Here's a quick post to bring you my 9th installment of my Summer Fresh Recipe Series.  Over the weekend I posted my Grilled Vegetable Platter which is amazing by itself, but goes perfect along side this tender and juicy sirloin steak.

GRILLED SIRLOIN STEAK WITH GARLIC HERB VINAIGRETTE

No marinade for this baby, just a few simple seasonings and your are ready to grill.  To finish the dish you top your perfectly cooked sirloin steak with an easy to make vinaigrette filled with garlic and rosemary for that extra pop of flavor.  Don't skip this part, as the vinaigrette is everything!

(Disclosure: I'm such a goofball! I totally forgot to put garlic herb vinaigrette on the steak BEFORE I took the pictures...duh!  I'm sorry, the pictures do not display the heavenly topping!!!)

Summer Fresh Recipe Series




Grilled Sirloin Steak with Garlic Herb Vinaigrette

serves 4-6


1 1/2 lbs sirloin steak
1 1/2 tsp paprika
1/2 tsp garlic powder
Kosher salt & ground black pepper to taste
olive oil

Vinaigrette
3 tablespoons olive oil
1 1/2 tablespoons chopped fresh rosemary
1 tablespoon red wine vinegar
2 cloves garlic, minced
Kosher salt & ground black pepper


Heat a grill or grill pan to medium high heat.  In a small bowl combine the paprika and garlic powder.  Rub the steak with the seasoning on all sides.  Sprinkle with a little salt & pepper to taste.  Brush olive oil all over the steak prior to grilling.

Grill the steak about 5-7 minutes per side for medium doneness, turning once.  Remove from the grill and allow to rest for 5-10 minutes.  

Meanwhile, combine the items for the vinaigrette in a medium bowl.  Set aside.

Cut the steak across the grain and place on a platter.  Drizzle some of the vinaigrette over the steak and serve remaining vinaigrette along with the steak.  Serve.

I've been dying to bring you this 8th installment of my Summer Fresh Recipe Series.  This next side dish is a beauty, and a tasty one at that.  It screams summertime and just begs to be eaten!

The focus is on the fresh summer vegetables and all the fresh herbs you can get your hands on!

I've come a long way since childhood.  Yes, I have.

There was a time I would never have looked twice at this platter, crinkling up my nose.

But not today.

I've changed.

You couldn't drag me away from these now.

And the vinaigrette... let's just say I could bathe in it!

Summer Fresh Recipe Series




Grilled Vegetable Platter


VEGETABLES
5-6 Campari tomatoes
3-4 large carrots, peeled
1 bunch large asparagus, wooden ends removed
1-2 zucchinis, cut on the bias
1-2 yellow summer squash, cut on the bias

FOR THE VINAIGRETTE
1/4 cup olive oil
Tbsp balsamic vinegar
1 Tbsp honey
Tbsp Dijon mustard
3 cloves garlic, minced
Tbsp fresh basil, chopped, plus whole leaves for garnish
Tbsp fresh rosemary, chopped
Tbsp fresh sage, chopped
Tbsp fresh parsley, chopped
Kosher salt and freshly ground black pepper, to taste

Preheat grill to medium high heat.

In a medium bowl stir together all the ingredients for the vinaigrette.  Brush all sides of the vegetables with some of the vinaigrette and allow to marinate for about 10 minutes. 

Grill vegetables straight on the grill until tender crisp and they have good grill marks on them, turning over as needed.  About 10 minutes.

Remove from grill to a platter and drizzle with some of the remaining vinaigrette.  Serve immediately.

Hi everyone! I'm bringing you my 7th installment of my Summer Fresh Recipe Series. A series of recipes that are filled with fresh summer produce that are easy, light, and oh soooo tasty!

Today we are going to focus on produce and herbs, namely carrots, potatoes, parsley, and cilantro! We'll roast the carrots and potatoes with a fantastic Greek roasting method, and then create an herb salsa to go on top of a juicy seared sirloin steak. Sounds yummy doesn't it?


This was a quick dinner for 2 that I got from the Marley Spoon food service and we had for a date night out by the pool. You guys, the flavors are fantastic in their dishes! You really should try them out, it's a great way to get food during the pandemic without going shopping, and a perfect way to try new recipes.

During the summer you want food that is quick and easy to cook. Steak is one of those items that can cook in about 10 minutes, and something we grab often when we want to do a quick grill or even cooking it indoors in a cast iron skillet. The veggie roasting takes a little bit longer (about 15-20 minutes) but is a wonderful way to bring out the sweetness in produce.


Let's talk about this Greek roasting method. The vegetables are tossed with oil and then covered with beef broth as they roast in the oven. This is a great roasting technique to use on potatoes as they soak up the flavorful liquid, allowing the insides to remain tender while the outsides crisp in the oven’s high heat. So besides learning a new cooking technique the veggies turned out delishhh!

Quick and easy is the name of the game and this dish can be on your table in about 30 minutes. I would say that is a blessing in hot weather.

Kitchen Tips: 
  • Prep is key - slice all your veggies and herbs up front to assist with quicker cooking times.
  • When roasting your produce covered in broth make sure that most of the broth is nearly evaporated for the best results.

Summer Fresh Recipe Series



Sirloin Steak topped with Herb Salsa with Roasted Potatoes & Carrots

serves 2

1 large russet potato, cut lengthwise into 1/2" sticks
2-3 carrots, peeled and cut in half crosswise, and then into 1/4" sticks
1 cup beef broth
2 Tbsp fresh parsley, chopped
2 Tbsp fresh cilantro, chopped
1 clove garlic, minced
1 lemon, juiced
salt & pepper
4 Tbsp olive oil, divided use
1 large or 2 small sirloin steaks

Preheat oven to 450 degrees and place the rack in the top position.  

In a medium bowl combine parsley and cilantro, garlic, 1 tablespoon of lemon juice and 2 tablespoons of olive oil.  Stir to combine and season with salt and pepper to taste.  Set aside. 

Using a rimmed baking sheet toss the potatoes and carrots with 1 tablespoon of olive oil and season with salt and pepper.  Spread veggies into a single layer and pour the beef broth over the top.  Roast on the top oven rack for 15-20 minutes, until tender and broth is nearly evaporated.

Meanwhile heat 2 teaspoons of olive oil in a cast iron skillet over medium-high heat until hot.  Pat dry your steaks and season with salt and pepper.  Add to the skillet and cook about 5 minutes per side for medium temperature. (cook less about 3-4 for medium-rare)  Transfer to a plate and allow to rest for 5 minutes.

Once vegetables are done switch oven to broil.  Broil veggies until slightly charred around the edges about 5 minutes.  (watch closely as ovens vary).

Slice steaks thinly and plate with potatoes and carrots alongside.  Drizzle steaks with herb salsa and serve.

Saturday mornings have become my baking time.  That's when I get up early enough to turn on the oven during the summer months and bake a few things so we have goodies to snack on during the week.

I'm really loving the berries this year so I find myself baking with them a lot, that is unless MGG eats them all first!  Today I'm bring you my 6th installment of my Summer Fresh Recipe Series.  Which are recipes filled with fresh summer produce that are easy, light, and oh soooo tasty!  

I'm highlighting lemons and blueberries today.  Both of which scream summer to me, how about you?  I love everything about lemons and blueberries but when you combine them together...well it's a match made in heaven.

So let's take my Basic Scone Recipe and make a variation by adding in some lemon zest for mucho lemon flavor, and some tart blueberries. Oh these babies bake up so beautifully and they are just waiting for you to pop one in your mouth.

This makes a large batch of scones, so freeze some if you like and save for another day. They will keep 2-3 days on the counter, but if the weather is really hot you might want to refrigerate them. Just allow them to come to room temperature or pop them in the microwave to warm them slightly.

Kitchen Tips:  


  1. Use parchment paper which gives the bottoms a nice brown crust.  
  2. Sprinkle sanding or sparkling sugar on the tops for an extra crunch and sweet bite.  
  3. Fold the blueberries in gently so they don't mash up and bleed in your scones. 
  4. Fresh blueberries are best to avoid the dough from turning blue.

Lemon Blueberry Scones 



Yield: 12 scones

3 cups all purpose flour
3 tbsp sugar
1/2 tsp salt
4 tsp baking powder
3 Tbsp lemon zest
3/4 cup butter (cold)
1 egg
1 cup whole milk
2 cups blueberries
Sparkling sugar (optional)

Preheat oven to 450 degrees.

Add the dry ingredients to a large bowl and combine.

Using a pastry cutter cut cold butter into flour mixture until there are pea-sized pieces of butter throughout.  Add the milk and egg and mix just until a dough just starts to form.  Fold in the blueberries until well combined.

Remove the dough to a generously floured work surface and pat the dough just until it comes together. Pat the dough out to 3/4 - 1 inch thickness and cut with a biscuit cutter.  

Place the scones on a baking sheet covered with parchment paper and bake for 10 to 15 minutes or until golden brown on top.  Remove from the oven and allow to cool on a wire rack for several minutes.  Serve warm.

There nothing better than cooking and eating alfresco in the heat of the summer.  Summer is always a welcome time for me.  It brings with it all the fresh fruits and vegetables that I just can't get enough of and wish would last all year.  Today we are going to celebrate the long summer evenings with a grilled feast!

This recipe has become one of my new favorites.  Juicy pork tenderloin is spiced just right and then glazed with a ginger honey scallion sauce and served with grilled apricots and broccolini with toasted almonds.  This really is one heck of a summer treat!

This is what I call a grilled Asian fusion dinner.  The flavors all work together wonderfully and create a memorable meal.  The glaze/sauce is the pop of flavor that takes this dish over the top, so don't skip that part. It's key!  Another plus is that you can cook everything on the grill.  Don't have a grill?, not to worry an indoor grill pan will work in a pinch.  

Oh, and don't be counting on any leftovers....this will be gone in a flash...it's that good.

Summer Fresh Recipe Series





Grilled Honey Ginger Glazed Pork Tenderloin with Apricots & Broccolini

serves 4


1 1/4 tsp ground coriander
1/2 tsp salt
1/2 tsp pepper
1 pork tenderloin (about 1 1/2 lbs.), silver skinned removed
1 tsp fresh ginger, grated
3/4 cup honey
2 Tbsp apple cider vinegar
salt & pepper, to taste
olive oil
1 bunch broccolini, ends trimmed
4 apricots, halved and pitted
8 scallions, tops trimmed only
1/4 cup sliced almonds

Heat your grill or grill pan to high.  In a small bowl add coriander, salt, and pepper.  To another medium bowl add the ginger, honey and vinegar.  Season with salt and pepper and stir until combined.  Set aside.

Pat the pork tenderloin dry and season all over with the spice rub.  Reduce grill heat to medium and lightly oil the grates.  Add pork to the grill and cook covered about 8-12 minutes turning occasionally.  Transfer to a cutting board and brush with some of the glaze.  

While the pork cooks drizzle some olive oil over the broccolini, apricots, and scallions, tossing to coat.  Season with a pinch of salt and pepper.  Add the vegetables to the other side of the grill (we used a grill tray) and cook until tender and charred in spots, turning occasionally.  Broccolini will cook 7-10 minutes, apricots about 6-7 minutes, and scallions 2-3 minutes.  Transfer to a cutting board.  

In a small skillet add 1 tablespoon of olive oil and the almonds and cook until they are lightly toasted, stirring frequently so they don't burn, about 2-3 minutes.  

Finely chop the grilled scallions and add them to the bowl with the remaining glaze. Whisk in an additional 1 Tablespoon of olive oil.  Thinly slice the pork.  Serve pork with the grilled apricots drizzled with the scallion honey glaze.  Add broccolini and garnish with toasted almonds.

It's starting to get hot outside but I'm still in baking mode.  So the only time of day I can tolerate my oven being on is early in the morning.  Which brings us to my 4th installment of my Summer Fresh Recipe Series.  Great recipes using summer produce that fresh and light.  Let's talk breakfast!

Last week was the long 4th of July weekend.  I hope you had an enjoyable time.  Although not our typical holiday we spent the day in the pool and then we tried to grill, however we ran out of gas about 5 minutes into making dinner.  Don't you hate when the happens!  We switched gear and grilled "inside" and enjoyed our dinner alfresco.

Now Sunday is our day to have a leisurely breakfast.  With the weather warming up, we typically eat most of our meals outdoors.  Something simple but scrumptious is in order.  We're having:

LEMON RASPBERRY DUTCH BABY

Part popover, part crepe, part pancake, this dish combines the best aspects of all three. I like to serve it on lazy Sunday mornings, garnished with fresh berries.  This makes a brunch worthy presentation and is just enough for 2, but certainly can be doubled to serve more.

What do I need to make this?
 - 8" inch cast iron skillet.  This is the perfect size for 2 people and can be used for so many things like skillet cookies, side dishes, fruit crisps, and cooking burgers, steaks and chicken. You can purchase one hereThe size of your pan is crucial when making a Dutch Baby, if you use one too small it will overflow (messy!) or one too big you will have a flat pancake (ugh!) that doesn't get tender and puffy.

Key Notes:  You want to start off cooking the pancake in a skillet that is screaming hot.  So put it in the oven when you turn it on to preheat the oven.  Place some butter in there as well so it melts.  You want to pour your batter into a very hot skillet, and put it back in the oven to cook.  Once it comes out of the oven you will see tall puffy mounds that are golden brown with darker edges.  Don't be alarmed if the pancake deflates as it cools, this is normal.

Dutch babies are soooo easy to make you will wonder why you don't do this all the time.  To finish is off you will sprinkle on some lemon juice and sprinkle with some confectioner's sugar and top with berries.

Lemon Raspberry Dutch Baby

serves:  2

2 tablespoons butter, divided
1/3 cup  All-Purpose Flour
1/8 teaspoon salt
1 teaspoon sugar
1 tsp lemon zest
1/4 cup milk
1/2 teaspoon vanilla extract
2 large eggs
1/2 lemon, squeezed
powdered sugar
1/3 fresh raspberries


Preheat the oven to 425°F.  Using an 8" cast iron skillet add one tablespoon of butter and place it in the oven as it preheats, to heat the pan and melt the butter.

To a medium bowl add the flour, salt, sugar, and lemon zest.  In a small bowl whisk together the milk, vanilla, and eggs. Add the liquid ingredients to the dry and whisk until smooth; a almost smooth.  Melt the remaining tablespoon of butter and stir it into the batter.

Remove the skillet from the oven and place on the stove.  Pour the batter into the pan. Place the skillet back in to the oven and bake for 15-20 minutes, until golden and puffed with some deeper brown patches.

Remove from the oven and sprinkle with lemon juice and powdered sugar. Garnish with berries and serve immediately.

Hello and happy July!  I can't believe that half of 2020 is gone already.  It seems like such a blur with the stay at home orders from COVID-19.  We are actually having a new surge of spread in Los Angeles as our city opens up again, which has caused closures of the bars once again, and to avoid gatherings on this holiday weekend they've decided to close the beaches as well.

It's sure going to look different this 4th of July, but I hope that everyone stays safe and finds a new way to celebrate at home.  We will be having our usual Independence Day festivities by enjoying some pool time and grilling at home with some scrumptious food.  Which brings me to my 3rd Installment of my Summer Fresh Recipe Series!  This is where I offer you recipes using fresh summer produce, that's easy, light, and oh sooooo tasty!

Monday's recipe was Grilled Chicken Kofta.  So yummy and perfect for the upcoming holiday if you are grilling outside (or inside!).  Today's dish is the perfect accompaniment to go along with the chicken kofta, or any other grilled item such as fish, beef, pork, or chicken.  This side salad is bursting with fresh ingredients and full of flavor, not to mention it's one of the easiest salads you'll ever make.  3 main ingredients along with 3 flavor enhancers and you are done!  Nothing is better during the hot summer heat that eating a refreshing salad.  One that light but still filling, and this salad fits the mold.

What do I need to make this salad?  Not much actually.  Fresh summer Roma tomatoes, cucumbers, and parsley are the main items.  To enhance the flavors we'll add a spice called Sumac, some extra virgin olive oil, and some freshly squeezed lemon.  That it's!  Super simple, yet fresh and tasty.  This will certainly become a go-to salad for summer.

Note:  Sumac is a wonderful tangy spice with a sour, acidic flavor reminiscent of lemon juice.  It really brightens up the dressing for this salad.   You can purchase at your local grocery or here.

Simple Mediterranean Salad

serves: 4-6

6 Roma tomatoes, diced (about 3 cups diced tomatoes)
1 Large English cucumber (or hot-house cucumber), diced
1/2 to 3/4 packed cup chopped fresh parsley leaves
salt, to taste
1/2 tsp black pepper
1 tsp ground Sumac
2 tbsp extra virgin olive oil
2 tsp freshly squeezed lemon juice


To a large bowl, add diced tomatoes, cucumbers and parsley. Add salt and set aside for 4 minutes or so.

Add the remaining ingredients and give the salad a gentle toss. Allow the flavors to combine a few minutes before serving.
