What I’m Cooking in May (Fresh, Flavorful, and Actually Easy)

What I’m cooking in May: 12 fresh, flavorful recipes perfect for busy weeknights, seasonal produce, easy hosting, no-cook meals, and sweet spring bakes.

May is the time of year when everything starts to feel a little lighter — longer evenings, warmer weather, and meals built around fresh ingredients instead of heavy comfort food. The produce finally starts getting good again, and I naturally start craving recipes that feel colorful, fresh, and easy enough to make on repeat.

This is also the season when my cooking shifts a bit. Weeknight dinners become simpler and lighter, weekends feel more relaxed, and I start leaning into recipes that work just as well for casual hosting as they do for an easy dinner at home.

This collection is filled with the recipes I actually keep reaching for this time of year: quick dinners with big flavor, crunchy seasonal salads, low-effort meals for warmer days, and a few sweet bakes and breakfast treats that feel especially right in May.

Instead of overwhelming you with a giant list of recipes, this is a more curated roundup of the meals I’m genuinely excited to cook right now. Some are newer favorites, while a few are recipes I come back to every single spring because they just work.

If you’re looking for fresh, flavorful recipes to cook this May, these are the ones I’d start with.

These are the dinners I rely on most in May when the days get longer but the energy to cook gets shorter. They come together quickly, but still feel fresh, bold, and satisfying enough to end the day well. Think simple bowls, big flavor, and no overthinking.

Easy Taco Salad

This is one of those dinners I come back to anytime I want something fast but still full of texture and flavor. It’s endlessly customizable, which makes it perfect for busy nights or cleaning out the fridge. I’ve been making it even more often lately as the weather starts to warm up.

Easy Cajun Chicken Bowl for Two

This is a bold, satisfying bowl that comes together quickly but still feels like something you’d order at a restaurant. The seasoning is what makes it — smoky, a little spicy, and perfect over simple rice and fresh toppings. It’s been a go-to when I want something quick but not boring.

Garlic Herb Chicken Bowl

This is a simple, reliable dinner I lean on when I want something fresh but still comforting. The garlic herb flavor keeps it light, while the bowl format makes it easy to customize with whatever vegetables I have on hand. It’s the kind of meal that works just as well for weeknights as it does for meal prep.

This is the season when produce finally starts to shine, and my cooking naturally follows what looks best at the market. Crisp greens, asparagus, herbs, and citrus end up in just about everything I make. These recipes are simple, seasonal, and built around letting the ingredients speak for themselves.

Mediterranean Quinoa Salad

This is what I make when I want something fresh, colorful, and the perfect side dish to anything. The combination of herbs, vegetables, and lemony dressing makes it taste like peak spring in a bowl. I find myself returning to it every year as soon as produce starts getting good again.

Lemon Asparagus Orecchiette

This is a simple pasta I love making when asparagus is at its best. The lemon keeps everything bright, while the pasta makes it feel just a little indulgent without being heavy. It’s one of those dishes that feels perfect for early warm-weather evenings.

Spring Couscous Salad with Lemon Feta Vinaigrette

This is one of my favorite spring salads to bring back every year because it just works in so many situations. The lemon and feta dressing ties everything together with bright, tangy flavor. It’s just as good for a quick lunch as it is for side dishes on the weekend.

Weekend meals in May tend to feel a little more relaxed—sometimes casual entertaining, sometimes just a slower meal at home. I like recipes that feel a bit special without requiring much effort or planning. These are fresh, shareable dishes that fit right into that easygoing rhythm.

Chili-Lime Chicken Kabobs

These are what I make when I want something a little fun and flavorful for a weekend meal. The marinade is bright and slightly smoky, which makes them perfect for grilling season. They feel casual but still special enough for sharing.

Ribbon Spring Salad with Buttermilk Dressing

This is the kind of salad that always feels a little extra in the best way. The ribboned vegetables and creamy dressing make it feel fresh and slightly elevated without being complicated. It’s perfect for spring gatherings or a relaxed weekend meal outside.

Once the weather warms up, I start gravitating toward meals that don’t require much time at the stove. These recipes are light, fresh, and mostly assembly-based, which makes them perfect for busy or warm days. It’s all about keeping things simple without sacrificing flavor.

Grilled Chicken Avocado Caprese Salad

This is a simple, no-fuss meal I lean on when I don’t want to spend much time cooking. It’s fresh, satisfying, and comes together quickly with just a few ingredients. I especially love it when I want something light but still filling.

Southwest Chicken Salad Bowls

This is one of those meals that feels hearty but still fresh and easy. It’s full of bold flavors and crunchy textures, which makes it really satisfying without feeling heavy. I make it often when I want something quick that still feels put together.

This time of year, I lean toward sweet recipes that feel light, seasonal, and easy to enjoy any time of day. Instead of rich desserts, I reach for fruit-forward bakes, soft pancakes, and simple treats that don’t feel too heavy. They’re the kind of sweet moments that fit naturally into spring and early summer cooking.

Strawberry Almond Pancakes

These are what I make on slow May mornings when strawberries are at their peak. They’re light, fluffy, and just sweet enough to feel special without being heavy. I love serving them with extra berries and a drizzle of honey.

Easy Strawberry Crisp

This is a simple, fruit-forward bake I turn to when strawberries are at their best. It’s warm, lightly sweet, and feels just as good for breakfast as it does for a casual dessert. I like how effortless it is to put together, especially in spring.

Blackberry Swirl Muffins with Crumb Topping

These are a bakery-style muffin I come back to when I want something a little nostalgic and seasonal. The blackberry swirl adds just enough sweetness and color, while the crumb topping keeps things cozy. They’re perfect for slow mornings or afternoon coffee.

May cooking always feels a little looser and more intuitive — less planning, more leaning into what looks good and what feels easy. These are the recipes I’ll be making as the season shifts, when everything starts to feel a little brighter and more open again.

I hope this gives you a few ideas to carry into your own kitchen this month.

Enjoy!

These Chili-Lime Chicken Kabobs are fresh, colorful, and packed with bold flavor. An easy summer grilling recipe made with juicy chicken, vibrant peppers, and zesty chili-lime seasoning.

Chili-Lime Chicken Kabobs (Easy Summer Grilling Recipe)

I've always been a little crazy about food on a skewer.  It's so approachable and it it gives me that summer feeling.

These chili-lime chicken kabobs are one of those easy recipes that look bright and impressive coming off the grill, but come together with minimal prep and simple ingredients. The chicken stays juicy, the peppers get slightly charred and sweet, and the chili-lime seasoning adds just enough smoky citrus flavor to make everything pop.

This is the kind of dinner that works just as well for a casual backyard cookout as it does for an easy weeknight meal when you want something fresh, colorful, and packed with flavor.  This will be a winner at your next cookout.

Enjoy!

Ingredients

  • Chicken breasts — boneless, skinless chicken works perfectly for juicy, quick-cooking kabobs
  • Bell peppers — use a mix of red, yellow, and orange for color and sweetness
  • Chili-lime seasoning — brings smoky, citrusy flavor with minimal effort
  • Canola oil — helps the seasoning coat evenly and prevents sticking on the grill
  • Fresh limes — a squeeze of fresh lime at the end brightens everything up beautifully

Equipment

  • Grill or grill pan
  • Skewers
  • Large mixing bowl
  • Tongs
  • Meat thermometer

My Go-To Tools

-- Let’s Make It Together

Cut the chicken into bite-sized chunks and place in a large bowl. Toss with oil and chili-lime seasoning until evenly coated.

Thread the chicken and bell peppers onto skewers, alternating colors as you go.

Preheat your grill to medium heat and lightly oil the grates to prevent sticking.

Place the kabobs on the grill and cook, turning occasionally, until the chicken is cooked through and lightly charred on the edges.

Finish with fresh lime wedges for serving.

-- Perfecting the Cooking Process

For juicy kabobs, avoid overcooking the chicken and keep the pieces evenly sized so everything cooks at the same rate. A little char on the peppers adds incredible flavor.

-- Add Your Touch

These kabobs are easy to customize depending on what you have on hand.

Add red onion, zucchini, or pineapple to the skewers for extra flavor and color. You can also swap chicken thighs for a slightly richer option or turn the kabobs into bowls served over rice or quinoa.

Set the Mood

Food is about more than just the recipe—it’s about the moment around the table. Here are a few simple ideas to set the mood when you serve this dish.

If you’re building an easy summer menu, here are a few more fresh recipes to pair with these kabobs:

Whether you’re grilling for a backyard dinner, meal prepping for the week, or planning a casual summer get-together, these chili-lime chicken kabobs bring big flavor with very little effort.

Before You Start

Can I use chicken thighs instead?
Absolutely. Chicken thighs stay extra juicy on the grill.

Can I make these ahead of time?
Yes. You can assemble the kabobs several hours ahead and refrigerate until ready to grill.

What if I don’t have an outdoor grill?
A grill pan works great indoors.

How do I keep wooden skewers from burning?
Soak them in water for at least 30 minutes before grilling.

How do I know when the chicken is done?
Chicken should reach 165°F internally.

Crispy Smash Burgers with American Cheese (Easy Cast Iron Recipe)

Crispy smash burgers with melty American cheese made in a hot cast iron skillet. These juicy burgers with crispy edges are quick, easy, and better than a restaurant burger.

Crispy Smash Burgers with American Cheese (Easy Cast Iron Recipe)

Every once in a while I make a dish that instantly becomes the new favorite, and these crispy smash burgers are the latest. After one bite, my husband declared them “better than a restaurant burger,” which is about the highest praise a homemade burger can get around here.

What makes smash burgers so special is how you cook them. The beef hits a blazing hot cast iron skillet, gets pressed thin, and forms those irresistible crispy, caramelized edges while the center remains juicy and flavorful. Add a slice of melty American cheese and stack the patties on a soft bun with your favorite toppings, and you’ve got a burger that tastes like it came straight from a diner.

The best part? They come together in just minutes and use simple ingredients you probably already have on hand. Once you try them, there’s a good chance they’ll become your new favorite burger too.

Enjoy!

Ingredients

This recipe keeps things simple and classic so the flavor of the beef really shines.

Ground Beef – I like using 85/15 for the perfect balance of flavor and juiciness.

Kosher Salt & Freshly Ground Black Pepper – Simple seasoning that lets the beef develop that signature smash burger flavor.

American Cheese – The classic choice for smash burgers because it melts beautifully and creates that creamy, diner-style finish.

Hamburger Buns – Soft buns work best since the crispy patties are thin and stack nicely.

Optional Toppings – Mayonnaise, mustard, ketchup, lettuce, pickles, sliced tomatoes, and onions are all great choices depending on how you like your burger dressed.

  Equipment

Cast Iron Skillet - crucial for obtaining those crispy edges that this burger is famous for.  This is one of my most cherished skillets.

-- Let’s Make It Together

Start by dividing the ground beef into eight small portions. Very loosely form each portion into a ball—don’t pack the meat tightly or the burgers will lose that tender texture.

Heat a cast iron skillet or griddle over high heat until it’s very hot. Place the beef balls onto the skillet and immediately use a sturdy spatula or bench scraper to smash them down as thin as possible.

Season the patties with salt and pepper and cook for about one minute, until the edges start to brown and crisp.

Flip the patties, season the second side, then place a slice of American cheese on top. Let the patties cook another 30–60 seconds, just until the cheese melts.

Stack two patties per bun, add your favorite toppings, and serve immediately.

-- Perfecting the Cooking Process

The secret to perfect smash burgers is high heat and pressing the patties immediately after they hit the skillet.  This creates maximum contact with the hot surface, which is what forms those irresistible crispy, caramelized edges while the inside stays juicy. Resist the urge to press the burgers again after flipping—doing so can squeeze out the flavorful juices. (Remember, a cast iron skillet creates the best crust!)

-- Add Your Touch

One of the best things about smash burgers is how easy they are to customize.

Try adding crispy bacon, sautéed onions, or sliced avocado for extra flavor. A swipe of burger sauce or garlic aioli can take things up a notch, while shredded lettuce and pickles add a nice crunch.

You can also toast the buns lightly in the skillet for a little extra texture. However you dress them up, these burgers are incredibly versatile and easy to make your own.

• Or my Almond Poppyseed Muffins with Cranberry Cherry Swirl for a delicious weekend breakfast

Before You Start

Do I need a cast iron skillet?
Cast iron works best because it holds high heat well, but a heavy stainless steel skillet or flat griddle will also work.

Why are smash burgers so thin?
Pressing the burgers thin increases surface contact with the hot pan, which creates the crispy edges that make smash burgers famous.

Can I make these ahead of time?
Smash burgers are best cooked and served immediately since they cook very quickly and taste best fresh off the skillet.

What’s the best beef for smash burgers?
Ground beef with a little fat—around 80/20 or 85/15—creates the juiciest burgers and helps develop that crispy crust.

Grilled Chicken Avocado Caprese Salad (A 30-Minute Spin on a Classic)

Grilled Chicken Avocado Caprese Salad is a fresh, satisfying 30-minute meal made with juicy chicken, creamy avocado, mozzarella, tomatoes, and balsamic dressing. Built using my simple 5-Step Healthy Salad Formula for flavor, balance, and staying power.

Grilled Chicken Avocado Caprese Salad (A 30-Minute Spin on a Classic)

Some of my favorite salads start out the same way: I'm busy but need to make dinner, I don’t want anything complicated, and I’m standing in front of the fridge hoping something clicks.

That’s exactly how this Grilled Chicken Avocado Caprese Salad came to be.

I had chicken breasts, a perfectly ripe avocado on the counter, and a container of mini mozzarella balls that needed to be used. Add in fresh tomatoes, basil, and a drizzle of balsamic, and suddenly this “quick dinner idea” turned into a fresh, satisfying meal that felt both light and comforting.

Even better? It fits perfectly into my 5-Step Healthy Salad Formula — the simple system I use to build great salads.  See below for a deeper dive on how this salad fits my formula.

And the best part?  The dinner comes together in about 30 minutes — making it perfect for busy weeknights, quick lunches, or anytime you want something fresh without sacrificing flavor.

If you’re looking for a tasty, no-fuss salad that feels restaurant-worthy but fits real life, this one deserves a spot in your rotation.

Enjoy!

-- Ingredients

You don’t need anything fancy here — just good-quality basics and a few fresh elements that bring everything to life.

  • Boneless, skinless chicken breasts - The chicken adds heartiness and turns this salad into a true meal.
  • Italian seasoning - A simple blend that adds savory depth without overpowering the other ingredients.
  • Freshly ground black pepper
  • Balsamic dressing - This pulls double duty — it marinates the chicken and finishes the salad with tangy-sweet flavor.
  • Romaine lettuce - romaine gives the salad structure and holds up well under dressing.
  • Avocado
  • Mini mozzarella balls
  • Cherry or grape tomatoes
  • Fresh basil - basil is what gives this salad its signature Caprese finish.

How This Salad Fits My 5-Part Formula

One of the reasons I love this Grilled Chicken Avocado Caprese Salad is that it naturally checks every box in my 5-step formula — without feeling forced or overcomplicated.

It starts with crisp romaine, which gives the salad a sturdy, refreshing base that can actually hold up to warm grilled chicken and juicy toppings. From there, the tomatoes, that also have a pop of crunch, and the basil bring in bright color and freshness, making every bite feel vibrant and balanced.

The grilled chicken adds the protein that turns this from “just a salad” into a real, satisfying meal. Pair that with creamy avocado and soft mozzarella, and you get a mix of textures that keeps things interesting from the first bite to the last.

Finally, the balsamic dressing pulls everything together. It adds just enough tang and sweetness to balance the richness of the chicken, cheese, and avocado without overpowering the fresh ingredients.

Once you understand this structure — greens, crunch, color, protein, and dressing — you can start building salads like this on repeat, using whatever you have on hand. This recipe is just one example of how simple, intentional choices can turn everyday ingredients into something crave-worthy.

-- Let’s Make It Together

1. Marinate the Chicken - Place chicken between plastic wrap and pound to about ½-inch thickness. Season with Italian seasoning, salt, and pepper. Pour balsamic dressing over chicken and let marinate for at least 15 minutes.

2. Grill the Chicken - Heat a grill pan over medium-high heat. Cook chicken about 5 minutes per side, until golden and cooked through. Transfer to a cutting board and rest briefly before slicing.

3. Prep the Salad Base - While the chicken cooks, slice romaine, tomatoes, avocado, mozzarella, and basil.

4. Assemble - Divide lettuce among bowls. Top with avocado, mozzarella, tomatoes, and basil. Add sliced chicken.

5. Finish - Drizzle with remaining balsamic dressing and serve immediately.

-- Add Your Touch

This salad is easy to customize:

  • No grill? Use a skillet or air fryer

  • Extra crunch: Add toasted pine nuts or croutons

  • More greens: Mix in spinach or arugula

  • Dairy-free: Leave out cheese or use plant-based mozzarella

Before You Start

Before you jump in, here are a few quick tips to help everything go smoothly:

  • Can I prep this ahead? Yes — grill the chicken up to 2 days in advance and store it separately in an airtight container.
  • How do I keep the avocado from browning? Toss slices lightly with lemon juice and add them right before serving.
  • Can I use a regular pan instead of a grill pan? Absolutely — a cast iron or nonstick skillet works just as well.
  • How long do leftovers keep? Fully assembled salads are best within 24 hours. If stored separately, the chicken and vegetables will keep for up to 3 days.
  • Any shortcuts to save time? Use pre-washed romaine and mini mozzarella balls to cut down on prep.
  • Can I swap the tomatoes? Yes — grape, cherry, or even diced Roma tomatoes all work well here.
