Thai Chicken Meatball Wraps with a Sweet Chili Kick!


serves 4


1 recipe Thai Chicken Meatballs (see below)
1 cup shredded carrots
1 small orange bell pepper, julienned to 1/2-inch pieces
1/2 cup cucumbers, julienned
2 scallions, white and green parts sliced
1 small heads Butter or Boston lettuce, leaves separated
1 cups cooked rice
1/4 cup chopped cilantro, plus more for garnish
1/4 cup cashews
Sweet chili sauce
Lime wedges
 
In a medium bowl toss together carrots, bell peppers, cilantro, cucumber, and scallions.
 
To serve: Top a lettuce leaf with a spoonful of rice, 2 or 3 warm meatballs, and some of the vegetable mixture, extra cilantro, and cashews. Drizzle with chili sauce and a squeeze of lime.




Thai Chicken Meatballs

yield:  15 meatballs  

1/2 small yellow onion, small diced
1 clove garlic, minced
1 teaspoons fresh grated ginger
1/2 jalapeño, seeded, small diced
1 pound ground chicken
1/4 cup packed cilantro, chopped
1 tablespoon soy sauce
1/4 cup panko bread crumbs
1 egg whites

In a large bowl, combine onion, garlic, ginger, and jalapeño, chicken, cilantro, soy sauce, bread crumbs and egg whites.  Using a gentle hand mix until incorporated and ingredients are spread throughout.  

Heat broiler to high and place rack 6 inches from heat. Line a baking sheet with foil and lightly coat with cooking spray.

Use a 2-tablespoon cookie scoop, portion mixture into about 15 balls. Shape into meatballs. Arrange on prepared baking sheet.

Broil until meatballs are lightly browned, about 4 minutes. Turn meatballs over and broil another 4 minutes.

Cheesy Turkey Marinara Meatballs are such a great meatball recipe that I've made them twice this week!  Once with ground turkey which is what this recipe is, and again using ground beef.  You are going to just love these.  They are a delicious and nutritious choice for a meal that’s both comforting and satisfying. The combination of lean ground turkey and flavorful spices makes these meatballs very tasty will being tender and cheesy.  They taste really delicious! 

They are incredibly quick and easy to make, perfect for weeknights and weekends when you need a tasty meal without spending hours in the kitchen. With just a few simple ingredients, you can mix the turkey, cheese, and spices, then scoop the mixture into meatballs—no complicated steps required. Simply bake in the oven, giving you time to prep a side dish or relax. You'll have a hearty meal ready in under an hour.

What Ingredients do I need?

Meat & Dairy:

  • 2 lbs ground turkey - 7% or 15% fat for juicy meatballs
  • grated Parmesan
  • egg
  • mozzarella cheese - for shredding

Herbs & Spices:

  • onion powder
  • fresh garlic
  • Italian seasoning
  • black pepper
  • cayenne pepper
  • crushed red pepper flakes
  • fresh basil or parsley (for topping)

Cheesy Turkey Marinara Meatballs


yield:  21 - 25 meatballs


2 lbs ground turkey
1 cup shredded mozzarella
1/2 cup grated Parmesan
1 egg
2 teaspoons onion powder
2 teaspoons fresh minced garlic
1/2 teaspoon Italian seasoning
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper,
a pinch crushed red pepper flakes
1 jar Marinara sauce
1 cup shredded mozzarella cheese
Fresh basil or parsley, for topping

Preheat the oven to 400ºF.  Lightly spray a large casserole dish with cooking spray.

Combine ground turkey, 1 cup mozzarella, Parmesan, egg, onion powder, garlic, Italian seasoning, cayenne, and crushed red pepper flakes in a large mixing bowl. Mix gently to incorporate the ingredients.  Use a small cookie scoop to form the meatballs and arrange in the casserole dish 1 inch apart.  Use two casserole dishes if necessary.

Bake for 15 to 20 minutes or until fully cooked. Remove from the oven.  Top with the Marinara sauce and shredded cheese bake for an additional 5 to 10 minutes until the cheese has fully melted.

Serve with a side salad and crusty bread, over pasta, rice or zucchini noodles.

Labor Day Bash: Grilled Ranch Chicken Burgers

Hot off the grill, juicy chicken burgers filled with zesty ranch, garlic, Parmesan cheese, and Worcestershire sauce. Man, these burgers are good! 



Can you believe that it is September already?  Where did the month of August go?  But this brings us to another holiday and Labor Day is approaching quickly.  Let's get that grill out and make something scrumptious to eat!

Burgers and hot dogs are standard but let's amp it up a bit and try a variation on a burger.  We're going to make Grilled Ranch Chicken Burgers!  Who doesn't love ranch dressing on salads or as a dip?  So believe me when I say that it doesn't disappoint in this this burger either!



GRILLED RANCH CHICKEN BURGERS

I'm a beef burger lover and MGG loves his turkey burgers, but today we decided to mix it up and make a burger using ground chicken.  Yes, they make great burgers too, but they do tend to be a bit bland and a little dry.  To correct that I added some flavor pops to the mix such as garlic, Worcestershire sauce, Parmesan cheese, and ranch dressing!  Yum Yum! These Grilled Ranch Chicken Burgers are bursting with flavor. 


These burgers are so easy to customize as well.  Not only do I use ranch dressing in the patty but I also use it as a spread on the bun.  Double the flavor!

Grilled Ranch Chicken Burgers

serves 4

1 lb ground chicken
1/4 c ranch dressing
1/4 c panko bread crumbs
1/4 c grated Parmesan cheese
1 tsp.  Worcestershire sauce
1 garlic clove, minced
1/2 tsp ground black pepper
1 Tbsp olive oil
4 hamburger buns, split 

In a medium bowl add the ground chicken and the next 7 ingredients (through the black pepper).  Gently and lightly mix to combine.  Do not handle the meat too much.  Divide in to 4 sections and form 4 patties.  Place on a tray.  Brush olive oil on each patty, both side.  Place in the refrigerator for 15 minutes to firm up.

Grill burgers over medium heat 5-6 minutes per side, turning once until meat is cooked through.   Grill buns to toast.  Serve on buns with desired toppings.

It's almost time to celebrate the 4th of July and that means you need to fire up the grill and get cooking!  Today I'm bring you my 2nd installment of my Summer Fresh Recipe Series.  Recipes that are filled with fresh summer produce and are easy, light, and oh soooo tasty!  The other day I brought you a light and fresh Greek Cobb Salad.  Since we have Independence Day in mind, some grilling is in order.  Let's take our grilling to the next level with a wonderful, but easy, Mediterranean dish.

GRILLED CHICKEN KOFTA

Kofta is similar to the Persian Kabob Chicken Koobideh which is made with ground chicken and grilled on skewers.  Kofta is made with ground chicken and is loaded with herbs and spices but instead of using skewers they are formed into oval patties and grilled for the best flavor.  They come out tender and juicy and bursting with Mediterranean spices.

They are perfect served along side my Easy Mediterranean Salad (recipe coming next) or with a side a rice.  I served them with the salad, some hummus and toasted pita.  They are easy to prepare and grill up in 8-10 minutes.  You will have them on the table in under 45 minutes. MGG can attest that they made great leftovers! 

What makes them unique?  They are filled with mint and parsley for a burst of fresh herbs.  They are spiced with Ancho chili powder for complex flavoring, red pepper flakes for a little heat, coriander for a bright citrus burst, and sweet paprika for depth of flavor.  This is no ordinary meatball mix!

Grilled Chicken Kofta

serves: 4

1 small  slice of sandwich bread
1 lb ground chicken
1/3 cup grated onion
1 garlic clove, minced
1/3 cup chopped fresh parsley
2 tbsp chopped fresh mint
1 1/2 tsp Ancho chile powder 
1/4 tsp red pepper flakes
3/4 tsp ground coriander
½ tsp sweet paprika
Kosher salt and pepper
1 egg (raw)
Drizzle extra virgin olive oil



Serve along with: (optional)
Hummus
Mediterranean tomato and cucumber salad
Toasted Pita Bread

Instructions:
Toast the slice of bread in the toaster until golden brown.  Place it in a small bowl and add a little water so the slice become soggy and tender.  Squeeze out the excess water from the bread.  

Place the bread in a large mixing bowl.  Add the ground chicken, onion, garlic, parsley, mint, all the spices, and a pinch of salt and pepper.  Add the egg and a drizzle of extra virgin olive oil.  Mix the chicken mixture with your hand until well combined.

Form chicken mixture in to 8 oval patties.  (Wet hands help with the stickiness of the mixture.) Place on a tray and refrigerate for 15 to 20 minutes to allow to set.  Meanwhile preheat your grill.

Grease the grates of your grill or indoor grill pan with oil.  Heat to medium-high heat.  Place the patties on the grill and cook for 4-5 minutes per side or until fully cooked through.  Remove from grill and serve.
