My Go-To's:

  • I couldn't live without my muffin pan!  If you want tall domes then have a 12 cup muffing pan is a must so they can spread out without touching.  This is a very sturdy pan and does a great job and gives you even baking.

Start by mashing your ripe bananas and measuring out exactly 1 cup. Add the eggs, vanilla, and canola oil and give everything a good stir.

Add the flour, sugar, baking soda, baking powder, cinnamon, and salt, then stir just until the flour disappears. Don't worry about making the batter perfectly smooth—overmixing is not your friend here.

Now comes one of my favorite little tricks: let the batter rest for 15 minutes while the oven preheats. Then scoop the batter generously into six muffin wells, filling them right to the top.

The muffins get a quick blast at 425°F before the oven temperature comes down to 350°F. That hot start gives them the boost they need to rise up into those beautiful tall domes.

Yes. You can either grease the six muffin wells or use paper liners.

Every summer, we patiently wait for our fig tree to start producing its little treasures. Sometime around late July into August, the figs begin to ripen, and suddenly I'm making my way into the backyard with a basket, checking for the ones that are perfectly soft and ready to pick.

The funny thing is, I have a hard time keeping enough figs around to actually cook with because my husband eats them almost as fast as I can pick them! But every year, I manage to save enough to make a few of my favorite fig dishes, and I always come back to some version of crostini.

There's just something unique and special about fresh figs piled onto crisp toasted bread that works any time of day. We've enjoyed them for breakfast, a light lunch, and as an appetizer when we're entertaining. This version pairs the figs with a creamy ricotta and mascarpone mixture seasoned with cinnamon, cardamom, and vanilla bean powder, then finishes everything with honey, pistachios, and a sprinkle of flaky sea salt.

Fresh figs have such a short window, which is part of what makes them special. When you start seeing them at farmers' markets, grocery stores, or on the trees in late summer, grab them while you can.
