QUICK AND EASY CHINESE CHICKEN SALAD WRAPS

This wrap has it all.  It's is crunchy, wholesome, and zesty.  Plus it's portable, and damn tasty too!  Who doesn't love all the flavors of a good Chinese Chicken Salad, and now you can have a healthy, hearty meal in wrap form!  By using pre-cooked chicken or rotisserie chicken you can have this made in under 30 minutes.  And if you buy pre-chopped veggies you'll be done before you can blink!

Chinese Chicken Salad happens to be one of my favorites, so when I saw this recipe over on Carlsbad Cravings I knew I had to make my version of this dish.

Lunch is an important meal in our household.  MGG takes a packed lunch to work everyday and on the weekend we like to go on picnics, or eat outside, alfresco!  This is the perfect little sandwich in a wrap that I can think of!  Of course, many different salad types will work in this recipe, however, why not try the pop of flavors, and textures in this one?

Quick and Easy Chinese Chicken Salad Wraps
Adapted from Carlsbad Cravings

serves 3


3 Flatout Flatbreads 
1 1/4 cup shredded cooked chicken breasts
1 1/2 cup shredded red cabbage
1/2 cup shredded carrots
1/2 cup Snow peas, julienned
1/2 cup red bell pepper, julienned

Dressing
1 1/2 Tbls.seasoned rice vinegar
1 Tbls. canola oil
1 1/2 Tbls. low sodium soy sauce
1/4 tsp sriracha
1/4 tsp salt
1/4 tsp ginger
1/4 tsp garlic powder
1/8 teaspoon pepper

Chili Mayo
1/4 cup lite mayonnaise
1 tsp Sriracha

Add all of the Dressing ingredients in a medium bowl and whisk to combine.

Add chicken and all of the vegetables to the dressing and toss until evenly coated.

In a small bowl whisk the Chili Mayo ingredients together. Spread the entire surface of each Flatbread with approximately 1 tablespoon of spread.

Evenly divide the chicken and veggie filling and place down the middle of each flatbreads. Tightly roll up flatbreads and slice in half.

Cucumber and Cream Cheese Lavash Wraps

Sometimes you just need something really light to tide you over until you have a full meal.


Today's post is all about a simple snack or lunch you can make in a pinch!  MGG is Persian so we always have Lavash around the house.  Lavash is an unleavened flatbread that is thin and soft.  It's a staple in the Persian diet and has become a staple of mine as well.  We are using Lavash today to make quick Cucumber and Cream Cheese Lavash Wraps.

You can find Lavash in most grocery stores but if you can't,  then substitute with a tortilla or something like Flatout wraps,  but note the texture will be slightly different.

We tend to make wraps with Lavash as it is a good vessel because it is a large rectangular shaped bread that is thin and light.  Low in carbs,  they come in white or wheat varieties.

These Cucumber and Cream Cheese Lavash Wraps morphed out of two favorite dishes.  An English cucumber sandwich, and a Middle Eastern snack of Lavash, tomato, cucumber, and feta.  Combined we have our light and tasty wraps!

This delicious little wrap is so easy to make it really isn't a recipe.  More like a preparation guide.  To make them stand out in flavor be sure to use quality ingredients. 3 ingredients (Lavash, cream cheese, and cucumbers) to heaven on a plate!  Get a good cream cheese.  If you like a flavored one pick one that will enhance the cucumbers such as chive and onion, or garden vegetable.  For the cucumbers make sure to get either Persian or English (hot house) cucumbers.  They are both crispy and taste fresh and light in this dish.   Then on to making the wraps.  All you have to do is a little slicing with the cucumbers and serve and eat!  Can't be more simple but is oh so satisfying.  Hope you try this soon!

Cucumber and Cream Cheese Lavash Wraps

makes 1 wrap

1 piece of Lavash bread
cream cheese, spreadable consistency
1 large English cucumber, or 2-3 small Persian cucumbers, sliced thin

Place the Lavash on a work surface.  Spread with cream cheese almost to the edges.  Leave just a little room untouched.  Place cucumber slices side by side on the cream cheese.  Roll up the Lavash starting with the longest side.  Secure with a tooth pick if needed.  Cut into fourths, serve and eat!

We are going on a picnic this weekend!

MGG and I found a wonderful place to relax and have a picnic in Griffith Park.  It's a beautiful area with lot of shade trees, flowers, and a huge grassy area perfect to laze away the afternoon and have a picnic with great food.

On the menu will be some favorites of our such as my Garden Fresh Pasta Salad, Fruit Salad with a Red Currant Raspberry Sauce  , Orange Ice Tea, and Banana Pudding Jars, but the star of the show will be these outstanding sandwiches. 

Steamy hot sandwiches fresh from the oven that are so mouthwatering, and travel like a dream!  One of my favorite sandwiches is a Hot Ham & Cheese.  I've upped the anti on these by making a spicy condiment and placing it all on a hot flaky croissant.  Heaven!

SPICY HOT HAM & SWISS CROISSANTS

These sandwiches are bursting with flavor.  Melty Swiss cheese is the perfect compliment to the delicious deli ham.  The spicy mustard sauce bumps up the flavor and gives them that extra POW that takes these to the next level!  

Oh! and they travel soooo well.  Wrapped up in aluminum foil and hot from the oven just pop them in a bag.  They will stay warm until you reach your destination which could be a park, beach, potluck party or a pool party. We've even taken them to an outdoor concert and they were easy to eat and they taste outstanding.

Spicy Hot Ham & Swiss Croissants

serves 4

4 Tbls Spicy Brown Mustard
2 Tbls Mayonnaise
8 slices of Swiss Cheese
1 lb of deli sliced ham
4 Croissants
Aluminum Foil

Preheat the oven to 350 degrees.  In a small bowl add the mustard and mayonnaise and mix well.
Split each croissant and spread the mustard mixture on each side.  Add 1/4 of the ham to the bottom slice and top with 2 slices of cheese.  Place the top of the croissant on the sandwich.  Repeat with remaining croissants.

Wrap each sandwich with aluminum foil and place them on a baking sheet.  Place in the oven and cook for 15 minutes.  You want to heat the ham and melt the cheese really well.  Remove from the oven and serve, or pack and take to your destination.

Sloppy Joe Sliders

It's February you guys!  I can't believe that the days are just flying by.  I hope your month is off to a great start. 

We grilled burgers last night since the weather in Southern California has been sunny the past few days.  I love the rain and all and we surely need it, but it's nice to be able to go outside for a change. 



Every time I buy ground sirloin I ponder on what to do with the extra hamburger meat.  I usually gravitate toward a nice meat sauce for spaghetti or even some Sloppy Joes as a last minute thought.  Which led me to today's recipe.  Sloppy Joe Sliders!

SLOPPY JOE SLIDERS



This is the perfect solution for my Super Bowl menu this Sunday.  Sliders are great snacks and sloppy joe sliders are super easy to make!  Who doesn't love a good sloppy joe?  All the guys and even my girlfriends are going to love them. 

Served with some mini pizzas, my homemade salsa and avocado dips, and a nice healthy green salad to round it out and I'm done.



I used my standard sloppy joe recipe below and found the best little slider buns at a local butcher shop but Hawaiian rolls will work perfectly as well.

Take it easy on yourself this game day and make these quick and easy Sloppy Joe Sliders, they'll be gobbled up in no time!

Sloppy Joe Sliders

1 tablespoon canola oil
1 medium onion, finely chopped

2 cloves garlic, minced
kosher salt and ground pepper
1 pound ground beef
1 can (15 ounces) tomato sauce
1 1/2 tablespoons Worcestershire sauce
12 slider rolls, split (toasted optional)

In a large skillet, heat oil over medium-high heat. Add onion and cook until soft about 5 to 7 minutes. Add garlic and stir 30 seconds.

Add ground beef to skillet. Cook, breaking up meat with a wooden spoon, until it is no longer pink, 6 to 8 minutes.

Stir 3/4 can of tomato sauce to start and Worcestershire sauce into beef mixture in skillet. Taste for flavoring.  Add more tomato sauce or Worcestershire sauce to adjust flavor to your liking.  Simmer until thickened, stirring occasionally, 6 to 8 minutes.

Season the mixture with more salt and pepper, if desired. Spoon onto toasted slider buns, and serve.

Picnic in the Park: Mediterranean Chicken Wraps



I so glad that spring has been really good to us lately.  I love being outdoors!

Most weekends you can find us hiking, swimming, hanging at the beach or eating alfresco.  While the weather has been a little up and down lately we've had a perfect day for a picnic in the park!  So I seized the moment and packed us a scrumptious lunch, packed the blanket and headed to Griffith Park for an afternoon of leisurely fun and food.



I just love, love, love...all of our wonderful parks.  Griffith Park is a landmark in Los Angeles.  It's a huge 4300 acre area that houses the LA Zoo, the LA Observatory, the Greek Theatre among all the natural reserves that house a multitude of wildlife.  There are many trails for hiking and designated picnic areas.  It's a great place to spend the afternoon.

So we drove to a perfect picnic spot and started unwrapping out food goodies.  First up are these tasty Mediterranean Chicken Wraps.  Oh boy are these good!  Last night we grilled a Greek Lemon Chicken and I made sure we had leftovers for another use.  Perfect, as these were cut up and used in these wraps.  The rest of the ingredients are fresh veggies rolled up in a tortilla with the chicken and a sprinkling of cheese.  There you have it!  The perfect, portable, sandwich.  



A big bonus is you can eat them with your hands...less silverware.  Yea! The kids, heck, the whole family will love them.  They really are the perfect picnic dish.  They would be great to take to a concert in the park...hmmm I'm thinking Hollywood Bowl!  They have all the great flavors of the Mediterranean.  Simple, smart, tasty, and filling.  What better than that?

Mediterranean Chicken Wraps

serves 2

Ingredients:
2 8-inch tortillas or wraps
1 grilled chicken breast, cut in slices
1 cup of romaine, chopped
1 small red bell pepper, cut into strips
1 medium tomato, cubed
1/2 cucumber, seeded and julienned
2 oz feta cheese, crumbled

Directions:

Lay out two tortillas.  Divide the chicken, lettuce, bell pepper, cucumber and place them down the center.  Top with feta cheese.


Fold in two opposite sides of the tortilla toward the middle. Then roll the long side over, rolling tightly like a burrito to enclose all the ingredients.  Secure with a toothpick if needed.  To serve cut the wraps in half slicing on the diagonal.  

Serve and enjoy!

Note:  If you are taking these to another location, make sure to wrap them in parchment paper or aluminum foil to keep them fresh.

Leftover Redo: Chicken Sloppy Joes


How do you feel about leftovers?  

Some people love them and some people don't care much about them.  I'm kind of in the 2nd category.  There are only some dishes that I like in their "original form" as leftovers, such as spaghetti or pasta dishes, Chinese food, and pizza, oh...and fried chicken.  The rest seem to lose some of their original texture to me. 

Such as a great chicken picatta.  You won't catch me eating it the next day (nope!) because the chicken always seems to get tougher the next day after being cold.  I don't know, maybe it's me...but that's my quirks on leftovers.  The good thing is that MGG will eat anything, leftover or not! Ha!


There are some items that are excellent for leftovers as "single ingredients", such as rice, beans, roasted vegetables, seasoned and cooked ground beef, chicken, or turkey.  And yes, chicken that has been roasted or poached and then shredded or cubed for different uses.   So while I won't eat a chicken pounded and cooked with a pan sauce in it's original form twice I will eat roasted or poached chicken and turn it into a completely different dish! (Weird huh?)


I love, love, love shredded chicken.  Did you know they sell just shredded chicken in the stores now?  Love that in a pinch, but I usually cook extra chicken just for leftovers, or what I consider "different meals" during the week.


Using my leftover shredded chicken today I made some wonderful sandwiches for our lunch. Using pantry items and wanting something comforting and hot I turned this shredded leftover chicken into the best Chicken Sloppy Joes.  Oh man! These were so good.  Of course sloppy joes are usually made with ground beef...but they are just awesome with any type of meat!  See for yourself!  Don't you want to just dig right in?



Saucy, spicy, and simply delicious!


These are simple to put together with pantry items.  I used my Old School Sloppy Joes sauce recipe and substituted the beef for my leftover chicken.  (Winner!) As long as your have fresh buns or sandwich rolls you are set.  You can even use a rotisserie chicken to make these on the fly if you don't have leftovers.  These are definitely something the kids and the whole family will love.

Chicken Sloppy Joes

serves 4

1 tablespoon canola oil

2 1/2 cups cooked shredded chicken
2 cloves garlic, minced
1 tsp kosher salt
1/2 tsp ground black pepper
3/4 - 1 can (13-15 ounces) tomato sauce
1 1/2 tablespoons Worcestershire sauce
4 hamburger buns or soft kaiser rolls, split (toasted optional)

In a large skillet, heat oil over medium-high heat. Add onion and cook until soft about 5 to 7 minutes. Add chicken to skillet and heat through about 3-4 minutes.  Add garlic and stir 30 seconds.  Add salt and pepper and stir to combine.

Stir 3/4 can of tomato sauce and Worcestershire sauce into beef mixture in skillet. Taste for flavoring. Add more tomato sauce or Worcestershire sauce to adjust flavor to your liking. Simmer until thickened, stirring occasionally, 3-4 minutes.

Spoon onto toasted buns, and serve.

Game Date Eats: Buffalo Chicken Sliders


Are you working on your Super bowl menu?  It's almost time for the big game!

We always make a spread which can include dip, chili, pizza, nachos, or loaded fries.  This is what I call pub food.  It's easy to grab and dig in and goes great with beer.  Haha!  Can't forget the libations!

I'm thinking that these Buffalo Chicken Sliders need to be on the menu this year. They are super easy to make and everyone loves them.  It's a riff off of the buffalo wings everyone love and what's better than baby sandwiches?  not much!



Using the slow cooker to make the chicken filling makes this dish easy and hands free!  Chicken breasts cook in a buffalo sauce mixture to create some succulent filing for your sandwiches. Use a good buffalo sauce (bottled) like Frank's Wing Sauce, (Buffalo) or Sweet Baby Ray's Buffalo Wing Sauce. 

The filling can also be used on lettuce cups, nachos, as a salad topping, or on large hamburger buns. 



But for today, we're using slider buns. I like my buns toasted to give it a little crunch, but you can leave them plain if you want.  Top the buffalo chicken filling with a little blue cheese dressing and you have one tasty meal.  Yum! 

I guarantee that everyone will love it!




Buffalo Chicken Sliders


4 boneless, skinless chicken breasts
1 c Frank's Wing Sauce, Buffalo or Sweet Baby Ray's
12 slider buns, toasted
Blue Cheese Dressing


Place the chicken breasts in the slow cooker.  Cover with the buffalo sauce. Place the lid on and cook on high for 4 hours.  

Remove chicken and shred with two forks.  Return to the slow cooker and stir to cover with the sauce.

Serve on toasted slider buns with blue cheese dressing.

Turkey Spinach Panini with a Citrus Aioli


Summertime calls for quick yet hearty food.  Sandwiches for a weekend lunch are my go to meal.

Do you love all the combinations that you can make with a sandwich as much as I do?   I hope so cause today's sandwich is a real winner!


I love hot sandwiches.  It might be the gooey cheese melting over the hot meat...or it might be the toasty bread.  This one has it all plus a wonderful citrus aioli.  Aioli is a fancy word for a mayonnaise and garlic spread.  This spread really makes this sandwich, so don't skip it!!!  It will rock your world.
Honest.

The light citrus in the spread is such a good compliment to the delicate turkey and tangy Swiss cheese.  Together this is a combination made in heaven!  You can change it up the way you like it as well by swapping out the spinach for lettuce or arugula, or choose your favorite bread.  I used a nice country sliced bread which toasted nicely.  


Anyway you build it will turn out a masterpiece.  Remember, don't skip the citrus aioli!

Turkey Spinach Panini with a Citrus Aioli

2 T mayonnaise 
1/4 tsp lime zest 
1/4 tsp lemon zest
1 tsp lemon juice 
1/4 tsp freshly ground black pepper
1 garlic clove, minced
8 slices country bread 
1/2 lb sliced roasted turkey 
1 cup baby spinach
4 slices Swiss cheese
Cooking spray

Heat a grill pan over medium-high heat.  For the Aioli: Combine ingredients from mayonnaise through garlic in a small bowl.  Spread evenly over 4 bread slices. Top evenly with turkey, spinach, cheese, and the remaining 4 bread slices.


Coat grill pan with cooking spray. Arrange 2 sandwiches in pan. Place a cast-iron or heavy skillet on top of sandwiches; press gently to flatten. Cook 2 minutes on each side.  Repeat procedure with remaining 2 sandwiches.  Slice in half and serve immediately.

California Chicken Salad


I live in the land of "fruits and nuts".  

California has been called that for years.  I'm sure that they are referring to this figuratively however, I literally live in the land of "fruits and nuts".

Farms are everywhere, producing some of the best fruits and yes, some tasty nuts too!  

Today's dish is all about fruits and nuts.  I took a southern staple, Chicken Salad, and changed it up a bit to make it more "California" style.  Truth be told, the pecans I used (my favorite nut) are not from California, but who's counting? Not me. 

This chicken salad is simple to make, reduced in calories, and oh so tasty!  We shared this for lunch over the weekend with some friends.  I served it in a lettuce lined cup with some crackers, a fruit salad, some pita, and don't forget the iced tea. The perfect meal to have sitting poolside, enjoying the nice weather. 



Everyone raved about the flavors, so this was a big hit.

Equally delicious as a sandwich or in a pita pocket.  You are sure to enjoy this for years to come.

California Chicken Salad

serves 4


1/2 c light mayonnaise 
1/2 c sour cream 
1 Tbls lemon juice
1 tsp salt
1/2 tsp pepper
1 lb cooked chicken breasts, chopped 
2 c red and green seedless grapes, cut in half 
1 c chopped pecans 
Lettuce leaves 

In a large bowl add mayonnaise, sour cream, lemon juice, salt & pepper.  Stir to combine.  Add chicken and grapes, folding to coat. Cover and chill 1 hour. Stir in pecans just before serving. 

Serve in dessert glasses lined with lettuce leaves.
