Bold & Spicy Harissa Couscous Salad with Chicken


serves 4


1 14.5 oz can reduced sodium chicken broth
1 Tablespoon Harissa sauce
2 Tablespoons olive oil
3 green onions, thinly sliced, white and green parts separated
1 cup Israeli couscous (pearl)
1/4 cup golden raisins
2/3 cup frozen whole kernel corn
1 cup multicolor cherry tomatoes, halved
1/2 cup chopped fresh parsley
1/3 cup roasted, unsalted pistachios
1/4 cup crumbled feta cheese
1 pound chicken cutlets (4 cutlets, thin cut breasts)
Chicken seasoning (I used Caribbean Citrus Chile Rub)
2 Tablespoons chopped fresh mint
zest and juice of 1 lemon

Harissa Vinaigrette:
3 Tablespoons olive oil
2 Tablespoons red wine vinegar
1/2 Tablespoon Harissa sauce
2 teaspoons honey
1/2 teaspoon cumin
1/4 teaspoon coriander
1/4 teaspoon black pepper
1/4 teaspoon kosher salt

In a small bowl whisk together all ingredients for the Harissa vinaigrette and set aside.

In a small saucepan whisk together the chicken broth and Harissa sauce.  Bring to a boil over high heat, then reduce the heat to low, keep warm.  

Heat 1 Tablespoon olive oil in a large skillet over medium-high heat.  Season your chicken breasts with a complementary seasoning blend.  Cook the chicken cutlets 3-4 minutes per side, turning once, until chicken is done and has reached 160 degrees inside.

In a large (12 inch) skillet over medium-high heat add the white parts of the green onions.  Cook 1 minute.  Add the couscous and cook until toasted, about 4 minutes.  Slowly add the chicken broth/Harissa mixture and the raisins.  Brig to a boil, then reduce heat to low and cook about 10 minutes, stirring occasionally and  until all liquid has been absorbed.  Add corn and cook 1 minute.  

Remove the skillet from the heat.  Add in the tomatoes, parsley, pistachios, lemon zest, and Harissa Vinaigrette, and toss to combine.  Top with feta, chicken, green onions, and mint and a squeeze of lemon juice.

Greek Chicken Bowls

My Greek inspired chicken bowl is the perfect 30 minute meal to eat all summer long!

Another 30 minute meal coming your way!  I've been on the hunt trying new quick and easy dishes all summer and this one is perfect for a weeknight meal.  

I used a rotisserie chicken that I shredded up. But you can use any leftover chicken or grill, poach, or bake your own.  Add pearl couscous ( Larger round pasta balls thank Moroccan couscous) as your base  and fill the bowl with garbanzo beans, red onion, bell pepper, cucumber, tomatoes and feta cheese.  I drizzled a little store bought Tzatziki dressing over the top and dinner is done!  The flavors of Greek food made simple in a simple grain bowl.   Can't beat the flavors or the ease of making this dish.

What Ingredients do I need?

  • pearl couscous
  • cooked shredded chicken breasts - rotisserie or leftover baked, grilled, or poached chicken
  • garbanzo beans (chickpeas) - canned
  • orange bell pepper
  • red onion
  • cucumber - I used English
  • grape tomatoes
  • feta cheese - I like to buy this in a block and crumble it myself
  • Tzatziki bottled dressing - store bought


Substitutions and Variations

  • Try adding black olives
  • Grains:  Try a grain such as bulgur, quinoa, or farro as the base
  • Switch around the vegetables - try sauteed eggplant or zucchini
  • Season the chicken - you can easily add a Greek seasoning blend to the chicken and heat it in a skillet before adding it to the bowl.
  • Skip the dressing or try a Greek Vinaigrette, or just a dollop of Tzatziki



Kitchen Tips and Notes

  • Prepare the peal couscous first and then do all your vegetable chopping while that is cooking.
  • Serve warm or cold
  • Leftovers will keep in the refrigerator for 3 days
  • Great for meal prepping

Greek Chicken Bowls 


Serves 4


1 cup of pearl couscous
1 1/2 cups water
1 lb. cooked shredded chicken breasts, warmed
1 15oz can of garbanzo beans, drained and rinsed
1 orange bell pepper, sliced
1/2 red onion, sliced
1 English cucumber diced
1 pint grape tomatoes, halved
4-5 oz feta cheese, crumbled
Tzatziki dressing

Bring water to a boil. Add couscous and salt. Return to a boil, then reduce heat to a simmer, cover and cook until tender, about 15 minutes.

To make bowls, divide couscous among 4 bowls. Divide up the chicken,  garbanzo beans, cucumber,  bell pepper,  tomatoes,  red onion,  and feta.  Drizzle with Tzatziki dressing and serve warm.

Spring Fling: Strawberry Spinach Couscous Salad

A delicious and healthy salad loaded with couscous, goat cheese, strawberries, spinach and almonds.  All doused in a lemon vinaigrette.  The perfect salad this Spring and Summer!

Spring has finally hit Southern California and hopefully all the rain is a thing of the past.  We've come out of our drought after soooo many years.  This makes me want to eat light and healthy and I just picked up some ripe red strawberries so a salad is in order!  This salad is perfect for Spring and Summer meals.  It's filled with great ingredients like, juicy ripe strawberries, baby spinach, Israeli couscous, goat cheese, and sliced almonds for crunch.  Then you make a great lemon vinaigrette and toss it all together and end up with one of the best salads of the season!

Serve this along side the protein of your choice.  It's perfect for picnics, BBQs, potlucks, Mother's Day, Easter (next year) Memorial Day, graduation parties, bridal or baby showers.  You name it, it's a winner!





What Ingredients do I need?

  • Cooked Israeli couscous
  • Baby Spinach
  • Strawberries
  • Goat cheese
  • Sliced Almonds
  • Lemon
  • Honey
  • Dijon Mustard
  • Olive oil


Substitutions and Variations

  • Try a different grain such as farro, bulgar, or quinoa.
  • Add kale or arugula instead of spinach.
  • Switch up the cheese. Try feta, cotija, or ricata salata.
  • Try a poppyseed dressing.  Here's my recipe for a Lemon Poppyseed dressing.





Kitchen Tips and Notes

  • I always like to use either a leftover grain or cook the grain/couscous ahead of time so that it cools down to room temperature.

Strawberry Spinach Couscous Salad


serves 4-6


Salad

2 cups cooked and cooled Israeli couscous
2 large handfuls baby spinach
2 cups sliced strawberries
2 oz crumbled goat cheese
1/3 cup sliced almonds


Vinaigrette

1 teaspoon lemon zest
1/4 cup fresh lemon juice
1 tablespoon dijon mustard
1 tablespoon extra virgin olive oil
2 teaspoons honey 
salt and freshly ground black pepper to taste

Combine all of the ingredients for the salad in a large bowl. In a small bowl or mason jar, whisk together ingredients for the vinaigrette. Pour the vinaigrette over the salad and toss until coated.
