We try to keep our weeknight dinners on the healthier, low-carb side, and this skillet fits the bill perfectly—big on flavor, light on effort, and easy on the cleanup.

We just a new puppy (Bogie) and I am chasing him around so much that I don't have time for anything else. 




Boy do I ever need some quick dinner ideas!  We eat a lot of chicken and I'm sure you've seen the viral videos for the Butter Garlic Chicken or Steak bites, so I decided to do a variation on that by adding some more flavor.  Cajun flavor.  

These little bites of heaven are rich and full of buttery herb flavors.  They are so quick to make you will have them on the table in under 30 minutes.  They make a healthy meal that is low in carbs, gluten-free, and Keto friendly.  With the addition of a few more spices and some hot sauce you can have these Butter Garlic Cajun Chicken Bites as your next meal.  A one pan dinner in under 30 minutes.  Just add a simple side dish and you have an easy weeknight meal!

What Ingredients do I need?

  • Boneless, skinless chicken breasts
  • onion powder
  • butter
  • olive oil
  • garlic cloves
  • Italian seasoning
  • hot sauce - I like Sriracha
  • low-sodium chicken broth
  • fresh lemon
  • parsley
  • Crushed red chili pepper flakes


Substitutions and Variations

  • Can't handle the heat?  Leave out the hot sauce
  • Substitute the protein:  This would work with steak or pork as well.  Just cut bite sized pieces and follow the instructions.





Kitchen Tips and Notes

  • You can enrich the sauce by adding some white wine instead of chicken broth
  • Don't overcrowd the pan when cooking the chicken bites. Cook in batches if necessary, so each chicken bite has this delicious crisp golden crust!
  • For a variant you can use whole chicken tenders instead. They’re delicious, and you can skip the cutting board! 
  • What to serve with chicken bites?  I like serving these with basmati rice, roasted or pan-seared asparagus, green beans, broccoli, zucchini, or summer squash.

Butter Garlic Cajun Chicken Bites


serves 4


3 boneless, skinless chicken breasts, cut into bite-sized chunks
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
2 teaspoons onion powder
1/2 cup butter, softened
1 teaspoon olive oil
2 teaspoons minced garlic
1 teaspoon Italian seasoning
1 tablespoon hot sauce, (Sriracha)
2 tablespoons low-sodium chicken broth
Juice of 1/2 lemon
1 tablespoon minced parsley
Crushed red chili pepper flakes, optional
Slices of lemon, for garnish


Season bite-sized chicken chunks with salt, pepper, and onion powder.

Heat half of the butter (4 Tablespoons) and olive oil in a large cast-iron skillet over medium-low heat. Gently stir-fry the chicken on all sides until golden brown.

Lower the temperature, add two teaspoons minced garlic, the remaining butter, and Italian seasoning and stir and cook with chicken bites until fragrant. Depending on your skillet size you may need to cook the chicken in batches to avoid crowding the pan and have steamed chicken instead of browned pieces.

Deglaze the skillet with a little chicken broth, hot sauce, and lemon juice. Toss the chicken bites in the sauce to coat.

Garnish the garlic butter chicken bites with parsley, crushed chili pepper, and serve with lemon slices immediately.

One Pot Cajun Chicken with "Modern" Succotash is an easy weeknight meal that's bursting with flavors and full of veggies.




One Pot Cajun Chicken with "Modern" Succotash


During the busy holidays I love one pot meals that I can have on the table in 30 minutes.  This recipe features chicken that is cut into bite sized pieces, sprinkled with Cajun seasoning blend, and cooked quickly (think stir fry).  Then we move on to cooking the succotash which is a blend of vegetables.  It's popular in the South but my version has a more modern spin using corn, shelled edamame, cherry tomatoes, and green onions. The whole thing is then covered with a sauce that is luscious.  

You'll want to keep this dish in your rotation as it is a winner!  I served it over some basmati rice, but it would also be great over mashed potatoes, or polenta, and of course it will stand on its own as well.

What Ingredients do I need?

  • thin sliced boneless chicken breasts or 2 large regular cut chicken breasts
  • Cajun seasoning - I love this one and this one
  • olive oil - I love this brand
  • frozen roasted whole kernel corn
  • frozen shelled edamame
  • dried thyme
  • cherry tomatoes
  • green onions 
  • reduced sodium chicken broth
  • heavy cream
  • butter
  • Dijon mustard
  • Optional: hot cooked rice



Substitutions and Variations

  • You can substitute lima beans for the edamame
  • Use cut up pork tenderloin or turkey tenderloin instead of chicken
  • Serve over rice, mashed potatoes, or polenta
  • Use chicken thighs if you prefer



Kitchen Tips and Notes

  • Remove the cooked chicken to a plate or a baking sheet until the vegetables and sauce and made.
  • Measure out all your ingredients so that they are ready to go when you start cooking.  This is a fast dish.
  • Do all your prep work before you start cooking to get dinner on the table faster.

One Pot Cajun Chicken with "Modern" Succotash

serves 4

4 thin sliced boneless chicken breasts
2-3 tsp Cajun seasoning
2 Tbsp. olive oil
1 1/4 cup frozen roasted whole kernel corn
1 cup frozen shelled edamame
1/2 tsp dried thyme
10-12 cherry tomatoes, halved
1/4 cup sliced green onions (white and green parts) (about 2)
Kosher salt and freshly ground pepper
2/3 cup reduced sodium chicken broth
2 Tbsp heavy cream
2 Tbsp butter
2 tsp. Dijon mustard
Optional:  hot cooked rice

Cut chicken breasts in to bite sized pieces.  Sprinkle Cajun seasoning all over the chicken, tossing to coat.  In a large skillet or wok heat oil over medium high heat.  Add the chicken and cook about 6-7 minutes or until the chicken is done.  Make sure to toss and turn chicken often as it is cooking (like a stir-fry method).  Transfer cooked chicken to a plate and keep warm.

Add corn and edamame to the skillet.  Cook about 5 minutes or until crisp-tender.  Add in tomatoes and green onions.  Add in salt and pepper to taste.  Stir to combine and heated through.  Add broth and thyme.  Loosen any browned bits on the bottom.  Bring the broth to a boil and boil gently for 3-5 minutes or until broth is reduced by half.  Add in cream and butter and stir until melted.  Add in the mustard and stir to combine.  Add back in chicken and heat through.  Pour into a serving bowl or platter and garnish with a few cherry tomato halves and extra green onions if you with.  Serve over rice if desired.

Summer Fresh Recipe Series: Spicy Grilled Eggplant

Grilled eggplant graced with just the perfect amount of lime and spicy heat makes this a side dish that's hard to resist.


Well it's September and we're having a heat wave in Los Angeles, breaking temperature records all over the place.  It was 118 degrees yesterday so it's safe to say that summer's not over by a long shot.  So we are grilling out hearts out trying to keep the meals simple and the house cool.

Labor day is tomorrow and today's recipe is a wonderful summer side dish.  As my 18th installment of my Summer Fresh Recipe Series (which is soon coming to a close), this features eggplant as the star of the dish.   Eggplant is a great vegetable that can be cooked in a variety of ways.  Today we are prepping it with a spicy rub and grilling it for outstanding flavor!



This would be the perfect side dish for any grilled meat, and would go great with the Grilled Ranch Chicken Burgers for a nice Labor day cookout.  Eggplants are perfect for grilling.  Their skin becomes soft once cooked and the flesh inside is meaty and tender.  We used lime juice and Cajun seasoning which adds the right amount of flavor and heat. 



You can't beat this as a side dish, one that everyone will be choosing over all the others.

Summer Fresh Recipe Series



Spicy Grilled Eggplant

serves 8

1 large or 2 small eggplants, cut into 1/2" rounds
1/4 c olive oil
2 Tbsp lime juice
3 tsp Cajun seasoning

Brush the eggplant slices with olive oil.  Drizzle with lime juice and sprinkle on the Cajun seasoning. Grill over medium high heat for 4-5 minutes per side.
