Easy Bacon Egg Sandwich + 10 Flavor Variations

There’s something about a bacon, egg, and cheese sandwich that just hits differently in the morning.

Maybe it’s the crispy, salty bacon. Or the soft, fluffy eggs layered with melty cheddar on warm, toasted bread. Or maybe it’s the fact that it feels a little indulgent—but still comes together in under 10 minutes, right in your own kitchen.

This easy bacon egg sandwich is the kind of recipe you make once… and then suddenly it becomes part of your weekly routine. It’s simple, satisfying, and endlessly customizable depending on what you’re craving (or what’s in your fridge).

And that’s where this recipe really shines.

We’re not just making a classic—we’re building a go-to breakfast sandwich formula you can switch up anytime. From creamy avocado and pesto to spicy chili crisp or a drizzle of hot honey, these flavor variations turn one simple sandwich into something you’ll never get bored of.

Golden toast, crispy bacon, soft eggs, and melty cheese—this is the breakfast sandwich you’ll crave on repeat.

Enjoy!

Ingredients

  • Thick-cut bacon - brings that rich, crispy texture that really makes this sandwich feel hearty and satisfying—regular bacon works, but thick-cut takes it to another level.
  • Eggs -  the heart of the sandwich, adding a soft, fluffy layer that balances out the crispiness of the bacon.
  • Whole grain bread - provides a sturdy base with a slightly nutty flavor, but sourdough, brioche, or English muffins all work beautifully depending on the texture you love.
  • Cheddar cheese -  melts beautifully into the warm eggs, adding a sharp, savory richness that ties everything together.
  • Salt and pepper -  enhance all the flavors and should be added to taste, especially to season the eggs just right.
  • Butter or nonstick spray -  helps cook the eggs gently and prevents sticking, while adding a subtle richness to the final sandwich.

Equipment You’ll Need

A good nonstick skillet makes all the difference when cooking eggs low and slow—it helps prevent sticking and gives you that soft, fluffy texture without overcooking every time.

A sturdy rubber spatula is essential for gently scrambling the eggs and keeping them tender rather than breaking them up too much.

A toaster or skillet works for toasting the bread—using a skillet adds extra flavor, especially if you toast it after cooking the bacon.

A small mixing bowl is perfect for whisking the egg quickly and evenly before cooking.

A mini whisk or fork helps incorporate air into the eggs, which gives them that light, fluffy texture.

If you want to elevate your sandwich even more:

A cast iron skillet is great for cooking bacon evenly and adds a deeper, richer flavor over time.

A sandwich press or panini press can crisp the outside of the sandwich and melt the cheese perfectly for a more café-style finish.

-- Let’s Make It Together

Start by cooking your thick-cut bacon in a skillet over medium heat until it’s perfectly crispy and golden. Transfer it to a paper towel-lined plate and set aside.

In a small bowl, whisk the egg with a splash of water until fully combined—this helps create that soft, fluffy texture. Heat a nonstick skillet over medium-low heat and add a little butter or spray. Pour in the egg and gently scramble, moving it slowly around the pan until just set. Remove from heat while it’s still soft.

Toast your bread until warm and golden.

Now for the best part—building your sandwich. Place the cheddar cheese on the bottom slice of toast so it starts to melt from the heat. Add the scrambled eggs and season lightly with salt and pepper. Layer on the crispy bacon, then spread your favorite topping on the top slice of bread before placing it on top.

Slice, serve, and enjoy immediately while everything is warm and melty.

-- Perfecting the Cooking Process

The key to a truly great bacon egg sandwich is cooking the eggs low and slow—this keeps them soft, creamy, and fluffy instead of dry. Pull them off the heat just before they’re fully set, and they’ll finish cooking from residual heat while staying perfectly tender. For even more flavor, toast your bread in the same skillet after cooking the bacon.

-- Add Your Touch (10 Flavor Variations)

Once you’ve mastered the classic version, this sandwich becomes your playground. Whether you’re craving something creamy, spicy, fresh, or a little sweet, these easy variations keep things interesting without adding extra effort.

You can also swap the bacon for sausage, turkey bacon, or a plant-based option to fit your preference.

1. Avocado + Everything Bagel
Add smashed avocado and a sprinkle of everything bagel seasoning for a fresh, creamy upgrade.

2. Hot Honey Bacon
Drizzle hot honey over the bacon for that irresistible sweet and spicy combo.

3. Pesto + Tomato
Spread pesto on the bread and add a slice of fresh tomato for a bright, herby twist.

4. Spicy Sriracha Mayo
Mix mayo with sriracha and spread it on the top slice for a creamy kick of heat.

5. Garlic Aioli Deluxe
Swap in garlic aioli and add a handful of arugula for a slightly elevated, café-style feel.

6. Cream Cheese + Chives
Spread cream cheese on the bread and finish with fresh chives for a rich, savory variation.

7. Chili Crisp Crunch
Add a spoonful of chili crisp for heat, texture, and a bold, slightly smoky flavor.

8. Maple Bacon Breakfast
Brush the bacon lightly with maple syrup while it cooks for a sweet, caramelized finish.

9. Pepper Jack + Jalapeño
Use pepper jack cheese and add sliced jalapeños for a spicy, melty version.

10. Fig Jam + Cheddar
Spread fig jam on the bread for a sweet and savory combo that pairs perfectly with sharp cheddar and bacon.

Crispy Smash Burgers with American Cheese (Easy Cast Iron Recipe)

Crispy smash burgers with melty American cheese made in a hot cast iron skillet. These juicy burgers with crispy edges are quick, easy, and better than a restaurant burger.

Crispy Smash Burgers with American Cheese (Easy Cast Iron Recipe)

Every once in a while I make a dish that instantly becomes the new favorite, and these crispy smash burgers are the latest. After one bite, my husband declared them “better than a restaurant burger,” which is about the highest praise a homemade burger can get around here.

What makes smash burgers so special is how you cook them. The beef hits a blazing hot cast iron skillet, gets pressed thin, and forms those irresistible crispy, caramelized edges while the center remains juicy and flavorful. Add a slice of melty American cheese and stack the patties on a soft bun with your favorite toppings, and you’ve got a burger that tastes like it came straight from a diner.

The best part? They come together in just minutes and use simple ingredients you probably already have on hand. Once you try them, there’s a good chance they’ll become your new favorite burger too.

Enjoy!

Ingredients

This recipe keeps things simple and classic so the flavor of the beef really shines.

Ground Beef – I like using 85/15 for the perfect balance of flavor and juiciness.

Kosher Salt & Freshly Ground Black Pepper – Simple seasoning that lets the beef develop that signature smash burger flavor.

American Cheese – The classic choice for smash burgers because it melts beautifully and creates that creamy, diner-style finish.

Hamburger Buns – Soft buns work best since the crispy patties are thin and stack nicely.

Optional Toppings – Mayonnaise, mustard, ketchup, lettuce, pickles, sliced tomatoes, and onions are all great choices depending on how you like your burger dressed.

  Equipment

Cast Iron Skillet - crucial for obtaining those crispy edges that this burger is famous for.  This is one of my most cherished skillets.

-- Let’s Make It Together

Start by dividing the ground beef into eight small portions. Very loosely form each portion into a ball—don’t pack the meat tightly or the burgers will lose that tender texture.

Heat a cast iron skillet or griddle over high heat until it’s very hot. Place the beef balls onto the skillet and immediately use a sturdy spatula or bench scraper to smash them down as thin as possible.

Season the patties with salt and pepper and cook for about one minute, until the edges start to brown and crisp.

Flip the patties, season the second side, then place a slice of American cheese on top. Let the patties cook another 30–60 seconds, just until the cheese melts.

Stack two patties per bun, add your favorite toppings, and serve immediately.

-- Perfecting the Cooking Process

The secret to perfect smash burgers is high heat and pressing the patties immediately after they hit the skillet.  This creates maximum contact with the hot surface, which is what forms those irresistible crispy, caramelized edges while the inside stays juicy. Resist the urge to press the burgers again after flipping—doing so can squeeze out the flavorful juices. (Remember, a cast iron skillet creates the best crust!)

-- Add Your Touch

One of the best things about smash burgers is how easy they are to customize.

Try adding crispy bacon, sautéed onions, or sliced avocado for extra flavor. A swipe of burger sauce or garlic aioli can take things up a notch, while shredded lettuce and pickles add a nice crunch.

You can also toast the buns lightly in the skillet for a little extra texture. However you dress them up, these burgers are incredibly versatile and easy to make your own.

Before You Start

Do I need a cast iron skillet?
Cast iron works best because it holds high heat well, but a heavy stainless steel skillet or flat griddle will also work.

Why are smash burgers so thin?
Pressing the burgers thin increases surface contact with the hot pan, which creates the crispy edges that make smash burgers famous.

Can I make these ahead of time?
Smash burgers are best cooked and served immediately since they cook very quickly and taste best fresh off the skillet.

What’s the best beef for smash burgers?
Ground beef with a little fat—around 80/20 or 85/15—creates the juiciest burgers and helps develop that crispy crust.

Fresh Asparagus Salad with Oranges & Feta (Bright Spring Side Dish)

Fresh asparagus salad with oranges and feta is a bright, flavorful spring side dish. Crisp asparagus, sweet citrus, and creamy feta come together in a simple, refreshing salad.

Fresh Asparagus Salad with Oranges & Feta (Bright Spring Side Dish)

This asparagus salad with oranges and feta is one of those recipes that feels especially welcome when spring produce starts appearing again. The fresh asparagus brings a crisp, vibrant flavor while sweet orange segments and creamy feta add just the right balance of brightness and richness.

I originally shared this salad a while back, but every spring when asparagus is in season I find myself coming back to it again. It’s simple, colorful, and perfect alongside grilled chicken, seafood, or even as part of a light lunch.

Enjoy!

Ingredients

This salad keeps things fresh and simple, letting the natural flavors of the ingredients shine.

Fresh Asparagus
Crisp and vibrant, asparagus is the star of this salad and gives it a true springtime feel.

Orange Segments
Sweet citrus adds brightness and a refreshing contrast to the savory elements.

Feta Cheese
Creamy, tangy feta balances the sweetness of the oranges beautifully.

Olive Oil
A light drizzle helps bring all the flavors together.

Fresh Herbs
A sprinkle of herbs adds freshness and color.

Salt and Pepper
Just enough seasoning to enhance the natural flavors.

(Exact measurements are listed in the recipe card below.)

-- Let’s Make It Together

Start by preparing the asparagus. Trim the tough ends and cut the spears into bite-sized pieces.

Bring a small pot of water to a boil and blanch the asparagus briefly until it turns bright green and just tender. Transfer it to cold water to stop the cooking and keep the color vibrant. Drain well.

Arrange the asparagus in a serving bowl or platter and add the orange segments. Sprinkle the feta over the top.

Drizzle lightly with olive oil and season with salt and pepper. Finish with a scattering of fresh herbs and gently toss or serve as arranged.

-- Perfecting the Cooking Process

The key to this salad is treating the asparagus gently so it stays bright, tender, and fresh tasting. A quick blanch—just a minute or two in boiling water—softens the asparagus slightly while keeping its natural crispness and vibrant green color. Immediately transferring it to cold water stops the cooking process and locks in that fresh texture. This simple step keeps the asparagus from becoming dull or mushy and helps the salad look as beautiful as it tastes.

-- Add Your Touch

This salad is easy to customize depending on what you have on hand.

Try adding toasted almonds or pistachios for a little crunch, or a handful of baby spinach or arugula for extra greens.

If you enjoy a slightly sharper flavor, a splash of lemon juice or a light vinaigrette can brighten the salad even more.

For a heartier version, this salad pairs beautifully with grilled chicken, shrimp, or salmon.

If you enjoy fresh, vibrant dishes like this Asparagus Salad with Oranges & Feta, there are plenty of other bright and flavorful recipes to explore here on the blog. Spring is the perfect time to bring lighter meals to the table, and simple ingredients often create the most memorable flavors.

Before You Start

Can I make this salad ahead of time?
Yes. You can prepare the asparagus and orange segments ahead of time and assemble the salad shortly before serving.

Do I have to blanch the asparagus?
Blanching softens the asparagus slightly while keeping it vibrant and crisp, but very thin asparagus can be used raw if you prefer.

What type of oranges work best?
Navel oranges or Cara Cara oranges are both excellent choices for their sweetness and color.

How should leftovers be stored?
Store the salad in an airtight container in the refrigerator for up to one day. For best texture, add the feta just before serving.

Slow Cooker Chicken Tortilla Soup (Bold Flavor, Easy Prep)

This slow cooker chicken tortilla soup is bold, cozy, and easy to make with simple ingredients and hands-off cooking. Perfect for chilly days when you want big flavor without extra work.

Slow Cooker Chicken Tortilla Soup (Bold Flavor, Easy Prep)

Lately here in California, the weather can’t seem to make up its mind. One day it feels like spring — sunny skies, open windows, and afternoon walks — and the next, it’s cold, gray, and pouring rain like winter never left.

And on those dreary, rainy days, all I want is something warm, comforting, and waiting for me at dinnertime.

That’s exactly why this slow cooker chicken tortilla soup has become one of my favorites.

It’s the kind of recipe you can throw together in the morning, let simmer quietly all day, and come back to later when the house smells amazing and dinner is basically done. Almost hands-off cooking — but with a big, bold payoff.

Between the fire-roasted tomatoes, warm spices, tender chicken, and cozy broth, every spoonful is full of flavor. Add a handful of crispy tortilla strips and your favorite toppings, and suddenly it feels like you put in way more effort than you actually did.

If you love comfort food that doesn’t require standing over the stove, this soup is for you.

Ingredients

This soup is made with simple pantry staples, but when they come together, the flavor is anything but basic.

Each ingredient plays a role in building a rich, comforting broth that tastes like it simmered all day — because it did.

  • Chicken Breasts - Lean, tender, and perfect for slow cooking until they fall apart.
  • Onion & Garlic - The flavor base that gives the soup depth and warmth.
  • Black Beans - Add heartiness and extra protein.
  • Fire-Roasted Tomatoes - Bring a subtle smoky flavor that makes the broth taste richer.
  • Fresh Cilantro - Adds brightness and freshness
  • Chili Powder & Cumin - Create that classic tortilla soup warmth.
  • Chicken Broth - Forms the base of the soup and carries all the flavors.
  • Bell Peppers & Corn - Add color, texture, and natural sweetness.
  • Corn Tortillas & Oil - Used for crispy homemade tortilla strips — optional, but delicious.
  • Optional Toppings - Cheese, avocado, sour cream, and lime take this soup to the next level.

-- Let’s Make It Together

This is one of those recipes that feels almost too easy for how good it turns out.

Start by laying the chicken breasts in an even layer in the bottom of your slow cooker.

Scatter the chopped onion, garlic, black beans, tomatoes, cilantro, chili powder, cumin, and salt over the top. Pour in the chicken broth, making sure everything is mostly covered.

Cover and cook on low for 6 hours, until the chicken is tender and easy to shred.

During the last hour of cooking, stir in the chopped bell peppers and frozen corn. This keeps them colorful and slightly crisp instead of mushy.

Once the chicken is fully cooked, shred it directly in the slow cooker using two forks. Turn the heat to warm and let everything come together.

While the soup finishes, heat oil in a skillet and quickly fry the tortilla strips until golden and crispy. Drain on paper towels and season lightly with salt.

Ladle the soup into bowls, top with tortilla strips and your favorite toppings, and serve with lime wedges on the side.

-- Perfecting the Cooking Process

The key to bold flavor in this soup is letting the spices and tomatoes cook slowly with the chicken from the very beginning. Adding everything at once allows the broth to fully absorb the chili powder, cumin, and fire-roasted tomatoes, creating a deeper, more developed taste than if they were added later. This long, gentle simmer is what gives the soup its rich, comforting flavor without any extra effort.

-- Add Your Touch

This soup is easy to customize based on what you love.

If you like heat, add diced jalapeño or a pinch of cayenne. For extra richness, swirl in a little sour cream before serving. You can also use rotisserie chicken if you’re short on time — just add it during the last hour.

Sometimes I’ll set out a small topping bar and let everyone build their own bowl. It makes dinner feel special with very little extra work.
