Happy New Year!  

Are you off to a good start this year!  I've been trying to get out of the holiday goody mode myself.  We've been eating a lot of good food with all the treats thrown in as well.  Time to cut back and start back on a healthy eating track.

One way to do that is to eat healthy soups.  Winter time is the perfect time for soups.  They are comforting and warm and just soothe your soul.  Don't you crave a bowl of hot soup in the winter?

We just love hearty filling soups in our house.  We eat soup and salad for lunch or dinner quite a bit throughout the week.  
Today I've brought you 11 Healthy Soups you can eat all winter long.  Some are made on the stove, and some in the slow cooker, but all are hearty, healthy, delicious, and easy to make.

Game Day Winner: Spicy Turkey Chili

Need an easy, crowd-pleasing dish for game day?  

Make a batch of my Spicy Turkey Chili.  Ground turkey along with black beans and a few pantry staples is all you need to make a batch of the BEST TASTING, healthier version of chili.  This has become my new favorite chili dish and it is comfort food heaven on a cold day.

Spiked with cayenne pepper and jalapenos for heat you can amp it up to another level or mellow it out by adding more or reducing the amounts used.  We like a little spice so I put about 1/4 tsp instead of a pinch in our batch.  Bam!  it was soooo good!  

I love that this is a healthy version of chili, reducing the fat by using turkey.  I also love that this is a little soupier chili, it creates a soupy broth that is full of flavor.  If you like your chili super thick then I would reduce the liquid by a cup.  This is comfort food heaven (Did I tell you that already?).  Easy enough to throw together on a weeknight, and one your family and friends will love!

Don't be surprised when everyone gathers around on game day for this chili, and comes back for seconds.  So make a double batch to feed the all the sports fans!







Spicy Turkey Chili

serves 4

1 Tbsp canola oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 jalapeno, minced
1 Tbsp tomato paste
1 Tbsp chili powder
2 tsp ground cumin
Pinch of cayenne pepper (more for increased heat)
1 lb. ground turkey
1 15 oz can black beans, rinsed
1 28 oz  can diced tomatoes
4 c. low-sodium chicken broth
Garnishes:  (optional) cheddar cheese, sour cream, green onions, tomato chunks, slivered onions 


In a large stockpot, over medium heat, heat oil.  Add onions and cook until tender and golden, about 6-8 minutes. Add garlic and jalapeno and cook 1 minutes more, stirring frequently. Add the tomato paste, chili powder, cumin, and cayenne pepper and cook, stirring, 1 minute more.

Add turkey and cook, stirring, until fully cooked browned, about 5 to 7 minutes. Add black beans and canned tomatoes, stirring to combine, then add the chicken broth.

Increase heat to high until chili comes to a boil.  Reduce heat and simmer for 25 minutes.  Serve immediately in bowls and garnish if desired.

    I hope everyone had a wonderful holiday filled with family and friends.  Oh, the food and indulgence of the holiday is always rampant but it's time to start looking toward some lighter food.

    Making a burrito bowl at home allows you to make a dish that is healthier, using the freshest ingredients. That's so much better than takeout.  We make this healthier, first off, by using brown rice.  Brown rice is full of nutrients and fiber and tastes wonderful in this dish.  The use of turkey meat instead of beef adds another healthy touch by reducing the fat content.  Using my homemade taco seasoning up the flavor profile, along with the fresh vegetables and wonderfully flavored black beans.  This dish has soooo much flavor!  It's definitely a keeper.  You are  your family are sure to love this dish.  It will have you craving Mexican food to a whole other level.

    Lighter Burrito Bowl

    serves 4



    1 cup yellow or sweet onion, diced
    1/2 pound ground turkey (7% lean)
    1 cup brown rice (10 min. instant rice)
    1 1/4 cup low-sodium chicken broth
    1 cup salsa
    2 teaspoons taco seasoning (homemade or store bought)
    1 (15 oz) can black beans, drained
    3/4 cup frozen or fresh corn kernels
    1 cups cherry tomatoes, diced
    1/4 teaspoon kosher salt
    1/4 teaspoon black pepper
    1/2 cup cheddar cheese, shredded
    Garnish: (Optional) diced tomatoes, cheese, sour cream, green onions, avocado

      In a skillet over medium heat add the onion and the ground turkey. Cook until turkey is cooked through and no longer pink.  Use a wooden spoon to break up the turkey into small crumbles as it cooks.  Push the turkey mixture to one side of the skillet and add the rice and toast for about 1 minute.

      Add the broth, salsa, diced tomatoes, taco seasoning, corn, and the beans. Stir together making sure the rice is submerged in the liquid.  Bring to a boil then lower the heat to simmer.  Cook 10-15 minutes, or until the rice is tender. Season with salt and pepper. Turn off the flame and add the cheese.  

      Serve each portion in individual bowls and garnish if desired.  

      Note:  This recipe calls for instant brown rice, if using regular long grain brown rice you will need to increase the cooking time to around 45-50 minutes to ensure the rice is fully cooked.  Instant brown rice is suggested.

        It's time to celebrate the American Labor movement and all the workers that have strengthened our country!  Labor Day Weekend is the time to have a great big bash with lots of food and fun.

        It also is the unofficial end of summer, but we won't dwell on that.  I'm still dreaming of summer and all the fresh bounty that is produces such as this Quick and Easy Strawberry Lemonade and this Farmers Market Bounty Summer Vegetable Soup with Chicken.

        So let's talk about a main dish for your bash.  Let's talk about BUTTER BURGERS.  Yes, I said "BUTTER" burgers!  You've never tried one?  Well let me tell you that if you want a juicy, moist burger you have to try a butter burger.  It makes sense really...if you want juicy, and not dry meat, you add a fat.  In this case, butter!  I have to give credit for the idea to Paula Deen as she was the first person I saw doing this.  Now when you google it, you'll notice there are more and more versions of the butter burger out there.

        BUTTER BURGERS

        Today we are making both beef and turkey burgers with the secret ingredient being "butter".  MGG loves turkey burgers and I gravitate toward beef so why not make both at your next gathering.

        They are simple to assemble by seasoning your meat, forming a patty and then placing a tablespoon pat of butter in the middle of the patty and surround it with the meat, so it's hidden.  That's my technique and it works wonderfully.  The butter warms and melts as the burgers cook, then it distributes throughout the patty and when you bite in to it....OH!  Boy is that a moist, juicy burger!

        Top the with lettuce, tomato, and some good mustard, and don't forget the pickle and fries on the side!  The perfect meal to celebrate the holiday.  All American burgers made better with butter!

        Butter Burgers 

        serves 6

        1 lb 10% ground sirloin
        1 lb 7% ground turkey (white and dark meats)
        4 tsp burger seasoning (I use this or this)
        6 Tbls of unsalted butter, divided into 6 tablespoon portions
        6 hamburger buns
        For serving:  lettuce, tomato, mustard

        Preheat the grill to medium.  Grease the grill grate by brushing it with oil.
        In separate bowls add the beef and turkey meat.  Add 2 tsp. of burger seasoning to each meat and lightly rake through the meat to distribute.  Form each meat into 3 patties about 1-inch thick. Place a tablespoon in the center of each patty and mold the meat around it so it is hidden in the center.  Place on a baking wax paper covered tray.

        Place the burgers on the grill, cover and cook, turning once, until the burgers reach the temperature you like.  (About 10-12 minutes for medium, more for well done)  Toward the end of the cooking place the split buns on the grill to toast.  Remove from the grill to a platter for serving.
        Assemble the burgers on the buns and top with lettuce, tomato, and mustard.

        Tomorrow is Taco Tuesday, so let's change it up and try something other than you basic ground beef tacos!

        Let's make TURKEY tacos!  But not just any turkey taco.  This dish is really easy to make and will become your basic turkey taco meat go-to recipe!

        INCREDIBLY SIMPLE TURKEY TACO MEAT

        Everyone love tacos, but let's face it, during the week we want something quick and easy.  Grilling isn't always and option and takes a little more time.  Ground turkey is not only quick and easy to cook it place a healthy spin on dinner-in-a-hurry.  Oh, and it's delicious too!

        You will have juicy tender turkey tacos spiced up with bold Mexican flavors on the table in less then 30 minutes.  Guaranteed!  This turkey taco meat is a great base to have in your recipe arsenal.  You can add lots of mix-ins to make it your own, but getting the basic recipe down is key.  

        This is a saucy taco meat.  So let's ditch the taco seasoning packet and flavor this baby up with some of our spice cabinet favorites.  With the addition of tomato sauce the meat turns into a wonderful saucy mess, bursting with bold flavors.  The perfect taco meat!

        Kitchen Note:  Make a big batch and freeze some for later.  It will keep up to 3 months in the freezer.

        To serve we fried up some corn torillas to make crunchy taco shells.  You could go for soft tacos or just warmed corn torillas for a street taco experience.  It all works and the taste is outstanding!

        Incredibly Simple Turkey Taco Meat

        1 pound ground turkey
        1/2 cup yellow onion
        2 garlic cloves, finely minced
        1 tablespoon chili powder
        2 teaspoons ground cumin
        1/2 teaspoon salt
        1/2 teaspoon black pepper
        8 oz can no-salt added tomato sauce
        1/4 tsp cayenne pepper (optional)

        For Tacos:
        Taco shells
        Taco toppings of choice


        In a large skillet over medium heat, add the ground turkey, onion.  Cook, 5-7 minutes, breaking the meat into small pieces as you go.  Stir in the garlic, chili powder, cumin, salt and pepper, and cayenne if using.  Cook for about 30 seconds until the mixture is blended and the spice start to give off a fragrance.

        Add the tomato sauce and turning the heat to medium-low, simmer for 5-10 minutes, stirring occasionally.  Serve, or portion into freezer safe containers and freeze once cooled, up to 3 months.

          Citrus Rosemary Glazed Turkey Breast

          If you're sharing the holidays with a smaller group this year, I highly recommend cooking a full or half turkey breast. A turkey breast is easy to handle and a cinch to make, plus you'll still end up with plenty of leftovers!

          My moist and flavorful Citrus Rosemary Glazed Turkey Breast is the perfect union of sweet and savory.

          For 4 people I chose a half bone-in turkey breast that was about 3 pounds.  If you have 6 or more (or love lots of leftovers) to feed, go for a full turkey breast.  The glaze is the key to this recipe and I would double the glaze for a full breast.


          You start out with a high oven temperature to get a great crispy skin on the outside and then reduce for the remaining time to ensure the juiciest turkey you will ever have!  No kidding this turkey was soooo moist. 

          I also used a new "must have" thermometer.  You place the probe in the thickest portion of the breast up front, and it stays in the turkey in the oven during cooking time.  This ensures the perfect cooking temperature is reached.  No more guessing!  After tasting this turkey I think this thermometer was the best buy ever!



          This Citrus Rosemary Glazed Turkey Breast never fails to impress in presentation and in taste.

          Citrus Rosemary Glazed Turkey Breast

          serves 4-6

          1/2 c apricot preserves
          1/4 c orange juice
          2 Tbls honey
          1 Tbls Dijon mustard
          2 tsp garlic, minced
          2 sprigs fresh rosemary
          1 c white wine
          1/2 bone-in full turkey breast (about 3 -4 pounds)
          Garnish:  rosemary sprigs, thyme sprigs, orange wedges, pomegranate arils

          In a medium saucepan over medium heat add apricot preserves, orange juice, honey, Dijon, garlic, and rosemary sprigs.  Bring to a boil and then remove from heat and allow to cool.  Once cooled discard the rosemary.

          Preheat oven to 425 degrees.  Pat turkey breast to dry the outside.  Place rack in a roasting pan and spray with non-stick spray.  Place turkey breast on rack.  Pour wine in the bottom of the roasting pan. 

          Place in oven and roast for 30 minutes.  Reduce oven temperature to 325 degrees and brush breast with glaze.  Continue roasting until a thermometer inserted into the thickest part of the breast reaches 155 degrees. (depending on size of the turkey breast possibly 1 hour more)  Brush with glaze every 30 minutes. 

          Transfer turkey breast to a cutting board and tent with foil.  Allow to rest  20 minutes before slicing.  Turkey will continue to cook during this time and reach the proper temperature.  Remove the breast in one piece from the bone and then slice the breast crosswise into slices.  Place slices on a platter and garnish with rosemary sprigs, thyme sprigs, orange wedges, and pomegranate arils.

          Slow Cooker Turkey Tortilla Soup

          It's Sunday, it's raining, and I'm so done with the Turkey!

          Today's recipe, Slow Cooker Turkey Tortilla Soup, is the perfect dish for using up your leftover turkey meat from Thanksgiving.  I'm getting a little tired of it so I decided that today was the day to use up all the rest of in a fantastic soup. 

          You must be saying that tortilla soup is usually made with chicken, but both chicken and turkey are mild enough in flavors that you can substitute either.  And why not?  Turkey is a great protein in a hot bowl of soup.  So if you don't feel like making my Turkey and Wild Rice Soup, this spicy and hearty Latin flavored soup might tickle your fancy!




          SLOW COOKER TURKEY TORTILLA SOUP

          Most of the ingredients are pantry items which I pretty much keep on stock all the time.  It's as simple as chopping some onion, and then dumping all the ingredients (except the cooked turkey) in the slow cooker and turn it on.  You add the turkey about 45 minutes prior to eating to warm it through. 

          There you have it!  A warming soup for a cold day.  One's that's easy to make and has great flavor.

          Slow Cooker Turkey Tortilla Soup


          Serves 4

          3 cups low-sodium chicken broth
          1 15 oz can black beans, rinsed and drained
          1 15 oz can diced tomatoes, with juice
          1 15 oz can sweet corn, drained
          1 4 oz can diced green chiles
          4 cloves garlic, minced
          2 tsp ancho chili powder
          1/2 yellow onion, diced
          3 tsp ground cumin
          1 1/2 tsp salt
          1/2 tsp black pepper
          3 cups of chopped cooked turkey
          1 1/2 Tbls Wondra (for thickening)
          Toppings:  Crumbled tortilla chips, sour cream, avocados, cotija cheese

          Add all ingredients to a slow cooker with the exception of the turkey and Wondra. Cook on low 6-7 hours or on high 3-4. 45 minutes prior to serving add the chopped turkey and the Wondra. Stir to combine and turn the heat to high. Cook on high 45 minutes. Serve in bowls with added toppings if desired.
