There are some weeknights when the last thing you want to do is spend a lot of time making dinner. That was exactly where I found myself with this Steak, Avocado, Corn & Cucumber Salad Bowl. After a long day at work, I wanted something easy, fresh, and satisfying—but I wasn't expecting dinner to come together quite this effortlessly.

While the steak rested and cooled, I chopped the cucumber, avocado, and fresh corn and whisked together the bright honey-lime dressing. That's really all there was to it. In about 30 minutes, dinner was on the table, and one bite told us this was a keeper.

The combination surprised both my husband and me. The sweet-tart lime and honey dressing is bright enough to keep the salad feeling light, while perfectly complementing the savory steak, creamy avocado, crisp cucumber, and fresh corn. Every bite has a little pop of flavor, and somehow it manages to be both filling and wonderfully light—the kind of meal that feels just right for a warm evening.

For the Salad

  • Sirloin steak — Flavorful, tender, and quick-cooking, making it perfect for an easy weeknight salad.

  • Fresh corn — I love using sweet corn straight from the cob for its fresh, crisp texture. You can also cook it first if you prefer.

  • Fresh cilantro — A little fresh herbiness ties all the flavors together.

For the Honey-Lime Dressing

  • Extra virgin olive oil — The smooth, savory base of the dressing.

  • Honey — Adds just a touch of sweetness to balance the tart lime.

  • Fresh lime juice — The bright, citrusy flavor that gives this dressing its signature pop.

  • Garlic — Just a little adds savory depth without overpowering the fresh ingredients.

My Go-To's

A large, heavy skillet is my favorite way to cook the steak indoors because it gets nice and hot and gives the steak a beautiful sear.

A sharp chef's knife also makes quick work of the cucumber, avocado, cilantro, and corn.

And if you're making the dressing in a jar, a small jar with a tight-fitting lid makes it easy—just add everything, cover, and shake.






-- Let's Make It Together

Let's start with the steak. Get your skillet nice and hot, give the steak a little olive oil, and season it generously with salt and freshly cracked black pepper. Sear it until it's beautifully browned on both sides and cooked to your liking.

Once it's done, transfer it to a plate, loosely tent it with foil, and let it rest for about 10 minutes. I like to slice it into bite-sized pieces and let it cool while I put the rest of the salad together.

While the steak is resting, make the dressing. Just whisk together the olive oil, honey, lime juice, garlic, salt, and pepper. You can also throw everything into a little jar, put the lid on, and give it a good shake. Easy!

Now grab a big bowl and add your cucumber, avocado, fresh corn, and cilantro. I used the corn raw, straight from the cob, and loved the little bit of crunch it added. Add the cooled steak, give the dressing another quick whisk, and drizzle it all over.

Give everything a gentle toss—you don't want to smash that beautiful avocado—and that's it. Dinner is ready!

I served ours with some crusty ciabatta bread and a cold glass of Sauvignon Blanc. It was such an easy dinner after a long day, and honestly, I was surprised by just how delicious it was.

The one thing I wouldn't rush is the steak. Let it rest before slicing, and let it cool before adding it to the salad. Resting keeps the steak juicy, while allowing it to cool prevents the warm meat from wilting the cucumber and avocado. You get the best of both worlds—a tender, flavorful steak and a crisp, fresh salad.

I'm in the season of making quick weeknight dinners.  Ones that don't require spending substantial time cooking, that are healthy and light.  This is a big, texture-filled salad that is extremely satisfying. We naturally shift away from heavier dinners as the weather starts warming up, and we start craving meals that feel fresh, colorful, and packed with crunch.

This Thai-style chicken quinoa salad has become one of my favorite ways to turn simple ingredients into something that feels restaurant-worthy without much effort. You get tender chicken, crisp napa cabbage, fresh herbs, fluffy quinoa, and spicy roasted cashews all tossed in a bright ginger lime dressing that wakes everything up.

It’s the kind of salad that works just as well for an easy weeknight dinner as it does for meal prep lunches throughout the week. And because it follows my simple 5-part salad formula, it’s also endlessly customizable depending on what you already have in the fridge.

Ingredients

Salad Ingredients

  • Cooked quinoa - use leftover quinoa or buy a package of premade quinoa
  • Roasted unsalted cashews
  • Extra virgin olive oil
  • Chili powder, Cayenne, Salt & Black Pepper - a few spices give it that Thai flavor
  • Boneless skinless chicken breasts
  • Carrots
  • Green onions
  • Fresh cilantro
  • Napa cabbage
  • Baby spinach

Ginger Lime Dressing Ingredients

  • Lime juice - try to use fresh squeezed limes
  • Fresh ginger - can also use ginger paste or jarred minced ginger
  • Extra virgin olive oil
  • Soy sauce
  • Pure maple syrup
  • Chili garlic sauce  - such as Siracha

One of the reasons I love this salad so much is that it follows my simple everyday salad formula. Once you understand the structure, you can create endless salad combinations without needing an exact recipe every time.

  1. Greens - Napa cabbage and baby spinach
  2. Protein - Seasoned chicken breast
  3. Crunch - Spicy roasted cashews
  4. Color - Carrots, green onions, and cilantro

-- Let’s Make It Together

Start by making the spicy cashews. Toss the cashews with olive oil, chili powder, cayenne, and salt, then toast them in a skillet until fragrant and golden. Set aside to cool while you prepare the rest of the salad.

Slice the chicken breasts horizontally to create thin fillets, then season both sides with salt and pepper. Cook in a hot skillet until golden brown and fully cooked through. Transfer to a plate and let the chicken rest before slicing.

While the chicken cooks, whisk together the ginger lime dressing in a large bowl. Add the lime juice, fresh ginger, olive oil, soy sauce, maple syrup, and chili garlic sauce until well combined.

Add the grated carrot, green onions, and cilantro directly into the bowl with the dressing so the vegetables start soaking up flavor right away.

Thinly slice the napa cabbage and add it to the bowl along with the spinach, cooked quinoa, and spicy cashews. Toss everything together until evenly coated.

Slice the chicken and serve it over the salad with extra cilantro scattered on top.

This is one of those recipes that naturally works as a “clean out the fridge” meal without ever feeling like leftovers.

The base stays the same, but everything else is flexible depending on what you have on hand:
  • Swap cabbage → romaine, mixed greens, or shredded green cabbage
  • Swap chicken breasts → chicken thighs, or even boneless pork chops 
  • Use up fresh herbs → parsley, dill, basil, or even mint will work 
  • Change the crunch → try almonds or peanuts

Lately here in California, the weather can’t seem to make up its mind. One day it feels like spring — sunny skies, open windows, and afternoon walks — and the next, it’s cold, gray, and pouring rain like winter never left.

And on those dreary, rainy days, all I want is something warm, comforting, and waiting for me at dinnertime.

That’s exactly why this slow cooker chicken tortilla soup has become one of my favorites.

It’s the kind of recipe you can throw together in the morning, let simmer quietly all day, and come back to later when the house smells amazing and dinner is basically done. Almost hands-off cooking — but with a big, bold payoff.

Between the fire-roasted tomatoes, warm spices, tender chicken, and cozy broth, every spoonful is full of flavor. Add a handful of crispy tortilla strips and your favorite toppings, and suddenly it feels like you put in way more effort than you actually did.

This is one of those recipes that feels almost too easy for how good it turns out.

Start by laying the chicken breasts in an even layer in the bottom of your slow cooker.

Scatter the chopped onion, garlic, black beans, tomatoes, cilantro, chili powder, cumin, and salt over the top. Pour in the chicken broth, making sure everything is mostly covered.

Cover and cook on low for 6 hours, until the chicken is tender and easy to shred.

During the last hour of cooking, stir in the chopped bell peppers and frozen corn. This keeps them colorful and slightly crisp instead of mushy.

Once the chicken is fully cooked, shred it directly in the slow cooker using two forks. Turn the heat to warm and let everything come together.

While the soup finishes, heat oil in a skillet and quickly fry the tortilla strips until golden and crispy. Drain on paper towels and season lightly with salt.

Ladle the soup into bowls, top with tortilla strips and your favorite toppings, and serve with lime wedges on the side.

Ingredients

Steak

  • 1–1½ lbs sirloin steak, cut into bite-sized cubes
  • 2 Tbsp Southwest Seasoning Blend (recipe below)
  • Olive oil

Bell Pepper Blend

  • 2 bell peppers (red or orange), cored and sliced
  • ½ red onion, sliced
  • 1 tsp Southwest Seasoning Blend
  • Olive oil

Corn

  • 1 package frozen roasted corn
  • 1 Tbsp Southwest Seasoning Blend
  • Olive oil

Fresh Salsa

  • 1 pint cherry tomatoes, diced
  • 1 jalapeño, seeded and diced
  • ¼ red onion, finely diced
  • Olive oil

Cilantro Lime Rice

  • 1 cup basmati rice
  • Juice of 1 lime
  • 2 Tbsp chopped fresh cilantro

For Serving

  • Chopped fresh cilantro
  • Olive oil drizzle
  • Lime wedges (optional)




How to Make

These Beef Fajita Bowls come together in stages, but each step is simple and quick — perfect for a relaxed but flavorful weeknight dinner.

  • Prepare the rice: Cook basmati rice according to package directions. Stir in lime juice and chopped cilantro while warm. Cover and keep warm while preparing the remaining components.
  • Season the steak: Toss steak cubes with Southwest Seasoning Blend until evenly coated. (Homemade version is at the end of this section)
  • Sear the steak: Heat olive oil in a cast iron skillet over medium-high heat. Add steak and cook about 2 minutes, stirring often, until browned. Remove to a plate.
  • Cook the peppers & onions: Add a little more oil to the skillet. Add sliced peppers and onions, sprinkle with Southwest Seasoning, and cook until crisp-tender, about 5 minutes. Remove and set aside.
  • Char the corn: Add frozen corn directly to the hot skillet. Let it char in spots before stirring. Season with Southwest Seasoning, drizzle lightly with olive oil, and remove from heat.
  • Make the salsa: Combine diced tomatoes, jalapeño, and red onion in a bowl. Drizzle with olive oil and toss to combine.
  • Assemble the bowls: Layer rice, steak, peppers, corn, and fresh salsa. Finish with chopped cilantro, a drizzle of olive oil, and extra lime juice if desired.


Southwest Seasoning Blend

Makes about ¼ cup

  • 2 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 1 Tbsp smoked paprika (or regular paprika)
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper (optional)

To make:
Add all spices to a small bowl or jar. Stir or shake until well combined. Store in an airtight container.




Substitutions & Variations

  • Seasoning Swap: Don’t have the homemade Southwest Seasoning Blend? Use your favorite store-bought Southwest or fajita seasoning. Start with a smaller amount and adjust to taste, as salt levels vary by brand.
  • Protein Options: Swap sirloin for chicken thighs, flank steak, shrimp, or tofu. Adjust cooking time as needed.
  • Grain Alternatives: Use brown rice, jasmine rice, quinoa, or cauliflower rice in place of basmati.
  • Vegetable Add-Ins: Add mushrooms, zucchini, or poblano peppers to stretch the bowls or clean out the fridge.
  • Heat Level: Leave out the jalapeño for mild bowls, or add extra cayenne or hot sauce for more heat.
  • Meal Prep Friendly: Store steak, vegetables, rice, and salsa separately in airtight containers for up to 4 days. Reheat gently before assembling.
