Kung Pao Chicken has always been a favorite for something bold, spicy, and satisfyingly saucy. But with a busy week ahead, I was curious—could a store-bought sauce ever rival a homemade version?  That’s when I grabbed Kevin’s Natural Foods Kung Pao Sauce—a gluten-free, paleo-friendly option that promised authentic flavor in minutes.



Kevin’s Kung Pao Sauce – Worth the Hype?

I’ll admit, I was skeptical—Kung Pao is one of those dishes where the sauce makes the meal, and I wasn’t sure a bottled version could deliver. But Kevin’s Kung Pao Sauce completely surprised me. The flavor is bold and spicy, hitting all the right notes of a good homemade version—savory, slightly sweet, and packing just enough heat. The texture starts off thin and glossy straight out of the pouch but thickens beautifully when heated in the pan, clinging to the chicken and veggies like it’s supposed to. What really impressed me, though, were the ingredients: it’s paleo-friendly, gluten-free, and contains no refined sugar—just clean, natural goodness. From a convenience standpoint, it’s a total win. I saved a ton of time without sacrificing flavor, and for busy weeknights, that’s gold. I found it on Amazon in a pack of three, and honestly, it’s well worth the price. Final verdict? Absolutely worth it—and now I’m eyeing the rest of Kevin’s sauce lineup for my next shortcut dinner.

My version of Kung Pao Chicken is loaded with crisp-tender veggies, golden chicken, and crunchy cashews—all in under 30 minutes. It’s saucy, spicy, and satisfying without being heavy, and the mix of textures makes every bite a little different (in the best way).  This is the easy, flavor-packed weeknight dinner that everyone needs.

One of the best things about stir-fry recipes like this is how flexible they are. Whether you’re working with what’s in your fridge or adjusting for dietary needs, here are some easy swaps that still deliver great results:

Lettuce Wraps

Lettuce Wraps are a family favorite! Let me show you how easy they are to make at home!

The first time I tried Lettuce Wraps was at PF Chang's.  Remember those?  Well I haven't been to one in many years and yet I still love lettuce wraps.  So I make them at home.  They are SO EASY to make, you'll wonder why you didn't try this before now.

Crisp cups of butter lettuce is filled with ground turkey (you can use chicken or pork), fresh vegetables, and an Asian sauce that will bring all the flavors together and knock your socks off!  Did I mention you can make this dish in under 30 minutes?  Perfect for a quick weeknight meal when you don't want to fuss and want dinner on the table in a flash.  This is one dish the whole family will be asking for more.

What Ingredients do I need?

  • Butter lettuce or Boston Bibb lettuce - these are shaped with cupped leaves
  • Shredded Carrots
  • Shredded Cabbage (optional) - note: I couldn't find mine so my pictures do not include the cabbage, but I recommend it for a little crunch and color.

  • Cilantro - fresh
  • Cashews or peanuts
  • Ground turkey
  • Hoisin sauce
  • Lite soy sauce
  • Limes
  • Chili garlic sauce
  • Ginger - fresh minced or paste
  • Garlic cloves - fresh



Substitutions and Variations

  • Meat:  Use ground chicken or pork or go vegetarian with tofu
  • Vegetables:  Add sliced green onions, mushrooms, cucumbers, or bell peppers
  • Nuts: These add nice crunch but if you are allergic then leave them out
  • Toppings:  Fried wontons or crunchy fried chow mein noodles add nice crunch.




Kitchen Tips and Notes

  • Leftovers?  Store the chicken and the lettuce separately in airtight containers in the fridge for up to 4 days.
  • Freezer Friendly:  The chicken mixture can be made, cooled, and then placed in a freezer bag or container for up to 2 months.  Thaw in the refrigerator before heating.
  • Reheat: I would add a smidge of water or chicken broth to the mixture and then reheat in a skillet over medium heat.

Lettuce Wraps

serves 4

Sauce:

1/4 cup hoisin sauce
2 Tablespoons lite soy sauce
2 Tablespoons lime juice
1 Tablespoon chili garlic sauce
1 teaspoon ginger, minced or paste
1 clove garlic, minced

Wraps:

1 lb. ground turkey
1 Tablespoon canola oil
1 large head Butter or Bibb lettuce
1 pkg of shredded carrots
1 pkg of shredded red cabbage
1/2 cup cilantro, chopped
1/3 cup cashew halves

In a small bowl whisk together the hoisin sauce, soy sauce, lime juice, chili garlic sauce, ginger, and garlic.  Set aside.

In a large skillet over medium high heat add canola oil.  When heated add the ground turkey and cook 5 - 7 minutes breaking up in to small pieces.  When fully cooked add the sauce and stir to coat all the meat.  

On a platter place the individual lettuce leaves.  Spoon on the turkey into the center of each leaf.  Top with a sprinkling of carrots, cabbage, cilantro, and cashews.  Serve.

QUICK AND EASY CHINESE CHICKEN SALAD WRAPS

This wrap has it all.  It's is crunchy, wholesome, and zesty.  Plus it's portable, and damn tasty too!  Who doesn't love all the flavors of a good Chinese Chicken Salad, and now you can have a healthy, hearty meal in wrap form!  By using pre-cooked chicken or rotisserie chicken you can have this made in under 30 minutes.  And if you buy pre-chopped veggies you'll be done before you can blink!

Chinese Chicken Salad happens to be one of my favorites, so when I saw this recipe over on Carlsbad Cravings I knew I had to make my version of this dish.

Lunch is an important meal in our household.  MGG takes a packed lunch to work everyday and on the weekend we like to go on picnics, or eat outside, alfresco!  This is the perfect little sandwich in a wrap that I can think of!  Of course, many different salad types will work in this recipe, however, why not try the pop of flavors, and textures in this one?

Quick and Easy Chinese Chicken Salad Wraps
Adapted from Carlsbad Cravings

serves 3


3 Flatout Flatbreads 
1 1/4 cup shredded cooked chicken breasts
1 1/2 cup shredded red cabbage
1/2 cup shredded carrots
1/2 cup Snow peas, julienned
1/2 cup red bell pepper, julienned

Dressing
1 1/2 Tbls.seasoned rice vinegar
1 Tbls. canola oil
1 1/2 Tbls. low sodium soy sauce
1/4 tsp sriracha
1/4 tsp salt
1/4 tsp ginger
1/4 tsp garlic powder
1/8 teaspoon pepper

Chili Mayo
1/4 cup lite mayonnaise
1 tsp Sriracha

Add all of the Dressing ingredients in a medium bowl and whisk to combine.

Add chicken and all of the vegetables to the dressing and toss until evenly coated.

In a small bowl whisk the Chili Mayo ingredients together. Spread the entire surface of each Flatbread with approximately 1 tablespoon of spread.

Evenly divide the chicken and veggie filling and place down the middle of each flatbreads. Tightly roll up flatbreads and slice in half.

Chicken Teriyaki Stir Fry and a Product Review

You know how much I love my stir frys.  Some of my favorites are my Chicken, Green Bean & Mushroom Stir Fry , Chicken, Brussels Sprouts & Noodle Stir Fry, and my Cashew Chicken.  And those are just the chicken ones!

So imagine my delight when I was browsing the fresh vegetable section in the grocery store the other day and I came across a Stir Fry Kit from Taylor Farms.  Yes! Jackpot!  This was a stir fry kit with all the veggies, chopped, and washed and ready to go, along with a sauce as well!  Now this is fresh cooking, convenience style.  They did most of the work for you so that you can take a 20 minutes stir fry and turn it into 10-15 be skipping all the chopping and sauce mixing steps.  Now that's a good deal!

You may have heard of Taylor Farms.  They are the ones that have those wonderful chopped salad mixes in bagged salad section.  Well they now have a line of stir frys.  I think there was 4 flavors to choose from but I gravitated immediately toward the Teriyaki Stir Fry Kit.

The kit includes broccoli, Brussels sprouts, kale, carrots, red cabbage, snow peas, and it includes the  teriyaki sauce as well.  All good stuff for you.  All you need to do is add the protein and anything additional that you want.  I chose to make it with chicken (my go to protein) and added some cashews to the mix for some extra crunch.  Actually, I add cashews to a lot of things....that's my confession for the day!

This couldn't have been much easier since most of the work is done for you.  I used my usual method of cutting the chicken in bite size pieces, dipping in cornstarch, and then cooking that first.  Removing that to cook the veggies which cooked up quickly, then adding the cashews, chicken and the sauce.  BAM! you're done!  Serve alone or with rice and you have an easy, quick, and tasty dinner.

This isn't any kind of sponsored post, I just happen to run into this product and I love to share them with you when I feel they are healthy, helpful in the kitchen, and taste fresh and delicious!  This one is a winner, and I can't wait to try another version.  Hope you can find this in your store...and if you happen to come across it, try it.  You won't be disappointed!








Chicken Teriyaki Stir Fry

serves 4

1 lb boneless chicken breast, cut into bite sized pieces
1/4 c cornstarch
3 Tbls canola oil, divided

1 bag Taylor Farms Teriyaki Stir Fry Kit
1/3 cup cashews, roasted
Optional:  hot cooked rice

On a plate toss the chicken with the cornstarch.

Heat 2 tablespoons of the canola and in a large skillet or wok.  Add the chicken and cook on medium-high until browned on all sides, about 3-4 minutes on each side.  Remove chicken from the pan, and turn the heat up to high.

Add the remaining 1 tablespoon of canola oil to the skillet.  Add all the vegetables and cook 4-5 minutes, until they are crisp tender.  Add the cashews and stir until slightly roasted.  Return the chicken and any juices back to the skillet.  Add the stir fry sauce from the kit and toss to coat.  Serve over hot cooked rice if desired.

Healthier Slow Cooker Orange Chicken





For quick weeknight dinners we eat a lot of Chinese food.

Stir frys that I make using beef or chicken and whatever vegetable I have on hand.  It's soooo much better than takeout and done in a flash.

But there are times when we go out to dinner and just crave a good Chinese meal.  MGG loves Orange Chicken.  To tell the truth I love it too, but tend not to eat it as much due to the large amount of sugar in the sauce.  So I set out to make a healthier version at home, using less sugar so that it isn't as calorie ridden, and using the "slow cooker"!!



HEALTHIER SLOW COOKER ORANGE CHICKEN

Now I want to state that doing this on the stove only takes about 20 minutes.  So why use the slow cooker?  There are just some days that I am so busy that it is late when we eat, and I really don't want to stand over the stove and cook. 

Days where I work all day, I can through this in the slow cooker when I get home, wait for MGG to get home, then we're off to the gym.  When we are ready to eat after we get back and shower etc....a hot meal is ready for us.  I LOVE THAT!  Seriously, when I don't want to cook, he's lucky I don't just throw a salad his way and call it a day!

The slow cooker gives me an option to have a hot dinner when I really need it.  So cooking on high for 2 hours is perfect for me.  Or need be on low for 4 during the weekend when I'm running errands.


I used my favorite multi-purpose Breville Risotto Plus Maker.  I love it because it sautés, steams, slow cooks, and makes risotto...yum!  It really has been my go to slow cooker this past year and I can't recommend it enough.

So try this Healthier Slow Cooker Orange Chicken soon.  You'll love the flavor and won't miss the deep fried fat, nor the extra sugar.  I promise.

Kitchen Note:  If you have a slow cooker with a sauté option, use that to brown the cornstarched chicken instead of a separate skillet.








Slow Cooker Orange Chicken



3 thin Cut Boneless Chicken Breasts, chopped into 1" pieces
1/3 cup cornstarch
2 Tbsp canola oil
1 tsp seasoned rice wine vinegar
2 Tbsp low sodium soy sauce
1/2 tsp sesame oil
1/2 cup reduced sugar orange marmalade
1/2 tsp kosher salt
1/2 tsp pepper



In a small bowl mix the rice wine vinegar, soy sauce, sesame oil, marmalade, salt and pepper.

On a plate add the cornstarch and the chicken tossing to coat. Preheat a medium skillet over medium high heat. Add the oil to heat. Add the chicken and quickly brown all sides, about 4 minutes. (You don't need to cook the chicken, only brown it.)

Add the chicken to the slow cooker.  In a small bowl mix the rice wine vinegar, soy sauce, sesame oil, marmalade, salt and pepper.

Add the mixture over the chicken.  Cook on low 4 hours or on high 2-3 hours.  Serve over hot cooked rice.
