How about a quick and easy weeknight meal that's delicious and satisfying?

I'm all about easy and quick during the summer so that we can spend more time outside enjoying the long evenings.  This recipe fits the bill with easy and quick, plus the bold flavors make this a crave-worthy recipe!

WEEKNIGHT BALSAMIC STEAK SALAD

This recipe can be made in 20 minutes with a little prep.  You should marinate the meat the night before and leave it in the refrigerator to soak up the yummy flavors until you are ready to cook.  Once that is done this meal comes together quickly.  All that's left is to grill the steak and put together the salad.  You will have one mouthwatering dish on the table in no time!

The marinade is full of complexity that leaves the steak juicy, tender, and dripping with wonderful flavor.  The salad is clean and simple with layers of tomatoes and avocado that compliment the steak.  The real punch comes from the blue cheese.  It's mind blowing how well these flavors compliment each other and this really makes the dish special so don't skip the cheese!  Some reserved marinade stands in as the dressing so the flavor profile is continued.

Weeknight Balsamic Steak Salad

serves 2

1/4 cup balsamic vinegar
1/4 cup olive oil
1 teaspoon of lemon zest
2 teaspoons lemon juice
1/4 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon coarsely ground pepper
1- 1 1/2 lb beef flank steak
1 package (9 ounces) ready-to-serve salad greens

8 cherry tomatoes, halved 
1 Persian cucumber, halved and sliced
1/2 medium ripe avocado, peeled and thinly sliced
Crumbled blue cheese

For the marinade/dressing: In a bowl add the balsamic vinegar, olive oil, lemon juice, lemon zest, thyme and salt & pepper. Whisk to combine. Take half of the mixture and place it in a resealable plastic bag. Reserve the rest in a jar to use as the dressing.

Add steak to the back and toss to coat. Place in the refrigerator overnight, until ready to cook.

Heat an outdoor grill to medium high heat. Remove the steak from the bag allowing the marinade to drain. Grill steak, covered, turning once, until desired doneness (135 degrees for medium-rare, 160 degrees for medium. Remove steak from grill and allow to rest 5-8 minutes before cutting.

Meanwhile, divide the salad greens among 2 plates. Top with tomatoes, avocado, cucumber, and cheese crumbles. Slice steak against the grain in thin slices and top the salad with the steak. Drizzle with reserved dressing and serve.

Raspberry Swirl Lemon Quick Bread

I'm loving all the fresh berries and citrus this season!

When the sunshine hits I'm a sucker for citrus.  I change everything up on the house to the scent of fresh lemons and oranges.  My kitchen soaps, hand soaps, laundry detergent, household cleaners, and even my ice cream turns in to oranges and lemons!

Another favorite of mine is berries.  All of them.  I just tried my first mulberry at the farmer's market the other day and it was divine!  Picking up fresh berries to bake with is the best.  This week we came across the most succulent raspberries I've ever seen, and promptly bought several pints to snack on and cook with.

RASPBERRY SWIRL LEMON QUICK BREAD

Mom was always making quick breads growing up and her love of lemons inspired this dish. One of her favorite quick bread is this Lemon Tea Bread.  My love of raspberries put my own spin to bring this just over the top.

Today's quick bread is all about citrus and berries.  Bright lemon with tangy swirled raspberries are folded into a simple quick bread that you can make in a bowl!  No mixer for this one!  This quick bread is something I make for breakfast on the weekends when we have time to relax and enjoy a leisurely meal.  It's like eating a slice of sunshine and will brighten your morning and your mood!

Raspberry Swirl Lemon Quick Bread


1/3 c canola oil
1/2 c Splenda Sugar Blend (or 1 cup granulated sugar)
2 eggs
1 1/2 c flour
1 t baking powder
1/2 t salt
1/2 c 2% milk
1 T lemon zest
juice of 1 large lemon
1 cup fresh raspberries
2 tablespoons sugar

Add oil, and sugar to a large mixing bowl. Stir to combine. Add eggs, flour, baking powder, salt, milk, and lemon zest and mix until just combined. Pous batter into a greased and floured 8- x 4-inch loaf pan.

In a blender, blend the lemon juice, raspberries, and sugar. Blend until smooth. Take one ounce of the raspberry mixture, and drizzle lightly on top of the cake batter. Use a toothpick to swirl into the batter. (Save the extra raspberry sauce for ice cream!)

Bake at 350° for 1 hour until golden on top and a toothpick inserted comes out clean. Let the bread cool in pan 10 minutes. Remove bread from pan, and cool completely on a wire rack. Slice and serve.

When Spring and Summer hit we are in Heaven around here because it is "Fruit Season"!

Both MGG and I are big fruit lovers and can't wait until the abundance of fruit produces each year.  We spend countless weekends scouring Farmer's Market for varieties of fruit that are new to us, while also loading up on the basic, berries, oranges, pears, peaches, cherries, grapes, and nectarines.

Today is all about the basics. They are your standard fruits.  They can be used in smoothies like this Tropical Sunset Smoothie and my Vanilla Kiwi Smoothie or baked into muffins like Lemon Blueberry Muffins and Strawberry Sour Cream Muffins.  Salads get punched up with fruits such as this California Salad.  Since we eat fruit so much it was no surprise that I have a Simple Fruit Salad that we serve with meals as well.

BETH'S SIMPLE FRUIT SALAD

Simple is in the title because this is a cut and throw in a bowl type of salad.  Nothing fancy, just a lot of good fruits cut into bite sized pieces and placed in a pretty bowl.  No special sauce, no drizzle, or glaze....just good delicious fruit!

Beth's Simple Fruit Salad


2 cups cantaloupe, cubed
2 cups honeydew melon, cubed
2 cups fresh pineapple, cubed
2 cups watermelon, cubed
1/3 cup blueberries
1/4 cup blackberries
2 kiwi, sliced
1 cup strawberries, sliced

Place all ingredients in a large bowl and toss to mix.  Serve chilled.
