Roasted Tomato & Spinach Artichoke Crostini


These Roasted Tomato Spinach Artichoke Crostini are topped with creamy Alouette Spinach & Artichoke Cheese, blistered tomatoes, basil, and lemon zest for an easy appetizer that feels effortlessly elevated.



Roasted Tomato Spinach Artichoke Crostini


As promised from my “5 Delicious Ways I’m Using Alouette Spinach & Artichoke Cheese” roundup post—here’s the very first full recipe in the series, and honestly, it might be one of my favorites. Over the next several Tuesdays, I’ll be sharing the remaining recipes one by one, but this roasted tomato crostini felt like the perfect place to start.

The creamy spinach artichoke cheese spread melts slightly into the warm grilled sourdough while the roasted tomatoes turn sweet, soft, and almost jammy in the oven. Finished with fresh basil and bright lemon zest, every bite hits that perfect balance of creamy, crispy, savory, and fresh. It tastes like something you’d order at a cozy Mediterranean wine bar, yet it comes together with surprisingly little effort.

This is the kind of appetizer that instantly makes a gathering feel a little more special without creating extra work in the kitchen. Set the crostini out with a glass of wine, a simple salad, or part of a relaxed grazing board and suddenly the whole evening feels effortlessly put together.

The fresh basil and lemon zest at the end completely wake everything up and make the whole platter taste bright, savory, and fresh.









Ingredients

  • Mini Sourdough Boule - The chewy texture and crisp edges make the perfect base for crostini. Grilling the bread adds even more flavor and texture.

Let’s Make It Together

Start by roasting the cherry tomatoes with olive oil, garlic, salt, and pepper until they become soft and blistered.

While the tomatoes roast, grill the sourdough slices in a hot grill pan brushed lightly with olive oil until golden with crisp edges.

Spread a generous layer of Alouette Spinach & Artichoke Cheese onto the warm crostini, then spoon the roasted tomatoes and their juices over the top.

Finish with torn basil and fresh lemon zest before serving.




Perfecting the Cooking Process

The key to this recipe is roasting the tomatoes until they blister. Blistering happens when the heat causes the tomato skins to wrinkle and split slightly while the inside becomes soft, juicy, and concentrated in flavor. Before You Start


Can I make these ahead of time?  
You can roast the tomatoes ahead of time, but assemble the crostini just before serving so the bread stays crisp.

What bread works best?  
Sourdough, or any rustic artisan loaf with structure works well.

Can I serve this cold?  
It’s best slightly warm or at room temperature.

Do I have to grill the bread?  
No—toast it in the oven if preferred, but the grill pan adds great texture and flavor.

Simple Breakfasts: Avocado Egg Toast

A 5 minute recipe that boasts to be the near-perfect breakfast!




Avocado Egg Toast


Don't you just love avocado toast?  We just love avocados any way we can get them but especially love them on toast.  Today we are going to add a little "oomph" by adding a protein-rich egg.   You'll get more nutrients and stay satisfied longer with this avocado egg combination.  It's a quick meal that you can be happy about waking up to.

Did I mention that this is a 5 minute recipe?  These are perfect for busy weekends and really can be served anytime of day.  We'll jazz up some mashed avocado with a little spice, place that on toasted  sourdough, top it with an egg, and finish it with some scallions and a drizzle of Sriracha.  This is truly a delicious meal! 

Now my husband LOVES sunny side up eggs.  Me? not so much so I would opt for scrambled.  But however you enjoy your eggs it's work with this dish.  Even hard boiled cut into slices would work.  This is all about the combination of flavors and the extra protein you get in every bite.  This is a breakfast winner you'll want to have in your back pocket to up the anti on a quick meal.

What Ingredients do I need?

  • avocado - choose a ripe one
  • egg
  • sourdough bread
  • garlic powder
  • black pepper
  • Sriracha
  • scallions (green onions)


Substitutions and Variations

  • Bread:  Use multigrain or country Italian.  Just make sure the bread is large enough to hold the egg.
  • Eggs:  Try scrambled or over easy eggs.  Even hard boiled (sliced) will work.
  • Garnish:  Try your favorite hot sauce on top such as harissa, Cholula, or a little Calabrian Chili sauce.
  • Add other seasonings:  Skip the hot sauce and sprinkle on a dash of everything bagel seasoning, za'atar, or even herbes de Provence. 



Kitchen Tips and Notes

  • Bread: Choose a thick bread that will hold up to toppings. Try a  multigrain or whole-wheat bread which will add an additional layer of flavor along with fiber to your avocado toast.
  • Avocado:  Use a ripe avocado, one that gives to slight pressure but doesn't feel mushy. Some small blemishes in the flesh are OK; just remove them before mashing.
  • Saving leftover avocado:  You’ll only need 1/4 of an avocado for this recipe, so you’ll need to save the rest. The best way to do this is to leave as much of the remaining avocado intact as possible. That means leaving the skin and pit attached to the remaining piece of avocado before covering it with plastic wrap and refrigerating. Make sure the plastic wrap is directly touching the flesh to prevent exposure to oxygen, and browning.

Avocado Egg Toast


1 serving


¼ avocado
¼ teaspoon ground pepper
⅛ teaspoon garlic powder
1 slice sourdough bread, toasted
1 large egg, fried sunny side up
drizzle of Sriracha
1 tablespoon scallion, sliced

Halve an avocado. Cut the one half of the avocado in half lengthwise and remove the peel, placing the flesh in a small bowl. Add in the pepper and garlic powder and mash the avocado and mix with the seasonings.

Add nonstick cooking spray or extra-virgin olive oil to a small nonstick pan. Heat over medium low heat. Once the pan is hot, crack the egg and add it to the skillet. Cook, undisturbed, until the whites are set and the edges are crispy, about 3 minutes. Once it’s ready, move the skillet off the heat.

Place the avocado mash onto the toast, top with the egg, and garnish with the Sriracha and scallion. Serve.

30 Minute Meal: Italian Chicken Cutlet Paninis

Crunchy chicken cutlets surrounded by juicy tomatoes and gooey mozzarella are doused with a basil mayo and tucked into toasted sourdough bread.  I call this panini heaven!



 

Italian Chicken Cutlet Paninis


This heatwave is never going to end!  What do you do when it's too hot to grill, but you still need to feed the crew a nutritious and scrumptious dinner?  Make paninis!  Right now I'm all for keeping my dinners light and simple.  I don't want to heat up the house by cooking all evening.  That's why this sandwich fits the bill.  It takes just 30 minutes, one skillet, and a few ingredients to pull together but, the flavor is out of this world.  

These Italian Chicken Cutlet Paninis are made with chicken breasts that have been cut in half horizontally and pounded thinly.  You could also used thin sliced chicken breasts from the store but I find even those are really thick these days.  Either will do, but I would still pound them to about 1/3 inch thickness.  Then we bread them and cook them in a skillet until crispy.  The only thing left to do is build your sandwich, smear on some of this wonderful quick-made basil mayo throw the whole sandwich back in the skillet to melt the cheese and create a toasted panini.  No panini press needed!  The result is a very flavorful meal that took no time to make and very little cleanup.  I a one pan meal that is done in 30 minutes and requires only 8 ingredients.  Gotta love that in the summertime.

What Ingredients do I need?

  • boneless skinless chicken breasts - I used breasts and cut them in half horizontally to make cutlets.  You can also buy thin sliced chicken breasts.
  • mayo
  • fresh basil - fresh will give you a great flavor.  I don't recommend dried basil.
  • eggs
  • plain breadcrumbs - you could also used Italian style or panko.
  • sourdough bread - this provides great flavor.
  • tomatoes
  • fresh mozzarella - I use the ball of mozzarella that comes in a package with water.

Substitutions and Variations

  • Bread:  Use your favorite.  Keep in mind you want them large enough to cover a chicken breast.
  • Add some greens:  Spinach or romaine would be a good addition.
  • Change the flavor profile:  This is an Italian sandwich, try Southwestern by swapping chili powder for the basil, jack cheese for the mozzarella and sauteed bell peppers for the tomato.



Kitchen Tips and Notes

  • Bread Choices:  Make sure your bread is large enough to cover the chicken breast.
  • Toast the bread after the sandwich is assembled (like making a grilled cheese) in a skillet and use a lid so the cheese melts)
  • Pound your chicken breasts to about 1/3 inch thin.  This allows them to cook quickly and evenly.

Italian Chicken Cutlet Paninis


serves 4



2 boneless skinless chicken breast halves, cut in half horizontally to make 4 cutlets
1/3 cup mayo
1/3 cup chopped fresh basil
2 eggs, lightly beaten
3/4 cup plain breadcrumbs
1/4 teaspoon salt
2 Tablespoon olive oil
8 slices of sourdough bread
2 tomatoes sliced
8 slices of fresh mozzarella

Place cut chicken breast between 2 sheets of plastic wrap. Pound to 1/3 inch thickness using a meat mallet or rolling pin. Repeat for the remaining chicken. Set aside.

In a small bowl mix together the basil and mayo. Set aside. Set up your breading station by using two pie plates or breading dishes. Add the beaten eggs to one and the breadcrumbs to the other.

Sprinkle chicken breasts with salt. Dip each breast in the egg mixture then coat with the breadcrumbs. Over medium heat place a large skillet adding the olive oil, allowing to heat. Add cutlets (may need to cook in batches depending on the skillet size) to the skillet and cook about 4 minutes per side. Breadcrumbs should be golden brown. Flip and cook the other side ensuring chicken is cooked all the way through. Repeat with the remaining breasts if necessary.

Spread one side of each slice of bread with the basil mayo. Top 4 of them (mayo side up) with tomatoes, chicken, and cheese. Top with the other 4 bread slices mayo side down to close the sandwich.

Add cooking spray to the same skillet and add the sandwiches back to the skillet and cover with a lid. Cook flipping once until lightly browned and the cheese has melted. Cut sandwiches in half and serve.
