Every August, as our wedding anniversary gets a little closer, I find myself thinking back to the beautiful days we spent in Hawaii. I remember the warm ocean breeze, the colorful flowers, and all the fresh tropical flavors that seemed to find their way into nearly every meal. It never fails—this time of year I start reaching for coconut, citrus, and sweet fruit, hoping to bring just a little piece of those memories back into my own kitchen.

That's exactly how I created these Tropical Blueberry Coconut Lime Muffins.

The blueberries are the star of the show, while shredded coconut adds a tropical flavor and the fresh lime zest brightens every bite without overpowering the fruit. One of my favorite things about these muffins is how each ingredient brings something different to the finished loaf. The blueberries stay juicy, the coconut adds gentle sweetness and texture, and the lime brightens everything without overpowering the fruit.

Dry Ingredients

  • Standard 12-cup muffin pan (or 6 well muffin pan) Note: I use every other well in a 12 cup pan to allow the domes to raise high without obstruction.

-- Let's Make It Together

These muffins come together in just two bowls and don't require a mixer, making them perfect for an easy weekend bake.

Start by whisking together the flour, baking powder, and salt in one bowl. In a separate bowl, whisk the egg and sugar until smooth before adding the oil, milk, Greek yogurt, vanilla, and fresh lime zest.

Gently fold the dry ingredients into the wet ingredients until just combined. Toss the blueberries with a teaspoon of flour before folding them into the batter along with the shredded coconut. This simple step helps keep the berries evenly distributed throughout the muffins.

Divide the batter evenly between six muffin cups, filling each nearly to the top for those beautiful tall bakery-style domes. Note: if using a 12 cup muffin pan place batter in every other well.  That way the tops can raise and spread high without any side obstructions. Sprinkle the tops with the remaining coconut and a light dusting of coarse sugar.

Bake at a high temperature for the first few minutes to encourage a nice rise, then reduce the oven temperature until the muffins are golden and a toothpick inserted in the center comes out clean.

Let them cool for a few minutes before transferring them to a wire rack. They're especially delicious while still slightly warm.

The secret to tall, bakery-style muffins is starting with a hot oven. The initial burst of heat gives the batter a quick lift before the temperature is lowered to finish baking gently.

Taco night is one of those dinners that never seems to get old around our house. It's quick, customizable, and always a welcome answer to the question, "What's for dinner?" But every now and then, I like to take the familiar and give it a fresh seasonal twist without making it any more complicated.

These Cheesy Turkey & Spinach Tacos start with seasoned ground turkey and sautéed onions, then fresh spinach is folded in until just wilted. Instead of sprinkling cheese on top, a handful of shredded mozzarella is stirred directly into the warm turkey mixture, where it melts completely into the filling. You don't really notice the cheese itself—it simply makes the filling a little richer, a little creamier, and helps bring all of the flavors together.

To finish things off, each taco gets a generous spoonful of homemade guacamole and a scattering of fresh diced tomatoes. The creamy avocado, bright lime, and juicy tomatoes add freshness that makes these tacos especially perfect during the summer months.

It's the kind of meal that's easy enough for a busy Tuesday evening but satisfying enough that you'll find yourself making it long after Taco Tuesday has passed. Simple ingredients, fresh flavors, and just enough of a twist to make a familiar favorite feel brand new.

I'm in the season of making quick weeknight dinners.  Ones that don't require spending substantial time cooking, that are healthy and light.  This is a big, texture-filled salad that is extremely satisfying. We naturally shift away from heavier dinners as the weather starts warming up, and we start craving meals that feel fresh, colorful, and packed with crunch.

This Thai-style chicken quinoa salad has become one of my favorite ways to turn simple ingredients into something that feels restaurant-worthy without much effort. You get tender chicken, crisp napa cabbage, fresh herbs, fluffy quinoa, and spicy roasted cashews all tossed in a bright ginger lime dressing that wakes everything up.

It’s the kind of salad that works just as well for an easy weeknight dinner as it does for meal prep lunches throughout the week. And because it follows my simple 5-part salad formula, it’s also endlessly customizable depending on what you already have in the fridge.

Salad Ingredients

  • Cooked quinoa - use leftover quinoa or buy a package of premade quinoa
  • Roasted unsalted cashews
  • Extra virgin olive oil
  • Chili powder, Cayenne, Salt & Black Pepper - a few spices give it that Thai flavor
  • Boneless skinless chicken breasts
  • Carrots
  • Green onions
  • Fresh cilantro
  • Napa cabbage
  • Baby spinach

Ginger Lime Dressing Ingredients

  • Lime juice - try to use fresh squeezed limes
  • Fresh ginger - can also use ginger paste or jarred minced ginger
  • Extra virgin olive oil
  • Soy sauce
  • Pure maple syrup
  • Chili garlic sauce  - such as Siracha

One of the reasons I love this salad so much is that it follows my simple everyday salad formula. Once you understand the structure, you can create endless salad combinations without needing an exact recipe every time.

The Formula (using this Chicken Quinoa Salad as an example)

  1. Greens - Napa cabbage and baby spinach
  2. Protein - Seasoned chicken breast
  3. Crunch - Spicy roasted cashews
  4. Color - Carrots, green onions, and cilantro
  5. Dressing - Fresh ginger lime dressing with a little heat

Start by making the spicy cashews. Toss the cashews with olive oil, chili powder, cayenne, and salt, then toast them in a skillet until fragrant and golden. Set aside to cool while you prepare the rest of the salad.

Slice the chicken breasts horizontally to create thin fillets, then season both sides with salt and pepper. Cook in a hot skillet until golden brown and fully cooked through. Transfer to a plate and let the chicken rest before slicing.

While the chicken cooks, whisk together the ginger lime dressing in a large bowl. Add the lime juice, fresh ginger, olive oil, soy sauce, maple syrup, and chili garlic sauce until well combined.

Add the grated carrot, green onions, and cilantro directly into the bowl with the dressing so the vegetables start soaking up flavor right away.

Thinly slice the napa cabbage and add it to the bowl along with the spinach, cooked quinoa, and spicy cashews. Toss everything together until evenly coated.

Slice the chicken and serve it over the salad with extra cilantro scattered on top.

This is one of those recipes that naturally works as a “clean out the fridge” meal without ever feeling like leftovers.

The base stays the same, but everything else is flexible depending on what you have on hand:
  • Swap cabbage → romaine, mixed greens, or shredded green cabbage

Today, we’re switching gears to something smoky, fresh, and bold: Southwest Chicken Salad Bowls. These bowls are packed with crisp lettuce, juicy cherry tomatoes, creamy avocado, and warm, perfectly seasoned chicken — all tied together with a bright squeeze of lime.

It’s smoky, slightly spicy, and herb-forward, and it brings that bold, crave-worthy punch to the chicken and even the corn and beans.

  • Boneless, skinless chicken breasts - these keep the bowls light but satisfying. They cook quickly, soak up the Southwest seasoning beautifully, and slice easily for bowl-style meals.
  • Green Leaf Lettuce - adds a fresh, crisp base without overpowering the other ingredients. It’s sturdy enough to hold warm toppings but still tender and light.
  • Black Beans - bring heartiness and plant-based protein to the bowl. They balance the fresh ingredients and make the meal feel filling without being heavy.
  • Corn - adds pops of flavor and texture. Charring it lightly in the skillet brings out its natural sweetness and pairs perfectly with the smoky seasoning.
  • Cherry Tomatoes - add brightness and freshness to every bite.
  • Avocado - adds richness and helps mellow the spice from the Southwest seasoning. It’s the ingredient that ties everything together.
  • Limes - juice wakes up all the flavors.
  • Southwest Seasoning Blend - (recipe below) comprised of chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt & pepper, and cayenne pepper. This smoky, slightly spicy blend is the flavor backbone of the bowl.
