I've always been a little crazy about food on a skewer.  It's so approachable and it it gives me that summer feeling.  

These chili-lime chicken kabobs are one of those easy recipes that look bright and impressive coming off the grill, but come together with minimal prep and simple ingredients. The chicken stays juicy, the peppers get slightly charred and sweet, and the chili-lime seasoning adds just enough smoky citrus flavor to make everything pop.

This is the kind of dinner that works just as well for a casual backyard cookout as it does for an easy weeknight meal when you want something fresh, colorful, and packed with flavor.  This will be a winner at your next cookout.

Ingredients

  • Chicken breasts — boneless, skinless chicken works perfectly for juicy, quick-cooking kabobs
  • Bell peppers — use a mix of red, yellow, and orange for color and sweetness
  • Chili-lime seasoning — brings smoky, citrusy flavor with minimal effort
  • Canola oil — helps the seasoning coat evenly and prevents sticking on the grill
  • Fresh limes — a squeeze of fresh lime at the end brightens everything up beautifully

Cut the chicken into bite-sized chunks and place in a large bowl. Toss with oil and chili-lime seasoning until evenly coated.

Thread the chicken and bell peppers onto skewers, alternating colors as you go.

Preheat your grill to medium heat and lightly oil the grates to prevent sticking.

Place the kabobs on the grill and cook, turning occasionally, until the chicken is cooked through and lightly charred on the edges.

Finish with fresh lime wedges for serving.

Los Angeles is integrated with the Mexican culture in it's people, architecture, and their food.  So it's only natural that we love to celebrate Cinco de Mayo.

It's a great time to go out and have a margarita, but if you choose to stay home celebrate with some Latin food.  There are so many options such as tacos like my Grilled Chili Lime Fish or Chicken Tacos, or go for a family friendly, easy to make meal like this Sizzling Chicken Enchilada Casserole.

Today I'm going to share a different Latin dish, Grilled Cuban Flank Steak.  Man or man was this steak good!  Flank steak is a great choice of meat.  It feeds a crowd, takes well to a marinade, and slices up tender and juicy.  The marinade is a combination of citrus juices and Latin spices and it makes this steak so flavorful.  You are gonna love it!

Grilled Cuban Flank Steak

We cooked this out on the grill, but you can do it on an indoor grill pan just as easily.  We served this with Cinnamon Thyme Sweet Potato Fries and a salad.  Both were perfect side dishes, but you could easily serve this with rice and beans and some hot tortillas.  Perfect to celebrate the holiday.

Grilled Cuban Flank Steak



1 teaspoon grated lime zest plus 2 tablespoons lime juice

1 teaspoon grated orange zest plus 1/4 cup orange juice

2 tablespoons extra-virgin olive oil
2 garlic cloves, minced

1 tablespoons dried oregano

1 1/2 teaspoons ground cumin

Kosher salt & pepper
1- 1 1/2 lb flank steak


In a medium bowl add zests and juices, plus olive oil, garlic, oregano, cumin, salt and pepper.

Place you flank steak in a baking dish and pour the marinade over the steak and turn to coat. Let stand for 30 minutes on the counter.

Preheat your grill or grill pan to medium heat.  Oil your grate if using an outdoor grill.  Remove the steak from the marinade and let any extra drip off.  Cook turning once, for 12-15 minutes per side for medium doneness.  Remove to a cutting board and allow to rest 5 minutes before cutting. 

Thinly slice the meat against the grain and transfer to a platter.

It's Cinco de Mayo Time!




It's Cinco de Mayo Time!

This holiday is really big in Los Angeles. A wonderful celebration of Mexican heritage and pride, marking the victory over the French in the Battle of Puebla. Just around the corner it land this year on Monday, May 5th. The poster above is from 1901 in honor of the victory.

So what better way to celebrate than with food? I can't think of anything. Of course in Los Angeles, we can go down to Olvera Street, which is located in the oldest part of Downtown, Los Angeles. This area was established by Spanish settlers back in 1781 and today the area is a modern Mexican-style marketplace with vendors and restaurants to enjoy the culture that abounds.

And the food is to die for...!

So today, I've gathered some of my favorite Mexican dishes that would be perfect for your Cinco de Mayo celebration!

It's Cinco de Mayo Time!

Baked Tacos


Baked Tacos are everywhere on the Internet!

Perfect timing for Cinco De Mayo, don't you think?  Since I keep seeing them all over the place I decided to try them out.  Just to test out the method of making crispy taco shells in the oven.  I usually make (by that I mean fry) my own taco shells.  Something my Mom taught me many, many, many years ago...so I've always done it that way, but I'm open to something new, maybe a tad bit healthier also.

 
It's an easy method really, using your oven and the rack to shape the taco shells.  One this though, (and I know from experience) is that you need to watch these puppies, or your will end up with crispy breaking shells.  One minute too long could make all the difference.

I used my favorite taco filling for these.  You can find that recipe here.  The end result of making the shells was good.  They were crispy (except the 1st batch!) but and went well with filling and baking them in the oven.  I'm not convinced that this saves time, cause you add extra time on for the baking.  But it does allow you to make a ton of tacos all at once and have them done at the same time!  Isn't that nice?



Part two is filling the shells with a meat mixture and then adding cheese.  Placing them in a 9x13 pan and baking them.  This gives you a more moist taco with oozy melty cheese on top.  Ole!




Baked Tacos

12 corn tortillas
cooking spray
1 lb ground beef 
2 T taco seasoning
shredded cheese
shredded lettuce, chopped tomatoes, taco sauce, olives as garnish

Preheat oven to 375 degrees.


Working with 6 tortillas at a time, wrap in a barely damp cloth or paper towel and microwave on High until steamed, about 30 seconds. Lay the tortillas on a clean work surface and coat both sides with cooking spray. Then carefully drape each tortilla over two bars of the oven rack. Bake at 375 degrees until crispy, 4 -5 minutes.

Prepare taco meat in a skillet using taco seasoning.  Stir meat breaking into small crumbles.


Spoon the taco meat mixture into the taco shells and place into a 9 x 13 inch baking dish, standing up. Sprinkle cheese over the top of the taco meat in each shell.

Place into the oven and bake at 375 degrees for 10-12 minutes or until the cheese has melted and the tacos are heated through. Remove from the oven and top with any optional condiments for serving.
