Lately I’ve been on a bit of an Italian cooking journey in my kitchen — slowing down, using simple ingredients, and letting those classic flavors really shine. Some recipes are comforting, some are impressive, and then every once in a while you make something that feels like both.

This Roasted Tomato Bruschetta with Whipped Goat & Ricotta was one of those recipes for me.

I’ve actually been making this whipped ricotta and goat cheese mixture constantly lately because it’s just that good. Creamy, tangy, rich, and incredibly versatile — it instantly makes simple ingredients feel elevated. The second I paired it with these warm roasted tomatoes and crispy toasted bread, I knew I had to share it with you.

The sweet burst tomatoes, creamy whipped cheese, crispy toasted bread, and all those savory juices soaking into every bite… it immediately felt like something I’d order at a cozy little wine bar and then think about for days afterward. After the first bite, I knew it was one I had to share with you.

It’s simple enough for a casual lunch, beautiful enough for entertaining, and honestly one of those recipes that makes ordinary ingredients taste incredibly special.

Ingredients

  • Cherry or grape tomatoes
  • Olive oil
  • Salt & Black pepper
  • Goat cheese
  • Ricotta cheese
  • Thick sliced Multi-grain bread - or any rustic Italian bread or sliced baguette will work.

Preheat your oven to 400°F.

Add the tomatoes to an oven-safe baking dish and drizzle with olive oil. Season with salt and black pepper, then toss to coat. Roast for 15–20 minutes, or until the tomatoes are blistered and beginning to burst.

While the tomatoes roast, whisk together the goat cheese and ricotta until smooth and creamy.

Heat a skillet over medium-high heat. Drizzle the bread slices with olive oil and toast until golden on both sides.

To assemble, spread the whipped cheese mixture onto the toasted bread and spoon the warm roasted tomatoes and juices over the top.

Serve immediately and enjoy warm.

I love watching the big game and look forward to it every year, but I also think that game day food should be easy, a little indulgent, and something you can pull off without missing to much of the action.  These mini sheet pan chicken tostadas are a perfect fit.  They’re crispy, cheesy, and endlessly snackable, making them perfect for eating during halftime.

What I love most about this recipe is how effortless it is and it can easily be doubled for a larger crowd. Using rotisserie chicken and canned refried beans keeps prep minimal, while baking everything on one sheet pan means less mess and less stress when you’re hosting. You can prep the toppings ahead of time, pop the tostadas in the oven, and have a warm, crowd-pleasing appetizer ready in minutes.

Every winter, there’s always that moment when you realize you need one more appetizer. Friends popping by, small get-togethers, and even impromptu gatherings.  I don't want to make something complicated or time-consuming—just a little something that feels special, looks beautiful on a platter, and makes it seem like you planned ahead.

That’s where these winter crostini come in.

It's layered with creamy goat cheese, jewel-toned cranberry preserves, and a sprinkle of chopped pistachios.  Each bite tastes tangy, sweet, and crunchy and the colors alone just feel perfect for the season—a deep red, soft white, and a pop of green—making them as eye-catching.  

Crostini are also one of my favorite hosting shortcuts. Toast the bread, spread, spoon, sprinkle—and suddenly you have an appetizer that works just as well for a cozy winter gathering as it does for a festive evening with friends. They’re simple enough for a last-minute addition, but elegant enough to hold their own on a cheese board or appetizer spread.  Another great one to try would be my Plum and Mascarpone Crostini.

Fig season is fleeting, but oh, what a delicious few weeks it is. Over the past two weeks, I’ve shared my Late Summer Fig Salad with Cucumbers & Feta for a light, savory bite and Rustic Fig & Banana Bread – A Freshly Picked Delight for cozy, sweet mornings. Now, with our backyard fig crop about two-thirds harvested, I’ve been picking 8–10 figs each day, sharing the bounty with friends and family—and savoring them in every way possible.

The best way to enjoy these jewel-like fruits? Sometimes, you don’t need to cook at all—just take a bite. And that’s exactly the idea behind today’s recipe: Backyard Fig Harvest Crostini – Sweet, Creamy & Irresistible. Crispy baguette slices, creamy mascarpone and ricotta, a touch of fig jam, and fresh figs on top create a simple, elegant bite that’s perfect for sharing before the short season slips away.
