Some nights call for a dinner that’s fast, comforting, and doesn’t require a last-minute trip to the store. That was exactly my situation the other evening—I needed a quick meal and decided to scroll through my saved Pinterest recipes for inspiration. I landed on a ground beef and orzo idea, but instead of following it exactly, I decided to make my own spin with the ingredients I already had on hand.

What came together was this Hearty One-Pot Ground Beef & Orzo, a dish that checks all the boxes: easy to make, ready in about 30 minutes, and packed with flavor. It’s hearty enough to satisfy both adults and kids, and it reheats beautifully, making it just as good the next day.

I especially love how this recipe feels right for the season—it’s light enough for the tail end of summer, yet cozy enough to carry straight into fall. Plus, it’s a true “use-what-you-have” kind of meal, which makes it not only stress-free but also budget-friendly. This one-pan wonder has quickly become a go-to in my kitchen, and I think it might just become one in yours too.

What Ingredients Do I Need?

  • Onion
  • Extra virgin olive oil
  • Ground beef
  • Salt and black pepper
  • Garlic
  • Diced tomatoes with Italian herbs
  • Orzo pasta
  • Low-sodium beef broth
  • Italian seasoning (basil, oregano, thyme)
  • Fresh spinach (or other leafy greens)



Substitutions and Variations

Don’t have exactly what’s listed? No problem! This recipe is perfect for mixing and matching:

  • Protein swaps: Italian sausage, ground turkey, or even  chicken work wonderfully.
  • Greens: Kale, Swiss chard, or arugula can replace spinach.
  • Orzo alternatives: Any small pasta shape like ditalini, acini di pepe, or even small shells will work well.
  • Tomatoes: Crushed tomatoes or fresh diced tomatoes can be used.  Or take whole tomatoes and mash them up.
  • Herbs: Fresh or dried herbs like thyme, rosemary, or a pinch of crushed red pepper can give it a new twist.

Substitutions

  • No Corn Flakes?:  Swap with panko breadcrumbs for a similar crispy texture. You can also use crushed Ritz crackers or plain breadcrumbs mixed with a little olive oil for added crunch.

  • Monterey Jack cheese
  • butter

  • 14 oz can black beans 
  • 8 soft taco-size flour tortillas
  • Olive oil

Spices & Seasonings:

  • Kosher salt
  • Black pepper

Substitutions and Variations

Substitutions

Sizzling Sheet Pan Chicken Fajita Quesadillas


serves 6-9


1 Tbsp. olive oil
1/2 large red onion, sliced
1 red bell pepper, cut into strips
2 cups cooked and shredded chicken breast
1/2 14oz can black beans, drained
2 tsp. chili powder
1 tsp. ground cumin
1/2 tsp. kosher salt
1/2 tsp. black pepper
1/4 cup chopped fresh cilantro
2 Tbsp. lime juice
2 Tablespoons butter, melted
8 soft taco size flour tortillas
2 cups shredded Monterey Jack cheese
Optional toppings: sour cream, salsa, guacamole


Preheat oven to 425°F.  In a large skillet heat oil over medium-high. Add onions and peppers. Cook 10 minutes or until tender and browned, stirring occasionally.  Add in the shredded chicken, black beans, and spices to the skillet.  Stir to combine and allow to heat 2-3 minutes.  Turn off the heat and add in the cilantro and lime juice.  Stir to combine.

On a half sheet baking pan, lightly brush the pan with some of the melted butter.  Arrange 6 of the tortillas around the edges of the pan, placing them so that hang halfway off the edges on all sides.  Place one in the center if needed to fill any gaps.  

Sprinkle 1 cup of cheese over the tortillas.  Evenly distribute the chicken filling mixture over the cheese.  Top with the remaining 1 cup of cheese over the chicken mixture.   Fold the parts of the tortillas that are hanging over the edge over to enclose the filling.  Place one final tortilla in the middle.  Brush the tops of the tortillas with the remaining melted butter.  Place another baking pan on top of the tortillas and press lightly to ensure contact with the top sheet pan.  

Bake 20 minutes.  Remove the top sheet pan and check for crispness.  If golden and crips remove from oven.  If you want crisper quesadillas, remove the top sheet pan and bake for another 3-4 minutes.  Allow to stand for 5 minutes.  Cut using a pizza cutter and serve with sour cream, salsa, and/or guacamole if using.

A collection of beef, chicken and turkey in an array of sandwiches, salads, bowls, and grilled dishes will make it easy to pick the perfect meal and get dinner on the table in a flash to leave you time to enjoy the sunsets.

Quick and Easy Bruschetta Chicken Casserole

Quick and Easy Bruschetta Chicken Casserole is filled with tender chunks of chicken, fresh ripe juicy tomatoes, garlic, basil, and gooey cheese.  The tastiest and easiest weeknight casserole around!

Quick and easy throw-together meals are my thing right now.  If it can't be on the table in 30-45 minutes I don't even want to attempt it.  With a new puppy I'm all about simple and easy, yet tasty ingredients that pack a punch!  My Quick and Easy Bruschetta Chicken Casserole is that and more.

Tender bite sized pieces of chicken are stir fried then layers in a casserole dish along with fresh ripe tomatoes, garlic, seasonings, mozzarella cheese to meld in the oven. This makes the most heavenly sauce when baked.  Then top it with fresh basil.  Just 7 ingredients!  This is easy enough for a weeknight meal and packs a ton of flavor.  My husband totally raved about this dish, ate 2nds the first night and then took it the next day for lunch.  I love when that happens!  This one is a keeper!

What Ingredients do I need?

  • chicken breasts (boneless, skinless)
  • Roma tomatoes - ripe ones
  • garlic cloves 
  • mozzarella cheese - buy a ball and grate it yourself for the best flavor
  • dried oregano
  • balsamic vinegar - you want a good quality one that has depth of flavor
  • fresh basil - fresh is best for the most flavor punch


Substitutions and Variations

  • Not tomato season? - buy Campari or cherry tomatoes that are ripe in the off season.
  • Meat variation - use chicken thighs or chicken tenders cubed. 
  • Ready-made suggestions -  Leftover sliced chicken or even rotisserie chicken sliced will work.  I would brown it in a skillet for just a minute or two to give it some more flavor.
  • Cheese - leave off the cheese or substitute Monterey Jack or a little sprinkling of Parmesan

Quick and Easy Bruschetta Chicken Casserole


serves 4


1 lb. chicken breasts, cut into bite-sized pieces
1 Tbsp olive oil
6 ripe Roma tomatoes, diced in medium chunks
3 garlic cloves, minced
1/3 - 1.2 cup shredded mozzarella cheese
1 tsp dried oregano
2 Tbsp balsamic vinegar
kosher salt and ground black pepper
fresh basil leaves, chopped




Preheat your oven to 375 degrees. In a large skillet, heat oil over medium-high heat. Add the chicken and season with sea salt and freshly ground black pepper. Stir fry the chicken, stirring often, until golden brown on the sides and almost cooked through.

Take an 8x8 baking/casserole dish and spray with cooking spray. Add the chicken to the dish. Top with tomatoes, oregano, and garlic. Stir to combine. Drizzle the balsamic vinegar over the mixture. Sprinkle with mozzarella cheese.
 
Bake in the oven uncovered for 15-20 minutes, until cheese is melted and sauce is bubbling. Garnish with fresh basil and serve.
