Orange Iced Tea



Happy Labor Day weekend!

One of my most favorite drinks is Iced Tea.  Being as my parents are from Oklahoma iced tea was a staple in my house growing up.  There was never a time where we didn't have iced tea made.  I remember mom used to save the glass jars that our orange juice came in and we would line them up 4 at a time to pour our brewed ice tea in.

There are several methods to making brewed iced tea.  My mom came from the school that took a small amount of water and boiled it, adding loose leaf black tea to it and let it steep to make a concentrate.  Then it was divided among the jars and more water was added to finish the process.  You can tell the strength of the tea that way by the color of the tea.

I still make tea that way but I use tea bags instead of loose tea.  It's just easier, and you don't have to strain the tea.

What tea to use?  There are many types of tea out there.  We use a black tea.  I grew up on Lipton tea, so that's what I like, and still use.  It makes a nice strong black tea.  A lot of southerners swear by Lusianne Tea, but I never cared for it being a Lipton girl!  Use what you prefer, that's what counts!  I even experiment with peach teas or other fruit infused teas, and they work well, but black tea is the standard.

Sweetened or un-sweetened?  I make mine un-sweetened.  That way I can add Splenda to it if I like or leave it plain.  You can add a simple syrup to your finished tea all at once or by the glass as you please.  There are no strict rules! This is YOUR tea, do as you please.

Storing iced tea:  This is important.  If you don't want cloudy tea you must allow your finished tea to cool to room temperature before putting it in the refrigerator.  Otherwise your tea will turn cloudy.  I usually leave mine out for an hour or so before storing it.

This tea is a variation of the traditional iced tea. A very refreshing Orange Iced Tea.
Great for these hot days, but great anytime.

The only thing that you do to make orange iced tea is to place some orange slices in your pitcher of tea and muddle a couple of slices in the bottom with the handle end of a wooden spoon. 




Then place more orange slices in the pitcher and each glass to add subtle flavor and garnish.  Beautiful and tasty!

Orange Iced Tea

Makes 1/2 gallon

1 cup boiling water
3 regular sized tea bags
7 cups of water
ice
1 orange, cut in to slices

Boil one cup of water on the stove or microwave.  Add tea bags and let them steep for about 15 min.  You want to get a dark concentrate.  The darker the concentrate the more tea you will end up with.  Pour your concentrate in to a 1/2 gallon jug or pitcher and add approx 7 cups of water.  You can tell the strength of the tea by the color.  Very light colored tea is a more weak tea.  Dark will be strong.  Adjust your tea strength to your liking by adding more water, or more concentrate.

Add ice to your glasses and pour tea over.  If you add ice to your container with the tea, it will dilute it. 

Add 2 orange slices to the container.  Take the handle end of a wooden spoon and muddle the orange slices on the bottom of the container to release the orange juices.  Add more slices to the tea for flavor.  Add an orange slice to the individual glasses as well for garnish.

Iced Tea Please!

Let's talk tea...

Iced tea to be specific.  A southern staple.  Certainly the most popular drink by far in my household.  There's nothing better than sitting down with a nice glass of iced tea.  Taking time to slow down and enjoy the flavor!

We serve iced tea with everything...and it's perfect for summer parties, grilling, or entertaining friends.  Right now everyone is just starting grilling season with Memorial Day tomorrow and this would be a perfect drink to make for a crowd.  Would you like a tall glass of iced tea?  Yes please!!

Today' I'm going to share the traditional iced tea with a few variations.  So let's talk a little about tea.

Brewing Tea:  There are several methods to making brewed iced tea.  My mom came from the school that took a small amount of water and boiled it, adding loose leaf black tea to it and let it steep to make a concentrate.  Then it was strained and divided among the jars and more water was added to finish the process.  You can tell the strength of the tea that way by the color of the tea.

Southern Iced Tea

Makes 1/2 gallon

Peach Iced Tea

1/2 gallon of iced tea (see Southern Iced Tea recipe)
3/4 cup peach nectar (such as Kern's) at room temperature or cold.

To the brewed iced tea add the peach nectar, stirring to combine.  Serve over ice.

Spring Time is Tea Time!

It's spring and it's time to break out the tea...
The Iced Tea, that is!

Southern Iced Tea just has to be the best thing there is!  If you prefer sweet tea or 'un'sweet tea it doesn't matter.  One sip of this grand drink will have you singing with the birds and so glad the sun's out!  (Click the link above to learn how to make Southern Iced Tea)


Orange Iced Tea - A variation to try this year is Orange Iced Tea.  I been making this for years and years and years (ok I'm dating myself!).  Let's just say a long time.  This is one of my favorites as it give a nice citrus flavor which I prefer to lemon.  Just muddling oranges in your tea give you a hint of flavor, enough to make the spring air just a little fresher!  (click above for the recipe)



Apple Cider Iced Tea - This one is just as wonderful, but feels a little more like a fall flavor.  If you prefer use Apple juice instead of cider for a nice spring tea which will be crisp and wonderful!  (click above for the recipe)

Apple Cider Iced Tea





Do you love Iced Tea?


I sure do.  It's got to be my favorite drink.  A staple in my house.


Mainly I'm a purist with my iced tea.  Just plain black tea, that's the best.  Since it's cold outside most people steer away from the iced drinks.  Not me!  I still have my ice tea!  


So let's change it up a little, get a little crazy.  Let's trying adding some fall/winter flavors to the tea.
Let's try Apple Cider Iced Tea.


Super simple to make.  A modification on the original recipe.  If you want to know how to brew the perfect iced tea, following my directions located here (make sure to omit the orange).


To make this variation just add your favorite apple cider.  You can use homemade, or store bought.  I used my favorite cider from Trader Joe's, it has a wonder blend of apple flavor and spices.


The result?  A crisp, refreshing, fruity tasting drink, with warming notes from the black tea and the spices.






Apple Cider Iced Tea


1/2 Gallon of iced tea
1 cup apple cider, at room temperature or cold.


To brewed iced tea add the apple cider, stirring to combine.  Serve over ice.

There is still plenty of citrus in the markets, so before it goes away until next year I wanted to talk a little about Oranges.

Oranges are one of the greatest members of the citrus family.  Nutrients in oranges are plentiful and diverse. The fruit is low in calories, contains no saturated fats or cholesterol, but is rich in fiber.

Oranges, like other citrus fruits, are an excellent source of vitamin C, vitamin A, and other antioxidants.  They also contain minerals like potassium and calcium.  Oranges are in season  from October to February/March, (depending on the variety) although I am still seeing these delicious beauties everywhere.  Some varieties of sweet oranges are Valencia, Navel, Persian variety, blood orange, and Cara Cara.

Oranges can be kept at room temperature for a week or so. They will also stay fresh for a few weeks in the refrigerator.

Memorial Day Menu


It's almost Memorial Day Weekend!

Spring has sprung and I'm lovin' it!

The temperature is moderate, the birds are singing, and there are butterflies everywhere!  Springtime has definitely come to Southern California!  We had such a raining winter season that it caused a superbloom here.  The flowers are popping, and all the trees are budded out.  We even found hidden bulbs in our backyard this year that produced daffodils we didn't even know we had!  And let me tell you about the butterflies!  Oh my gosh....we have soooooooooooo many butterflies it is amazing.  They claim that all the rain caused a super crop of monarch butterflies and they are just flying everywhere on their migration north.  Amazing and beautiful!

All this great revival of life has made me so happy!  I'm also happy because of the produce that has popped up in the grocery store.  Yes! to springtime fruits!  Berries are in season as well as these beautiful golden nugget tangerines.  I found these gems a few years ago at out local farmer's market and have been eating them every year since.  I think they are the sweetest tangerines around.  They are in their peak season from March through May so grab them while you can.

Since I bought a ton of these tangerines on my last trip to the grocery store I thought I would make some wonderful muffins featuring these beauties this weekend.  What's better for a Spring breakfast than some hot muffins bursting with the sweet bits of juicy tangerines.  Nothing!  At least for today!!!

What if I can't find Golden Nuggets?  If you can't find Golden Nuggets you can use any sweet tangerine that you like.  I highly suggest you look for these thought because they are shockingly delicious and you need them in your life!

What items do I need?  
  • Mixing bowl - you will need a good mixing bowl to make the muffins.  I like porcelain or glass bowls.  This is one that I use as a mixing bowl as well as a salad serving bowl.
  • Wooden spoons - perfect for mixing all your ingredients together.
  • Paring knife - You will need a good small knife to cut the tangerine bits. I love this one.
  • Muffin Pan - This recipe make 6 muffins and I use these pans the most.
  • Orange Extract - I use Nielsen Massey Pure Orange Extract.  The flavor is outstanding!  If you want to use vanilla instead that will work in a pinch however, the orange flavor will not be as prominent.
This recipe makes a small batch of 6 muffins which is perfect for a weekend treat.  If you want to make 12 muffins, so you can eat them during the week, just double the recipe.  These will easily keep covered at room temperature for 3-4 days, and freeze wonderfully.

I use my base muffin recipe here that can be made into a gazillion different muffins.  It's a slightly sweeter muffin and with tender bits of tangerine running through them.  It's heaven!

Other Springtime Treats using Oranges/Tangerines:





Golden Nugget Muffins (Small Batch)

serves 6

1 egg
1/2 cup 2% milk
1/4 cup Canola Oil
1 1/2 Cups all purpose flour
1/2 Cup sugar
2 t. baking powder
1/2 t. salt
1/2 t. Orange extract (such as Nielsen Massey)
1 t golden nugget zest
1 golden nugget, peeled and chopped into small bites

Place egg, milk and oil in a large mixing bowl and whisk together until light. Add flour, sugar, baking powder, and salt. Add the citrus zest and orange extract. Stir just until moistened. Don’t overmix…batter should be lumpy and a little thick. Fold in chopped golden nugget bits.

Spray a non-stick muffin pan with cooking spray. Divide batter among 6 muffin cups filling most of the way full.

Bake at 425 degrees for 20-25 min. Allow to cool 10 minutes.  Serve.

Grilled Pork Chops with Chilled Bean and Tomato Salad



The weekend is here and company's coming.

Time to brew up a batch of my Orange Iced Tea and break out the grill.

For this alfresco dinner party I'm making pork.  Simply seasoned and grilled.  We at a lot of pan fried, bone-in pork chops in my house growing up.  Simple and delicious with mashed potatoes.  As I got older I discovered think cut boneless pork chops.  I love the low fat tender meat, and use is often in dishes such as my Tuscan Pork Chops.  Recently, I just starting to delve into the thick cut pork loin chops, boneless variety.  I'm not sure what my hesitancy was before, but I must say...they are juicy and tasty when cooked just right!  I use this type of pork chop in this recipe.  It's just perfect for grilling.

To go along with the meat I've made a marinated bean salad that chills in the fridge while you prepare the rest of the meal.  



The meat and this bean salad is such a perfect combination of flavors, that I must say this is a favorite dish.  One that's simple to make, but worthy of company!  I would even go so far as to say that the bean salad should be made on it's own.  It would be a perfect summer side salad for any grilled dish.  To round out the meal you just need some crusty country bread, and a nice mixed green salad.  Dinner is served!

Grilled Pork Chops with Chilled Bean and Tomato Salad

serves 4

1/3 c red wine vinegar
1/4 t salt
1/4 pepper
3 T olive oil
2 15 oz cans cannellini beans, rinsed and drained
1 c cherry tomatoes, cut in half
2 T parsley, chopped
4 1" thick boneless pork loin chops
2 t Italian seasoning
Garnish: parsley

In a medium bowl combine the red wine vinegar, salt, and pepper.  Whisk in olive oil.  Add the beans, tomatoes, and parsley, tossing to combine.  Cover and chill 1 hour.

Heat charcoal or gas grill to medium heat.  Sprinkle both sides of pork chops with salt & pepper and Italian seasoning.  Cook for 5 minutes per side or until desired degree of doneness.  Let stand 5 minutes to rest.  

Stir bean salad and spoon on to a serving platter.  Top with pork chops.  Garnish with parsley if desired.

Memorial Day Menu Ideas




Memorial Day is for remembering and honoring those that have fought for our freedom and lost there lives to keep what we hold dear.

It is also the unofficial start of summer and grilling season.


So Memorial Day is also a time to celebrate with good food! Here are some of my favorites to inspire you.
