Ham and Swiss Sliders

These scrumptious Ham and Swiss Sliders are so melty and gooey, yet easy to make for all your gatherings.

It's the season of summer gatherings; graduation parties, baby showers, pool parties, picnics, game day, potlucks and BBQs.  Sliders are the perfect finger food that can be an appetizer, or the main meal, and work for any gathering.

Ham and swiss are iconic flavors and when you serve it hot and I'm in heaven with that melty cheese.  So these are right up my alley.  I've even made these for lunch on the weekend, (adjusting the quantity) just for me and my husband (pictures are from our weekend lunch).  You've gotta change up the plain old sandwich sometimes!

This one has a mix of spicy brown mustard and mayo to accompany the ham and cheese, and it's served on dinner rolls that are topped with a savory butter, garlic mixture.  The topping takes these slider over the top with flavor!  Easy to assemble and then pop them in the oven to melt the cheese and heat up that topping.  Yum!  I'm ready to make another batch just thinking about them.

What Ingredients do I need?

  • dinner rolls
  • spicy brown mustard
  • mayonnaise
  • sliced deli ham
  • sliced Swiss cheese
  • butter
  • poppy seeds
  • garlic

Substitutions and Variations

  • Use Hawaiian Sweet rolls
  • Use any sandwich condiment you like, or try adding some horseradish to the mayo
  • Switch up the cheese, try pepper jack, provolone, or Monterey Jack
  • Change the meat to turkey or roast beef
  • Use the topping for any slider, try Italian cold cuts with provolone etc.



Kitchen Tips and Notes

  • Make sure to cut the rolls in half horizontally without separating the rolls.  It will make assembly so much easier.
  • You will need aluminum foil to cover the sliders when baking.
  • Taking the aluminum foil off for the last 5-10 minutes will help them get brown and a little crustier on the top.
  • Make as many slider as your want to fit the situation or number of people you are serving.

Ham and Swiss Sliders


makes 12 sliders




1 package of 12 dinner rolls
spicy brown mustard
mayonnaise
1 pound sliced deli ham
6 slices Swiss cheese, halved
4 Tablespoons butter, melted
2 teaspoons poppy seeds
2 cloves garlic, minced

Preheat your over to 350 degrees.

Without separating rolls, cut rolls in half horizontally and then place bottom halves of rolls in a baking pan. Spread bottom rolls with spicy brown mustard, and the tops with mayo.  Layer with ham and cheese, then place on the tops.  

In a small bowl add melted butter, poppy seeds, and minced garlic.  Stir to combine.  Brush the tops of the rolls with the butter mixture making sure to get the garlic and poppy seed that tend to go to the bottom of the mixture.  Cover with aluminum foil.

Bake, covered, 20 minutes. Uncover and bake another 5 minutes.  Serve hot.

Memorial Day is around the corner and it's time to "Spice Up" your Sliders!

Memorial Day always marks the unofficial start of summer which goes hand in hand with grilling.  Since the weather here has been warm enough to grill for a month or so we've already started making great dishes on the grill, but no matter what we always have a cook-out for Memorial Day.

This year we aren't just making any ole' sliders.  Nope!  We are going to "Spice Up" our palate and our lives with a little add-in to the burgers.  We decided to add sautéed jalapenos and mushrooms to the mix to create one irresistibly juicy, and flavorful slider!

ATTENTION-GRABBING JALAPENO MUSHROOM SLIDERS

This is my riff on my favorite burger, the mushroom Swiss burger with a spicy twist.  The mushrooms and jalapeno are sautéed and added to the meat mixture instead of being used as toppings.  This is a lot easier to control than having them sit on top of a small slider.  This created a wonderfully juicy and tasty burger!

They take a little prep work but the end result is an Attention-Grabbing Jalapeno Mushroom Slider!  They are only mildly spicy but you can adjust that to your liking by adding more or less diced jalapeno.  Additionally, the cheese is optional.  We added cheese to about half of our burgers and left the other plain.  Serve with your favorite fixings, and possibly a spicy burger sauce and you are set for a sizzling main dish!

Attention-Grabbing Jalapeno Mushroom Sliders

makes 12

1 lb ground sirloin (10%)
8 oz sliced baby bella mushrooms
1 Tbls olive oil
Kosher salt
2 jalapenos, finely diced
salt and pepper
Swiss cheese (optional)
12 slider buns, split and buttered


Preheat a gas or charcoal grill, or they may be grilled indoors on a grill pan.

In a large skillet over medium heat, add the olive oil and mushrooms.  Cook mushrooms 3-4 minutes until they start to get tender.  Sprinkle salt over the mushrooms and they will release their moisture and start to turn a golden brown.  Cook an additional 3-4 minutes until golden and remove from the skillet to a cutting board. 

Add the diced jalapeno to the skillet and cook about 3 minutes until softened.  Watch them while cooking as they can burn easily and may pop up on the pan while cooking.

Cut the mushrooms into small pieces and add to a large bowl.  Add the sautéed jalapeno to the bowl as well.  Sprinkle the ground sirloin over the veggies in the bowl. Sprinkle with salt and pepper to season.  Mix until well combined but don't overwork the meat.  Form 12 equal patties and place them on a platter.

Grill patties 3-4 minutes per side for well done patties.  If you are adding cheese, add it to the patties once your flip the burger to the second side.  Add buttered buns to the grill to toast.  Remove patties and buns to a platter.  Serve with condiments and fixings of your choice.

Sloppy Joe Sliders

It's February you guys!  I can't believe that the days are just flying by.  I hope your month is off to a great start. 

We grilled burgers last night since the weather in Southern California has been sunny the past few days.  I love the rain and all and we surely need it, but it's nice to be able to go outside for a change. 



Every time I buy ground sirloin I ponder on what to do with the extra hamburger meat.  I usually gravitate toward a nice meat sauce for spaghetti or even some Sloppy Joes as a last minute thought.  Which led me to today's recipe.  Sloppy Joe Sliders!

SLOPPY JOE SLIDERS



This is the perfect solution for my Super Bowl menu this Sunday.  Sliders are great snacks and sloppy joe sliders are super easy to make!  Who doesn't love a good sloppy joe?  All the guys and even my girlfriends are going to love them. 

Served with some mini pizzas, my homemade salsa and avocado dips, and a nice healthy green salad to round it out and I'm done.



I used my standard sloppy joe recipe below and found the best little slider buns at a local butcher shop but Hawaiian rolls will work perfectly as well.

Take it easy on yourself this game day and make these quick and easy Sloppy Joe Sliders, they'll be gobbled up in no time!

Sloppy Joe Sliders

1 tablespoon canola oil
1 medium onion, finely chopped

2 cloves garlic, minced
kosher salt and ground pepper
1 pound ground beef
1 can (15 ounces) tomato sauce
1 1/2 tablespoons Worcestershire sauce
12 slider rolls, split (toasted optional)

In a large skillet, heat oil over medium-high heat. Add onion and cook until soft about 5 to 7 minutes. Add garlic and stir 30 seconds.

Add ground beef to skillet. Cook, breaking up meat with a wooden spoon, until it is no longer pink, 6 to 8 minutes.

Stir 3/4 can of tomato sauce to start and Worcestershire sauce into beef mixture in skillet. Taste for flavoring.  Add more tomato sauce or Worcestershire sauce to adjust flavor to your liking.  Simmer until thickened, stirring occasionally, 6 to 8 minutes.

Season the mixture with more salt and pepper, if desired. Spoon onto toasted slider buns, and serve.

Are you working on your Super bowl menu?  It's almost time for the big game!

We always make a spread which can include dip, chili, pizza, nachos, or loaded fries.  This is what I call pub food.  It's easy to grab and dig in and goes great with beer.  Haha!  Can't forget the libations!

I'm thinking that these Buffalo Chicken Sliders need to be on the menu this year. They are super easy to make and everyone loves them.  It's a riff off of the buffalo wings everyone loves and what's better than baby sandwiches? not much!

Using the slow cooker to make the chicken filling makes this dish easy and hands free!  Chicken breasts cook in a buffalo sauce mixture to create some succulent filing for your sandwiches. Use a good buffalo sauce (bottled) like Frank's Wing Sauce, (Buffalo) or Sweet Baby Ray's Buffalo Wing Sauce. 

The filling can also be used on lettuce cups, nachos, as a salad topping, or on large hamburger buns.

But for today, we're using slider buns. I like my buns toasted to give it a little crunch, but you can leave them plain if you want.  Top the buffalo chicken filling with a little blue cheese dressing and you have one tasty meal.  Yum! 

I guarantee that everyone will love it!




Buffalo Chicken Sliders


4 boneless, skinless chicken breasts
1 c Frank's Wing Sauce, Buffalo or Sweet Baby Ray's
12 slider buns, toasted
Blue Cheese Dressing


Place the chicken breasts in the slow cooker.  Cover with the buffalo sauce. Place the lid on and cook on high for 4 hours.  

Remove chicken and shred with two forks.  Return to the slow cooker and stir to cover with the sauce.

Serve on toasted slider buns with blue cheese dressing.

Baja Chicken Sliders


We are in the hottest part of summer around here in Southern California.  But that doesn't stop us! I've been in the mood for a party, how about you?

So last weekend we had a wonderful party that was beside the pool, with alfresco dining, and great grilled food.

There's nothing better that getting together with friends and sitting around the table telling stories. This is what life is all about.  Sharing stories and laughter.  Lots of laughter!


So today I wanted to share with you our main dish recipe. Baja Chicken Sliders are a wonderful handheld item with bold flavors.  I found and adapted this recipe from Taste of Home and I'm so glad I tried it because boy, does this dish 'wow' you!  Everyone at our party just loved it.  Don't you love it when everyone brags about your food? Haha!  I do!

Everything from the sauce to the slaw just 'works'.  Don't skip anything on this because each item lends to the final dish and gives it it's flavor boost.  It's soooo good!



Look how yummy this dish is!  Succulent chicken breasts with a tangy sauce and spicy slaw on a sweet toasted bun...nothing better!  

It's easy to prepare, and perfect for serving multiple people. This would be the perfect dish for your Labor Day party....Enjoy!



Baja Chicken Sliders

adapted from Taste of Home
serves 8

Sauce:
1/4 c low fat sour cream
1/2 tsp grated lime peel
1/4 tsp lime juice

Slaw:
1 c broccoli slaw mix
1/2 red bell pepper, julienned

1/4 small red onion, sliced
2 T fresh cilantro, chopped
1 jalapeno pepper, seeded and julienned
2 tsp lime juice

Sliders:
4 boneless skinless chicken breast halves (4 ounces each)
1/2 tsp ground cumin
1/2 tsp chili powder
1/4 tsp salt
1/4 tsp fresh ground black pepper
8 Hawaiian sweet rolls, split
8 small lettuce leaves
8 slices tomato

Preheat grill to medium high.  

In a small bowl, combine sour cream, lime peel and lime juice.  In a medium bowl, combine slaw ingredients. Chill sauce and slaw until serving.

Cut each chicken breast in half widthwise; flatten to 1/2-in. thickness by pounding between plastic wrap with a meat pounder or rolling pin.   Mix seasoning of cumin, chili powder, salt, and pepper in a bowl, then sprinkle chicken.

Coat grill rack with cooking.  Grill chicken, covered, over medium heat 4 to 7 minutes on each side or until no longer pink.

Grill rolls, cut sides down, 1 minute or until toasted. Serve chicken on rolls with lettuce, tomato, sauce and slaw.
