Substitutions

  • Za’atar Spice Substitutes:  Mix of dried thyme, sesame seeds, and sumac (if sumac is unavailable, try lemon zest for tang) or Italian seasoning + sesame seeds + a dash of lemon zest
  • Roma Tomatoes Substitutes:  Cherry or grape tomatoes, halved or Heirloom tomatoes for a juicier, more colorful option
  • English Cucumber Substitutes:  Persian cucumbers for a similar mild flavor or Regular cucumbers (peeled and deseeded to reduce bitterness)
  • Chickpeas Substitutes:  

    White beans (cannellini or great northern) for a softer texture




Kitchen Tips and Notes

  • For the Best Flavor, Let It Marinate: Allow the salad to sit for at least 10–15 minutes after adding the dressing. This helps the Za’atar spice and vinaigrette soak into the chickpeas and veggies, enhancing the flavor.
  • Use Fresh Herbs for Maximum Freshness: Fresh parsley and dill are key to the salad’s vibrant taste.
  • Rinse & Drain Chickpeas Well:  Canned chickpeas should be rinsed thoroughly under cold water to remove excess sodium and any canned taste. Patting them dry will help them absorb the flavors better.
  • Make It a Meal:  Turn this salad into a full meal by serving it with grilled chicken, shrimp, or tofu. You can also stuff it into pita bread or serve it over a bed of quinoa or couscous for added heartiness.
  • Store Leftovers Smartly:  This salad stays fresh in the fridge for up to 3 days. Store in an airtight container.

Vibrant Za’atar Chickpea Salad: A Burst of Flavor in Every Bite


serves 4


1 cup canned chickpeas, drained
2 tbsp Za’atar spice
3 Roma tomatoes, diced
1/2 English cucumber, diced
1 small red onion, sliced in 1/2 moons
1 cup chopped parsley
1 cup chopped dill

For the Garlic Vinaigrette:
1–2 garlic cloves, minced
1 large lime, juice of
1/3 cup extra virgin olive oil
Salt & Pepper


In a medium mixing bowl, combine the tomatoes, cucumbers, chickpeas, red onions, parsley and dill. Add the remaining Za’atar, and mix gently.

In a small bowl, whisk together the dressing ingredients and pour the dressing over the chickpea salad and mix.

Mediterranean Couscous Salad

This fresh Mediterranean Couscous Salad is flavor packed with fresh cherry tomatoes, chickpeas, cucumbers, herbs, and feta cheese. A salad you'll want to make all year-round!





Mediterranean Couscous Salad


Tomatoes are at their peak and it's time to take advantage of that by using them in this quick and easy throw together salad.  It's main base is Israeli couscous which is pre-toasted tiny balls of pasta.  This type is larger than the Moroccan type you typically associate couscous with.  It's perfect for salads and lends substance to the dish.  (See below for product sources)  The dish takes advantage of juicy ripe cherry tomatoes that are sweet and bursting with flavor this time of year.  Below I show you my favorite type of cherry tomato.

The salad is very easy to pull together.  Just cook up the couscous, chop your vegetables and herbs, then toss with chickpeas and feta cheese.  A lemon vinaigrette is made to top off the salad.  This one is a winner and I've been making a variation of this all summer long.  In fact, you could make this all year long, but do take advantage of the premium tomatoes that are available now.

What Ingredients do I need?

  • Cherry tomatoes - buy the plumpest, most red tomatoes you can find.  If you can find them on the vine, these tend to have the most flavor.


  • Israeli couscous - larger than regular pasta, this is my favorite brand.
  • Chickpeas - aka garbanzo beans
  • Lemon - for juicing
  • Olive oil - get extra virgin
  • Garlic - use fresh, pre-minced, or even frozen will do.
  • Fresh dill - In summer get the fresh herbs while you can. 
  • Persian cucumbers - little green gems that don't need peeling! Bright cool taste.
  • Feta Cheese - I prefer buying a block of feta and crumbling it myself.  Feta made from sheep's milk is a wonderful treat as well.


Substitutions and Variations

  • Grains such as quinoa, farro, bulgur, or wheat berries may be substituted for the couscous.
  • Any mini pasta such as farfalle, penne, or rotini may be used.  They now come in mini sizes.
  • Use ripe chopped tomatoes, or heirloom tomatoes if they look better than cherry tomatoes.
  • Use English cucumbers instead of Persian.
  • Leave off the cheese if needed.
  • White cannellini beans would work well.
  • Don't care for dill? Try parsley, thyme, or basil.



Kitchen Tips and Notes

  • Cook the couscous first since it has to cool before assembly.
  • Dried herbs:  I haven't tried it with dried dill, but off season this might be an option.  I would put the dried herbs in with the vinaigrette and then mix it in to the salad.
  • For Vegan's use a vegan cheese or leave it off.
  • This salad keeps well in the refrigerator for several days in an airtight container.

Mediterranean Couscous Salad


serves 4-6


1 cup Israeli couscous
1 Tablespoon fresh lemon juice
1 Tablespoon extra virgin olive oil
1 garlic clove, minced
Kosher salt & freshly ground black pepper to taste
3-4 cups of cherry tomatoes, (about 1 1/2 pints), halved 
1 15oz can chickpeas, drained and rinsed
3-4 Persian cucumbers (depending on size), sliced
1/2 bunch fresh dill, chopped
1/3 cup crumbled feta cheese
Kosher salt & freshly ground black pepper to taste

Cook the couscous according to the package directions.  Drain is need be and set aside to cool.

In a small bowl or jar add lemon juice, olive oil, garlic, and a pinch of salt and pepper.  Whisk or shake until emulsified.  

In a large bowl add the cooled couscous, tomatoes, chickpeas, cucumbers, and dill.  Stir to combine.  Drizzle with dressing and toss until well distributed.  Top with crumbled feta cheese and season with salt & pepper to taste if necessary.  Drizzle a little olive oil on top and serve.

Spring Fling: Spring Couscous Salad with Lemon Feta Vinaigrette

With a base of pearl couscous, I've added roasted asparagus, tender garbanzo beans, fresh herbs, and green onions, tossed with a Lemon Feta vinaigrette.  This is a side salad that is full of spring goodness!

I love couscous as a base or addition to a salad.  Pearl couscous is the larger variety and works perfectly in salads.  It provides you with an open canvas to create so many variations and since it's pasta it absorbs a vinaigrette perfectly.  Today we are taking spring produce, so we are adding some roasted asparagus, lots of fresh herbs like parsley and basil, and fresh lemon.  You will get a double dose of lemon in the salad and the dressing for that bright pop!

This is a wonderful side dish that can be served along side chicken, beef, or pork for a light springtime meal.  It's also perfect as a side dish salad for Easter.  Easy to pull together and the flavors are popping.  It's sure to be one you'll want to repeat often.

What Ingredients do I need?

  • pearl couscous
  • thin asparagus spears
  • lemon - zest and juice
  • feta cheese
  • canned garbanzo beans
  • green onions
  • parsley
  • basil
  • olive oil
  • garlic
  • pistachios (optional)


Substitutions and Variations

  • Change up the herbs - use fresh mint, dill, thyme, or chives.
  • Use thick asparagus if you wish - note: roasting time will be about 5 - 7 minutes longer.  I would cut these in to 2" pieces.
  • Can't find pearl (Israeli) couscous?  use the original small type.
  • You can substitute the couscous for a grain such as farro, bulgur, or even quinoa.
  • Don't like cheese? leave it out or trade it for ricotta salata or even cotija.
  • Don't like nuts? leave them out or add your favorite, pine nuts, or hazelnuts would be a good addition.




Kitchen Tips and Notes

  • This recipe is great for leftover couscous.
  • You will need to allow the couscous to cool so plan a little time for that, or make it ahead.  You may help the cooling by running it under cool water and then draining it well.
  • Leftover will keep in the refrigerator in an airtight container for several days.  
  • The vinaigrette will keep for several days in the refrigerator.
  • Drizzle leftovers with more vinaigrette to moisten and flavor the salad.

Spring Couscous Salad with Lemon Feta Vinaigrette


serves: 6


Salad:

1 cup pearl couscous
1 pound thin asparagus spears, woody stems cut off
olive oil
14 oz can of garbanzo beans, drained and rinsed
1 green onion, thinly sliced both white and green parts
zest of 1 lemon
2 Tablespoons fresh parsley, chopped
2 Tablespoon fresh basil, chopped
kosher salt & freshly ground black pepper to taste
2 Tablespoon pistachios, chopped (optional)


Vinaigrette:

Juice of 1 lemon
1 Tablespoon fresh parsley, chopped
1 Tablespoon fresh basil, chopped
1 teaspoon lemon zest
1 garlic clove, minced
1/3 cup extra virgin olive oil
salt & pepper
1/3 cup crumbled feta cheese


Preheat the oven to 425 degrees F.

Cook the couscous according to the package directions.  This should be about 15 - 20 minutes.  Meanwhile roast the asparagus by placing them on a sheet pan.  Drizzle with olive oil, salt and pepper, tossing to combine.  Spread them out on the pan so they are not overlapping.  Roast for 8-10 minutes until they are starting to darken on the ends.  Larger asparagus will need about 5 more minutes to roast.  Remove from the oven and set aside.

Once the couscous is done, drain off any excess water (if any) and place it in a bowl to cool down.  You can run it under cool water and drain again if you like.  Add the garbanzo beans, green onions, lemon zest, parsley, basil, salt and pepper to taste, and stir to combine.  

Drizzle with half of the vinaigrette and toss.  Top with asparagus and some pistachios (if using) and drizzle a little more vinaigrette over the top.  Serve.  

To Make Vinaigrette: in a small bowl or jar add lemon juice, herbs, lemon zest, garlic and a pinch of salt and pepper.  Whisk in olive oil until well combined (or shake jar vigorously).  Add in the feta cheese and stir.

Summer Fresh Recipe Series: Spinach Orzo Salad with Chickpeas

A healthy and delicious salad that is perfect for warm 
weather days!



Everyone loves a good pasta salad, and everyone needs a few in their go-to recipes to make quickly for weekend cookouts, potlucks, family gatherings, and picnics.  This is one of those recipes!  Simple, quick, and very tasty.  This is why this is my 15th installment of my Summer Fresh Recipe Series.  We all need items that use fresh summer produce and are quick and easy to make.  


SPINACH ORZO SALAD WITH CHICKPEAS

Today's pasta salad recipe highlights some great produce that makes this one extra fresh.   The pasta is kept on the small side by using orzo, then we add in some baby spinach, parsley, and green onions for texture and flavor, and then some wonderful grape tomatoes that are at their peak right now. The additional of chickpeas (or garbanzo beans) add protein and give this salad a little more heartiness.  I've also included a great little dressing for you that's simple and quick and give some zip to the salad with the addition of some lemon and hot sauce.  


This is the perfect side dish because it goes with everything from grilled meats, burgers and hot dogs, to sandwiches.  This will hold up well in the heat since there is no dairy.  You can also prepare this ahead and just leave off the dressing until you are ready to serve.  It's best served at room temperature but any leftovers will keep well in the refrigerator for up to 3 days (if they last that long!). 

This salad was a complete hit and is definitely on my "repeat list" for side dishes this summer.

Spinach Orzo Salad with Chickpeas


serves: 6


1 cup chicken broth, low sodium
3/4 cup orzo pasta
2 cup fresh baby spinach
1 cup grape tomatoes, havled
1 can (15oz) chickpeas/garbanzo beans, drained and rinsed 
1/4 cup parsley, chopped
1 green onion, sliced

Dressing:
2 Tbsp. olive oil
1 tsp lemon zest
1 1/2 Tbsp. lemon juice
1/2 tsp salt
pinch garlic powder
a dash or hot pepper sauce
pinch pepper

In a medium saucepan bring broth to a boil.  Add the orzo, stir and return to a boil.  Reduce heat and simmer covered.  Cook 8 minutes until al dente.  Drain if needed.

In a large bowl toss spinach and warm orzo, to allow spinach to wilt slightly.  Add the tomatoes, chickpeas, parsley and green onions.

In a small bowl whisk together the dressing ingredients.  Toss with salad and serve at room temperature.  Leftovers may be kept in the refrigerator for 3 days.
