobbler (Family Sized) with a scoop of vanilla ice cream.  It can't be beat!

Easy Cinnamon Peach Cobbler (Family Sized)

serves 6

1/4 cup butter
1 1lb. fresh or frozen peaches peeled and sliced
1 tsp. cinnamon
3/4 cups sugar, divided
3/4 cups self-rising flour
3/4 cups milk
1 teaspoon vanilla extract 


Add butter to a 8x8 baking dish and place into the oven as it preheats to 375º F to melt.

To a small bowl add peaches and 1/4 sugar.  Stir to combine.  Set aside.

In a medium bowl add remaining sugar, self-rising flour,  milk, and vanilla. Whisk until well combined.  Remove pan from oven and pour batter on top of the melted butter.  Top with the peaches and their juices.  Do not stir.

Bake until the cobbler is golden brown, about 35 minutes. Serve warm with a scoop of vanilla ice cream.
