The last thing I want to do is turn on the oven when it is over 100 degrees outside.  I don't even want to grill until the sun starts to set which isn't until around 8pm in my area.  So what do we do about getting dinner on the table during the week when we have schedules to keep?  Use the stove, and make a one pot meal!

One pot means less dishes to wash. Yea!  One pot means any vessel from a saucepan to a skillet.  One pot means simple to make, quick dishes made on the stovetop which = less heat!

Sheet Pan Mediterranean Lemon Parmesan Chicken and Vegetables

When life gets busy who doesn't love a quick and easy meal?  By using your oven and a sheet pan you can create a fabulous dinner in a snap!  One that your entire family will love. I often turn to stir frys but roasting in the oven is just as easy and healthy to boot.   Everything is cooked on the same pan which makes life a breeze.  And speaking of breeze, the clean up....simple - one and done!

So there is a craze that I'm sure you've noticed about sheet pan cooking.  Recipes are everywhere right now.  Even my favorite local teaching chef recently made a delicious chicken searing on a sheet pan, (recipe coming soon) and with good reason too.  They are simple to make, they allow you to cook the main and side dishes together and they are healthier for you!  I've even joined in with a previous post for Simple Citrus Herb Chicken and Tomatoes.

This recipe takes a little bit of prep for the chicken, (coating in bread crumbs) but uses ingredients that I always have on hand, such and lemons (we eat a lot of dishes with lemons...) and vegetables like mushrooms, cherry tomatoes and zucchini.  These are staples in our house and lend the Mediterranean flavors to the meal.  The chicken and vegetables are able to cook at the same time because I used thin cut chicken breasts which take no time to roast, and the vegetables are soft and take the same cooking time.  If you wanted to use carrots, potatoes, or other (harder) vegetables you will have different cooking times and will need to start those first then add the chicken after 15 minutes and continue on.

By roasting the chicken it stays nice and tender while the vegetables caramelize and crisp, especially when those tomatoes start to burst...oh boy!  It makes my mouth water thinking about it.  The best part is a great meal with little effort.  Perfect for a weeknight.

TIPS FOR COOKING THIS SHEET PAN MEDITERRANEAN LEMON PARMESAN CHICKEN AND VEGETABLES:
  • Use a LARGE sheet pan such as this one
  • Use parchment paper for easy clean up
  • Buy thin cut chicken breasts, or slice a regular breast in half lengthwise
  • Try and find a lemon pepper that does not contain salt - I use this one here







Sheet Pan Mediterranean Lemon Parmesan Chicken and Vegetables

serves 4

4 thin cut boneless skinless chicken breasts        

1/3 cup flour
1/2 cup seasoned bread crumbs
1/2 cup Parmesan cheese
1/2 teaspoon garlic powder
2 lemons, separated
2 tsp garlic, minced 
5 Tbls butter, melted
1 tablespoon lemon pepper seasoning
1 pint cherry tomatoes
1 large zucchini, cut lengthwise and then into slices
8 oz of baby bella mushrooms, cut into quarters
2 tablespoons olive oil
Garnish: fresh chopped parsley

Preheat oven to 400 degrees.  If desired, place parchment paper on a large sheet pan with edges.

Add flour to a pie pan.  Add bread crumbs, Parmesan and garlic powder to another pie pan and stir to combine.  To a third pie pan add the zest and juice of 1 lemon, minced garlic, and melted butter. 

Dredge chicken in flour, then dip in the lemon butter mixture, then coat in the bread crumb mixture.  Place on prepared sheet pan.  Sprinkle lemon pepper seasoning over the chicken. 

Place cherry tomatoes, sliced zucchini, and mushrooms around the chicken.  Drizzle with olive oil and sprinkle lemon pepper seasoning on top.

Bake at 400 degrees for 15 minutes.  Remove from oven and turn chicken over, sprinkle this side with lemon pepper seasoning.  Place 4 slices of lemon (from the remaining lemon) on top of the chicken.  Return to oven to bake an additional 10-15 minutes or until chicken reaches 165 degrees internally and is golden brown.  Vegetables should be soft and roasted and tomatoes should be bursting open.

Remove from the oven, sprinkle with freshly chopped parsley and plate.  Serve.

Optimize your cooking time: One Pot Meat Lovers Pizza Ravioli Bake

I'm and avid cookbook hoarder collector.  I have tons of cookbooks that I've collected over the years.

At some point (when my bookcase was full!) I had to stop buying them.  But then the magic of the Kindle Fire was born that allows you to buy kindle cookbook versions and store them digitally.  Woohoo!  I'm back to collecting cookbooks without taking up literal space in my house.  How dangerous is that?




One of my recent purchases is by the blogger Joanne Cismaru of the blog, Jo Cooks.  She has a wonderful blog and her book is titled "30 Minute One Pot Meals" which is geared toward busy cooks who need fast flavorful meals on the table in 30 minutes, using 1 pan!  Sounds perfect for me during hectic weeknights.

Browsing the book I came across a recipe for Quick Pizza Tortellini Bake.  This sounded sooo good, plus I get to use my newest 10" Cast Iron Skillet.  Since I didn't have exactly all the ingredients she used I made a variation of that and One Pot Meat Lovers Pizza Ravioli Bake was born.




ONE POT MEAT LOVERS PIZZA RAVIOLI BAKE


Filled with hearty sausage filled ravioli and cooked in a mouthwatering sauce that has pepperoni in it, then topped with cheese that melts into ooey gooey goodness.  This is seriously one kick-ass meal!  Everyone, especially the kids, will love it! 



As everything is made in one skillet, you can optimize your cooking time and get dinner on the table quickly, in 30 minutes in this case.  Using one pan also makes clean up a breeze.  Don't you love that?  I sure do!  This was such a tasty dinner and if you crave pizza but only have pasta on hand make this dish.  It will satisfy your cravings so you don't even miss the crust!

Kitchen Note:  I found Guy Fieri's Pepperoni Marinara at my local grocery store.  I've also seen it at Walmart.  You can also purchase individual bottle online here or use your favorite marinara.








One Pot Meat Lovers Pizza Ravioli Bake

adapted from Quick Pizza Tortellini Bake, "30 Minute One Pot Meals" cookbook

serves 6

10 oz pkg Sausage Ravioli
2 c Pepperoni Marinara (Guy Fieri)
1/2 water
1 1/2 c mozzarella cheese, shredded
1/3 c mini pepperoni
Garnish:  fresh chopped basil

Preheat oven to 425 degrees.  Spray a large oven proof skillet with cooking spray.

Add the ravioli to the skillet.  Pour the marinara sauce over the top, trying to cover all the pasta.  Add the water to the skillet (do not stir).  Sprinkle the cheese over the top and then add the mini pepperoni.

Place in the oven and bake for 25 minutes.  Remove with oven and garnish with basil if desired.

One Pot Tortellini with Sausage and Spinach in a Tomato Basil Sauce

Do you ever get a craving for something that you think is strange?

Well I do.  Every now and then I crave marinara sauce, or meat sauce.  Any red Italian sauce actually.  I know, I think it's strange too.  It's not the pasta that I'm craving (although who doesn't crave pasta!) but it's actually the sauce.  I know this because I can have a delicious chicken Parmesan dripping with marinara and be perfectly satisfied without any pasta.



So this 'red sauce' craving hit me big time over the long holiday weekend.  I mean I was rooting through my food on hand looking for anything I could make that a red sauce would go on.  I only had 1 can of diced tomatoes on hand!  How could that be???  I'm always stocked, but not on the day the craving hit.  Figures....but I did find a jar of a yummy tomato basil sauce in a jar that I had hidden away.  So it hit me that will make a variation of a one pot dish that I love, Ravioli Florentine which is a family favorite. 



Oh boy, no ravioli to be found in the frig or the freezer, but I did find some tortellini.  Bingo!  Substitution time, and with a few alterations on the original dish I came up with a winner!

Adding a nice Italian turkey sausage to the sauce gave it some body and wonderful spicy flavor.  The flavors of fresh basil add a fresh taste that jazzes it up.  Just look at this meaty sauce! 



All in one pot.  Don't you love that?  Plus the clean up is a breeze and I hate doing dishes!  This would work great as a weeknight meal as it can be done in 30 minutes.  So the result is we both loved it, and it satisfied my craving...until next time.

One Pot Tortellini with Sausage and Spinach in a Tomato Basil Sauce

serves 4
    2 Tbsp olive oil
    2 cloves garlic, minced
    1/2 lb turkey Italian sausage, casings removed (about 3 links)
    1/2 (24 oz) jar tomato basil sauce
    1 (14.5 oz) can finely diced tomatoes
    1/4 cup water
    1 tsp Italian seasoning
    1 (9 oz) pkg refrigerated cheese tortellini
    2 cups packed fresh spinach, roughly chopped
    salt & pepper to taste 
    2 Tbsp basil, chopped


    Heat olive oil in a large skillet medium heat. Add garlic and sauté 30 seconds then add sausage using a wooden spoon to break it into pieces as it browns.  Cook until it is cooked through, about 6-7 minutes.  

    Add in tomato basil sauce, tomatoes, water, and seasoning and bring to a simmer. Add tortellini making sure they are covered in the sauce.  Cook on medium low about 10 minutes until pasta is tender.  Stir occasionally.  Add spinach and season with black pepper and salt if needed.   Cook several minutes until spinach has wilted.  Remove from heat and sprinkle with chopped basil.

      One Pot Lemon Herb Chicken and Rice

      I'm also on the lookout for good weeknight meals, but I haven't really jumped on the "One Pot" bandwagon yet.  Have you? I've made a couple such as my Chicken and Asparagus dish, and One Pot Pasta.  

      I've pinned a lot of them though. So today I thought I'd use up some chicken from the frig and make one of these recipes I've pinned so many moons ago!  #PinterestIsAddicting



      The One Pot Lemon Herb Chicken and Rice recipe comes from Tiffany over at Crème de la Crumb.  She's a wiz in the kitchen and has so many great recipes on her site, so make sure to check it out.  I basically followed her recipe with a little addition of some extra spice on the chicken itself. 

      One Pot Lemon Herb Chicken and Rice to the rescue!

      Where have these quick 30 minutes meals, made in one pot, been all my life?  One pot?  Yes please.  Easy on the clean up and it takes just a tiny bit of prep and you have a tasty dinner on the table in 30 minutes.


      Do you love lemon?  Love chicken and rice?  Need a quick weeknight meal?  Then One Pot Lemon Herb Chicken and Rice is the dish for you.  The flavors are bright with lemon and spiced with pepper.  The Italian seasoning lends that fresh herbaceous pop we love, and the rice is just comfort city.  This might be you new comfort food dish for the upcoming fall season.

      One Pot Lemon Herb Chicken and Rice

      serves 4
      time:  30 minutes


      4 thin sliced, chicken breasts, boneless skinless
      2 tablespoons butter
      1/2 tsp salt
      3 teaspoons Italian seasoning, divided
      2 teaspoons lemon pepper
      1 cup uncooked basmati rice
      2¼ cups chicken broth, low sodium
      zest of 1 lemon
      juice of 1 lemon


      Melt butter over medium heat in a large skillet.  Season chicken with salt, Italian seasoning. and lemon pepper on both sides.  Place chicken in the skillet and cook 2 minutes, until just browned, on each side.  Remove to a plate.

      Add the rice to the skillet and toast for 1 minute, stirring constantly.  Add the chicken broth, lemon zest, lemon juice, and 1 teaspoon of Italian seasoning.  Bring rice to a boil.  Return the chicken to the skillet, placing it on top of the rice.  Add any juices that have accumulated from the chicken as well.  Turn the heat down to a simmer and cook for 20 minutes or until the liquid has been absorbed and the rice is tender.  

      Garnish with fresh parsley and lemon slices.  Serve.

      One Pot Dish: Cilantro Lime Chicken with Rice and Beans


      I have found that MGG loves simple meals that involve rice. Whether is be a rice bowl of some sort, a grilled meat served over rice or a one pot meal involving rice he's a happy camper.

      You see he grew up in a Persian household and their staple is rice.  Most of their dishes are stew-like in nature with lots of veggies and spices thrown in with meat...but all served with or over rice. One of MGG's best qualities is that he loves all types of food.  All ethnicities, all styles.  He's lucky like that. He doesn't have a picky bone in his body.


      That makes it really easy for me to please him.  Just serve something with rice!! HaHa!!

      Knowing this, I came across a one pot meat on Pinterest from Jaclyn of Cooking Classy that I thought we would both enjoy.  By the way, great blog that you need to check out right away!  The dish has Latin flavors, YUM!  We just love the combination of lime and cilantro combined with chicken and black beans...and yes rice!  Winner in both our books!


      We tried this the other night after some holiday shopping.  It was easy to throw together in one large skillet.  The clean up was a breeze (love that!) and the food was outstanding. I contains the perfect combination of flavors. The whole family will love this one and you'll have dinner on the table in no time.  Leftovers can be placed in a tortilla to make a wonderful wrap.

      One Pan Cilantro-Lime Chicken and Rice with Black Beans
      Serves: 4

      Ingredients 

      1 lb boneless skinless chicken breasts, diced into 1-inch cubes
      1 Tbsp canola oil
      Salt and freshly ground black pepper
      2 cloves garlic, minced
      1 1/2 cups low-sodium chicken broth
      1 (4 oz) can chopped green chilies
      2 tsp lime zest
      3 Tbsp lime juice
      1 (14.5 oz) can black beans, rinsed and well drained
      2 cups minute white rice (don't use regular rice!)
      1/3 cup chopped cilantro

      Directions 

      Heat oil in a large skillet over medium-high heat. Once hot add chicken, season with salt and pepper, and saute until cooked through, about 6 minutes, add in garlic at last 1 minute of cooking. Stir in broth, green chilies, lime zest, lime juice, black beans and season with salt and pepper to taste. Bring mixture to a boil, add rice, fully immerse rice in broth (make sure all the rice is submersed!), and allow to boil 20 seconds, then remove from heat and immediately cover with a lid. Let rest 5 - 6 minutes. 

      If needed, return pan to medium heat and cook and toss 1 minute to allow rice to absorb excess moisture. Remove from heat, toss in cilantro and let rest uncovered 3 minutes.

      One Pot Meal: Chicken and Asparagus Skillet Supper

       
      Hi there!  I hope you all had a wonderful holiday.  Ours was filled with pretty decorations, great food, and lots of love.

      But, the party season isn't over yet!  New Year's is just around the corner.  Not sure about you but we're expecting lot of friends popping in over the weekend and into the new year.  

      One thing I like to do after a big holiday spread is to cook some easy dishes. This chicken dish is a one pot wonder, done all in your skillet.  Don't you just love one pot meals?  Simple, good quality ingredients make for one tasty dish...plus the clean up is a breeze!

      Chicken, asparagus and summer squash go great together, and when cooked in a wonderful broth you get that comfort feeling.  I would add a little white wine to the broth next time for added flavor, but it's wonderful as it is.  Then to top it off...we have BACON!  Just a touch for that extra something special.  Everything's better with bacon as they say...I do agree!



      So when you need a quick meal on the table over the next couple of days, reach for your skillet and put this one together.  It's something the whole family will enjoy.

      Chicken and Asparagus Skillet Supper

      Serves 4

      4 boneless, skinless, chicken breasts
      salt and ground black pepper
      4 slices bacon, coarsely chopped
      1 pound asparagus spears, trimmed
      1 small yellow summer squash, halved crosswise and cut into 1/2-inch strips
      1/2 cup chicken broth
      2  tablespoons flour
      1/2  teaspoon  finely shredded lemon peel
      Lemon wedges 

      Pound chicken between plastic wrap until they are even.  Season chicken with salt and pepper. In a large skillet cook bacon over medium heat until crisp.  Remove and drain on a paper towel.  Add chicken to dripping and cook for 8 minutes, turning half way through.  Remove chicken from skillet; keep warm.

      Add asparagus and squash to the skillet and cook for 3 to 5 minutes or until vegetables are crisp-tender.   In a small bowl stir together broth, flour and lemon peel.  Add to the skillet.  Cook and stir until thick and bubbly, several minutes.   Add chicken  and cook an additional 5 minutes more or until chicken is completely done.   Sprinkle with bacon and serve.
