Chicken Teriyaki Stir Fry and a Product Review

Yum

Chicken Teriyaki Stir Fry made with Taylor Farms new stir fry kit. They take do all the washing and chopping prep work for you to make a meal in 20 minutes or less! - Slice of Southern

You know how much I love my stir frys.  Some of my favorites are my Chicken, Green Bean & Mushroom Stir Fry , Chicken, Brussels Sprouts & Noodle Stir Fry, and my Cashew Chicken.  And those are just the chicken ones!

So imagine my delight when I was browsing the fresh vegetable section in the grocery store the other day and I came across a Stir Fry Kit from Taylor Farms.  Yes! Jackpot!  This was a stir fry kit with all the veggies, chopped, and washed and ready to go, along with a sauce as well!  Now this is fresh cooking, convenience style.  They did most of the work for you so that you can take a 20 minutes stir fry and turn it into 10-15 be skipping all the chopping and sauce mixing steps.  Now that's a good deal!

You may have heard of Taylor Farms.  They are the ones that have those wonderful chopped salad mixes in bagged salad section.  Well they now have a line of stir frys.  I think there was 4 flavors to choose from but I gravitated immediately toward the Teriyaki Stir Fry Kit.

The kit includes broccoli, Brussels sprouts, kale, carrots, red cabbage, snow peas, and it includes the  teriyaki sauce as well.  All good stuff for you.  All you need to do is add the protein and anything additional that you want.  I chose to make it with chicken (my go to protein) and added some cashews to the mix for some extra crunch.  Actually, I add cashews to a lot of things....that's my confession for the day!

This couldn't have been much easier since most of the work is done for you.  I used my usual method of cutting the chicken in bite size pieces, dipping in cornstarch, and then cooking that first.  Removing that to cook the veggies which cooked up quickly, then adding the cashews, chicken and the sauce.  BAM! you're done!  Serve alone or with rice and you have an easy, quick, and tasty dinner.

This isn't any kind of sponsored post, I just happen to run into this product and I love to share them with you when I feel they are healthy, helpful in the kitchen, and taste fresh and delicious!  This one is a winner, and I can't wait to try another version.  Hope you can find this in your store...and if you happen to come across it, try it.  You won't be disappointed!

Chicken Teriyaki Stir Fry

serves 4

1 lb boneless chicken breast, cut into bite sized pieces
1/4 c cornstarch
3 Tbls canola oil, divided

1 bag Taylor Farms Teriyaki Stir Fry Kit
1/3 cup cashews, roasted
Optional:  hot cooked rice

On a plate toss the chicken with the cornstarch.

Heat 2 tablespoons of the canola and in a large skillet or wok.  Add the chicken and cook on medium-high until browned on all sides, about 3-4 minutes on each side.  Remove chicken from the pan, and turn the heat up to high.

Add the remaining 1 tablespoon of canola oil to the skillet.  Add all the vegetables and cook 4-5 minutes, until they are crisp tender.  Add the cashews and stir until slightly roasted.  Return the chicken and any juices back to the skillet.  Add the stir fry sauce from the kit and toss to coat.  Serve over hot cooked rice if desired.

Healthier Slow Cooker Orange Chicken

Yum

For quick weeknight dinners we eat a lot of Chinese food.

Stir frys that I make using beef or chicken and whatever vegetable I have on hand.  It's soooo much better than takeout and done in a flash.

But there are times when we go out to dinner and just crave a good Chinese meal.  MGG loves Orange Chicken.  To tell the truth I love it too, but tend not to eat it as much due to the large amount of sugar in the sauce.  So I set out to make a healthier version at home, using less sugar so that it isn't as calorie ridden, and using the "slow cooker"!!

HEALTHIER SLOW COOKER ORANGE CHICKEN

Now I want to state that doing this on the stove only takes about 20 minutes.  So why use the slow cooker?  There are just some days that I am so busy that it is late when we eat, and I really don't want to stand over the stove and cook.

Days where I work all day, I can through this in the slow cooker when I get home, wait for MGG to get home, then we're off to the gym.  When we are ready to eat after we get back and shower etc....a hot meal is ready for us.  I LOVE THAT!  Seriously, when I don't want to cook, he's lucky I don't just throw a salad his way and call it a day!

The slow cooker gives me an option to have a hot dinner when I really need it.  So cooking on high for 2 hours is perfect for me.  Or need be on low for 4 during the weekend when I'm running errands.

I used my favorite multi-purpose Breville Risotto Plus Maker.  I love it because it sautés, steams, slow cooks, and makes risotto...yum!  It really has been my go to slow cooker this past year and I can't recommend it enough.

So try this Healthier Slow Cooker Orange Chicken soon.  You'll love the flavor and won't miss the deep fried fat, nor the extra sugar.  I promise.

Enjoy!

Kitchen Note:  If you have a slow cooker with a sauté option, use that to brown the cornstarched chicken instead of a separate skillet.

Slow Cooker Orange Chicken

3 thin Cut Boneless Chicken Breasts, chopped into 1" pieces
1/3 cup cornstarch
2 Tbsp canola oil
1 tsp seasoned rice wine vinegar
2 Tbsp low sodium soy sauce
1/2 tsp sesame oil
1/2 cup reduced sugar orange marmalade
1/2 tsp kosher salt
1/2 tsp pepper

In a small bowl mix the rice wine vinegar, soy sauce, sesame oil, marmalade, salt and pepper.

On a plate add the cornstarch and the chicken tossing to coat. Preheat a medium skillet over medium high heat. Add the oil to heat. Add the chicken and quickly brown all sides, about 4 minutes. (You don't need to cook the chicken, only brown it.)

Add the chicken to the slow cooker.  In a small bowl mix the rice wine vinegar, soy sauce, sesame oil, marmalade, salt and pepper.

Add the mixture over the chicken.  Cook on low 4 hours or on high 2-3 hours.  Serve over hot cooked rice.

Shredded Chicken Week: Chinese Chicken Salad

It's Shredded Chicken week and here is my second recipe using the scrumptious shredded chicken I made in my slow cooker to use in different meals.

Hands down, Chinese Chicken Salad has to be my favorite salad.

I have had a love affair with this salad since my teens.  I think it really is all the juicy mandarin oranges, and I love a sweet Asian dressing.  They make the best Chinese chicken salad in my book!

I love this salad so much that if it's on the menu, I'm sure to order it.  The best salad I've had was at a wonderful restaurant called Stanley's in Sherman Oaks.  It was famous, I mean it actually had a following.  Tender chicken tossed in a romaine salad with crunchy bites of won ton noodles along with sweet mandarin oranges.  All of this was doused in a sweet Asian dressing.  Heaven!  Sadly Stanley's has closed after many many years.

So what's a girl to do?  Make my own version that's what!  I dare say that this salad is just to my liking.  It's easy to put together using my Easy Slow Cooker Shredded Chicken and the whole family will love it.

Hope you enjoy this as much as I do!

Chinese Chicken Salad

serves 4

4 cups chopped romaine lettuce
1 8 oz can of mandarin oranges, drained
1/3 cup sliced almonds
2 cups of shredded chicken
1/3 cup chow mien noodles
3 Tbls green onion, chopped
1/3 cup Chinese Chicken Salad Dressing (I used Girard's)

In a large bowl or platter place chopped lettuce.  Add oranges, almonds, shredded chicken and toss to combine. Toss with dressing and plate.  Top with green onions and chow mien noodles.  Serve.

Weeknight Wonder: Cashew Chicken and Simple Vegetable Stir Fry

I love easy 20 minutes meals, don't you?

I work hard and really don't want to cook a major dinner during the week. Something quick, tasty, and hearty sounds good so I often turn to stir frys. My blog is full of stir fry recipes so be sure to search for them. I just love that I can throw together a quick meal in 20 minutes. A little help from a convenience item once in a while doesn't hurt either! In this case I used Kikkoman's stir fry sauce, which is very good.

This keeps the meal down to 20 minutes, and you can get a hot, healthy dish on the table in no time.

The vegetables used are simple everyday veggies from your refrigerator.  Carrots, celery, and green beans.  Items I usually have on hand all the time, but you can use whatever veggies you have.  No fancy veggies this time, which should save you a trip to the store.  Meals like this are great for leftover items you need to use up so grab what you have!

Try this delicious meal soon.  It's the perfect weeknight meal, and better than takeout!

Enjoy!

Cashew Chicken and Simple Vegetable Stir Fry

1/4 c stir fry sauce
1/4 c water
½ 1b boneless skinless chicken breasts, cut into bite sized pieces

2 T. canola oil
1/2 c shredded carrots
2 stalks of celery, sliced
8 oz. green beans, trimmed
1/3 c roasted, unsalted cashews
White or brown rice, cooked

Combine stir fry sauce, and water in a small bowl. Set aside.

Place the cornstarch on a plate and dredge the chicken in it to coat.

Heat oil in a wok or skillet. Add chicken and stir fry over medium high heat about 5-7 minutes until chicken is cooked through. Remove from skillet to a plate. Add carrots, celery, and green beans. Stirring until crisp tender, about 8 minutes. Add chicken and cashews and stir until cashews are toasted. Add stir fry sauce and toss until ingredients are covered.

Serve over hot cooked rice.

Mongolian Beef

Everyone loves Chinese food don't they?  I know we do, and by the popularity of the stir fry dishes I've posted I'm going to take a leap and say that you do too.  Even better is that it's a great take-out dish. It's easy to order and pick up on the way home.  Well let's just say that making your own "take-out" is just easy.  Don't believe that?  Well just read on.

Mongolian Beef is a favorite dish of mine to order when we go to a certain Chinese restaurant in our neighborhood.  I just love the spicy and deep flavors the brown sauce lends to it.

I've been craving some lately and we just haven't had time to stop by the restaurant to pick some up, so I set out on a mission to recreate my own version of this dish. Let's forget the take-out and have take-in instead!

If you plan on making Chinese stir frys at home it is best to invest in some pantry items that you have on hand whenever the craving strikes.  Items such as soy sauce, hoisin sauce, ginger, rice wine vinegar, sesame oil, and sriracha sauce are some of the ingredients I use regularly and try to always keep on hand.  These items are easily picked up at your local grocery store in the Asian section and I've even seen them at Trader Joes.   Tip:  make sure to keep the sesame oil in the refrigerator as it WILL go rancid if left out (speaking from experience...) yuk!!! You don't want to ruin your dish.

Mongolian Beef is our quest today.  It's a classic Chinese-American dish that has no reference to Mongolia except for the name. But who cares!  When you put a gingery-garlicky brown sauce together with strips of beef and vegetables I'm in heaven.  You will be too!

I took a nice sirloin steak and sliced it thinly and added some vegetables (onion and mini bell pepper mix) for some texture and crunch.  Make the wonderful sauce first so that you are ready to add it at the end when it's almost done.  Stir frys cook very quickly in a hot skillet or wok.  Having your items all ready to go prior to cooking is very helpful in these fast paced dishes.  No one wants to be frantic when cooking, and you've forgot to make the sauce!

Serve this mildly spiced dish over rice or wide rice noodles to catch all the sauce. I served it with rice and my Asian Cucumber Salad.  Great for a summer evening.

Enjoy!

Mongolian Beef

serves 4

2 T low-sodium soy sauce
1 tsp sugar
1 tsp cornstarch
2 tsp dry sherry
2 tsp hoisin sauce
1 tsp rice vinegar
2 tsp sriracha sauce
2 tsp oil
1 T minced ginger, fresh
1 T garlic, minced
1 pound sirloin steak, cut across grain into thin slices
1/2 yellow onion sliced thinly
2 bell peppers, julienne sliced (mixed colors, red, yellow, and orange)

To make the sauce,  combine the soy sauce, sugar, cornstarch, sherry, hoisin sauce, vinegar, sriracha sauce in a small bowl.  Whisk until smooth.

Heat the oil in a large skillet or wok over medium-high heat. Add ginger, garlic, and beef and cook about 4 minutes or until beef is browned. Remove beef from the skillet to a plate. Set aside.

Add the onion and peppers to the skillet and cook, stirring often about 3 minutes until crisp tender.   Add your meat and any collected juices back to the skillet and stir. Add the sauce mixture to pan. cook 1 minute stirring constantly, or until thickened. Serve over rice or noodles.
