Boy do I have something tasty for you today!

With an abundance of summer fruits we tend to eat more than our fair share.  I can say without a doubt that MGG could eat a whole personal watermelon by himself in one sitting!  That being said I am buying fruit by the bushels weekly to keep up with his insatiable appetite.

In addition to being good for you fruit is a great item to serve when entertaining.  We always set out a huge fruit bowl or platter at our parties or even for casual dinners with friends.  Over the 4th of July holiday we did just that.  I made a large platter of fruit and served it with a creamy 3-ingredient fruit dip that was to die for!

Creamy Coconut Fruit Dip

With only 3 ingredients you can have a delicious creamy coconuty fruit dip that pairs with any fruit!  What better way to enjoy fruit than to dip it in something cool and creamy.  This dip brings a little taste of the tropics to your table and makes the fruit really fun to eat.  Just watch this dip disappear!

All you need to make this dip are a few staples such as cream cheese and cool whip.  Then add in some cream of coconut (from the alcohol aisle, not coconut milk) and you are good to go.  This dip whips up literally in minutes.  It will last for a good week in the refrigerator so it is a good make ahead item as well.

This summer I've been keeping a serving tray filled with cut fruit in the refrigerator at all times.  I usually pick 1 or two melons, grapes, cherries, pineapple, and berries to have on hand for quick snacking.  The tray allows anyone in the family to grab a snack that's healthy instead of reaching for chips or other "not so healthy snacks"!  It's worked like a charm all summer long.  I bring this same tray out for casual dinner parties as well and we just use it like we would an appetizer platter.

Creamy Coconut Fruit Dip

Yield 1 cup : 10 servings

1/2 (8oz) pkg Neufchatel cheese
1 cup cream of coconut from a 15 oz can found in the alcohol section (used to make pina coladas)
1/2 (8oz) tub Cool Whip


In a large bowl with an electric hand mixer, beat the cream cheese with the cream of coconut until all lumps are gone.

Add the whipped topping and mix again.

Serve with fruit or graham crackers. Keep refrigerated.

Fall/Winter Picnic: Wraps, Salad Two Ways, and Ginger Lemonade

So all week long I've been bringing you recipes that are simple in nature, vegetarian, and oh so tasty! 

If you've missed my posts for Orzo Black Bean Salad, Feta Chopped Salad, or Pesto Cucumber Wraps take a moment to check them out.  They are all wonderfully light and delicious vegetarian dishes that I found in a new cookbook I got called,  "Forest Feast Gatherings: Simple Vegetarian Menus for Hosting Friends & Family", by Erin Gleeson.  What a fabulous book!

So let pull all these dishes together and go on a picnic.  I want to show you how easy it is to pull a picnic together if the weather is nice enough to go to a park and eat outdoors.  If it isn't cooperating this would be perfect as an indoor picnic in your living room on the floor with a blanket and a bunch of pillow.

So grab your plaid throw and let's create a picnic.

The perfect thing about this is that both the salads can be made ahead of time and stored until time to serve.  The Pesto Cucumber Wraps are what I call the main entree, while the salads compliment them as side dishes.

Don't be fooled by the fourth of July plates, this was held on a blustery day in the park.  I just happened to grab what paper plates we had on hand.  To pull this off I grabbed a navy blue plaid throw to use as the base for the food.  Put both the Feta Chopped Salad, and the Orzo Black Bean Salad in bowls that have lids and transfer well.

To round off the food I made a wonderful Ginger Lemonade (recipe is below) and packed it in a nice jar.  Some fruit such as pears and grapes along store bought cookies for dessert finish off this menu.

Make sure to take along some entertainment.  MGG likes to fly his drone, while I like to read a good book on my kindle while we rest in the afternoon.

Having a picnic, inside or outside really allows you to do something a little different.  It breaks up the routine, makes the meal special, plus it's fun!

Ginger Lemonade

1 liter Store bought lemonade
2 Tablespoons chopped fresh ginger
1/2 fresh mint leaves

Mix all ingredients in a blender, then strain into a jar.  Can be made the day before and kept in the refrigerator.  Serve chilled or over ice if possible. Shake or stir prior to serving.

Pesto Cucumber Wraps

Here's the 3rd item in the series of vegetarian dishes I've brought to you this week.

Please check out my previous 2 items, Orzo Black Bean Salad, and the Feta Chopped Salad.  Both are amazing and go together so well.  


The dishes are all vegetarian and they are all from a new book I got called, "Forest Feast Gatherings: Simple Vegetarian Menus for Hosting Friends & Family", by Erin Gleeson.  What a fabulous book!


She has colorful illustrations throughout the book accompanied by simple vegetarian recipes that anyone can make.  I truly love the layout of this book.  Her recipes are simple and easy to follow and the food is fabulous.  


You don't have to be a vegetarian to eat these dishes.  They are wonderful, filling, and will be enjoyed by all!

Today's dish ties the other two together.  It's a wonderful wrap!

PESTO CUCUMBER WRAPS

Crisp, cooling cucumber spears are wrapped in a pesto, cream cheese dressed spinach wrap.  Oh man is this good!  It's a veggie sandwich that's light, yet filling and it goes perfectly with the two salads.  

What fun is it to eat a wrap!  Kids love them, and you will too. They are the perfect lunch, dinner, or treat.  This can be made slightly ahead of time and wrapped up, kept in the refrigerator until served.  


These are super easy to pull together.  No special equipment is necessary.  Just make, grab and go!  Don't forget the two salads up above that go perfectly and make an entire meal.

Pesto Cucumber Wraps

6 spinach tortillas
8 oz cream cheese, (room temp)
2 cucumbers, cut into ling spears. no need to peel
3/4 c pesto

Spread cream cheese & pesto on each tortilla, then add 3 long cucumber spears and roll up like a burrito. Wrap a piece of parchment around the middle and tie with twine. Can be made several hours in advance.

Sometimes you just need something really light to tide you over until you have a full meal.


Today's post is all about a simple snack or lunch you can make in a pinch!  MGG is Persian so we always have Lavash around the house.  Lavash is an unleavened flatbread that is thin and soft.  It's a staple in the Persian diet and has become a staple of mine as well.  We are using Lavash today to make quick Cucumber and Cream Cheese Lavash Wraps.

You can find Lavash in most grocery stores but if you can't,  then substitute with a tortilla or something like Flatout wraps,  but note the texture will be slightly different.

We tend to make wraps with Lavash as it is a good vessel because it is a large rectangular shaped bread that is thin and light.  Low in carbs,  they come in white or wheat varieties.

These Cucumber and Cream Cheese Lavash Wraps morphed out of two favorite dishes.  An English cucumber sandwich, and a Middle Eastern snack of Lavash, tomato, cucumber, and feta.  Combined we have our light and tasty wraps!

This delicious little wrap is so easy to make it really isn't a recipe.  More like a preparation guide.  To make them stand out in flavor be sure to use quality ingredients. 3 ingredients (Lavash, cream cheese, and cucumbers) to heaven on a plate!  Get a good cream cheese.  If you like a flavored one pick one that will enhance the cucumbers such as chive and onion, or garden vegetable.  For the cucumbers make sure to get either Persian or English (hot house) cucumbers.  They are both crispy and taste fresh and light in this dish.   Then on to making the wraps.  All you have to do is a little slicing with the cucumbers and serve and eat!  Can't be more simple but is oh so satisfying.  Hope you try this soon!

Cucumber and Cream Cheese Lavash Wraps

makes 1 wrap

1 piece of Lavash bread
cream cheese, spreadable consistency
1 large English cucumber, or 2-3 small Persian cucumbers, sliced thin

Place the Lavash on a work surface.  Spread with cream cheese almost to the edges.  Leave just a little room untouched.  Place cucumber slices side by side on the cream cheese.  Roll up the Lavash starting with the longest side.  Secure with a tooth pick if needed.  Cut into fourths, serve and eat!

Triple Berry Cream Cheese Spread

I hope everyone had a wonderful 4th of July!

We took a little bit of time off to relax and celebrate with friends.  It was wonderful seeing good friends, playing in the pool, and eating all that great food!

It's hard to get back into the daily swing when we had such a relaxing holiday.  One way to do that is to make life simple, and to make our breakfast's simple too.  After a weekend of goodies it's time stop the baking and cooking for a little bit.  In doing so we decided to spend our last day of holiday with a quick and easy breakfast of fruits, coffee and tea, and fresh bagels. 



We are lucky to live near a Western Bagel store and so we picked up several varieties of bagels to enjoy.  My all time favorite is an egg bagel.  Soft and yummy, that's how I like them.  There's nothing better than fresh, soft bagels and Western Bagel has the best in Los Angeles. 

To go with our bagels I decided to whip up a special cream cheese spread.  I wanted to make it just a little bit fancier...just a little.  Which leads us to today's recipe, Triple Berry Cream Cheese Spread.  It's a blend of cream cheese, feta cheese and Smucker's new Fruit N' Honey fruit spreads.  Smucker's describes them as " Ripened fruit is naturally sweetened with honey for a simply delicious way to complement your breakfast or dress up your appetizers and desserts."  I found this new product at my store and decided to pick up a couple.  The one I used today was Fruit & Honey Triple Berry Fruit Spread.  Of course you could use this recipe with any jam, jelly, or fruit spread, I chose this one because I was curious to have a spread with honey in it instead of refined sugar.  



It's just the perfect additive to my cream cheese to jazz it up a bit for our breakfast.  It turned out so delicious, with little chunks of fruit mixed in.  Perfect on a bagel or a piece of toast.

So next time you have a simple breakfast, try this easy cream cheese spread.  You'll enjoy it's light and fruity taste, and make your breakfast extra special!

Triple Berry Cream Cheese Spread


1/2 tub of whipped cream cheese
3 Tbls feta cheese crumbled
3-4 Tbls Triple Berry Fruit Spread (Smucker's - or your favorite fruit spread)

In a medium bowl add all the ingredients and stir until well combined.  Serve with bagels or toast.  Leftovers can be stored in the refrigerator up to a week.

Carrot Cake with Fluffy Cream Cheese Frosting



It's time for the dessert in our Spring Brunch!

Nothing says spring like carrot cake in my book.  One of my favorite cakes, that I rarely get a chance to make.  But the craving comes every spring.  This year I caved in and made this slightly adapted version from Cooking Light.  It's a little healthier than the normal carrot cake which was my justification. (A girl's gotta have a justification sometimes!)


This cake has the addition of flax seed meal, giving this cake more fiber, and therefore also a more dense cake.  Almost the texture of a bran muffinIt's not the lightest cake around but it does have great flavor, and makes a pretty presentation.  

You also don't ice this cake fully.  The icing is a lighter version as well, with a little bit of cream cheese which gives it just enough tang.  It really does look pretty with the strategically placed icing.


Great for brunch, and can anyone say Mother's Day? 



Carrot Cake with Fluffy Cream Cheese Frosting

1 1/2 cups all-purpose flour
2/3 cup flax seed meal
2 teaspoons baking powder
1 teaspoon pumpkin pie spice
1/2 teaspoon baking soda
1/4 teaspoon salt
3 cups shredded carrot (about 6 medium)
1 cup refrigerated or frozen egg product, thawed, or 4 eggs, lightly beaten
1/2 cup granulated sugar 
1/2 cup packed brown sugar 
1/2 cup canola oil
1 recipe Fluffy Cream Cheese Frosting
Coarsely shredded carrot (optional)

Preheat oven to 350 degrees F. Grease and lightly flour two 8 inch round cake pans.  Set aside.

In a large bowl, stir together flour, flax seed meal, baking powder, pumpkin pie spice, baking soda, and salt; set aside. In another large bowl, combine finely shredded carrot, eggs, granulated sugar, brown sugar, and oil. Add egg mixture all at once to flour mixture. Stir until combined. Divide batter evenly among prepared pans, spreading evenly.

Bake for 25 to 30 minutes for 8-inch pans.  Cool cakes in pans on wire racks for 10 minutes. Invert cakes onto wire racks. Cool completely.

Place one cooled cake layer on a serving platter. Top with half of the Fluffy Cream Cheese Frosting. Place the second cake layer atop the frosting; spread with the remaining frosting. If desired, garnish with coarsely shredded carrot. Makes 14 to 16 servings.

Fluffy Cream Cheese Frosting


YIELD: 3/4 cup

2 ounces softened reduced-fat cream cheese (Neufchatel)
1/2 teaspoon vanilla
1/4 cup powdered sugar
1 1/2 cups frozen light whipped dessert topping

In a medium bowl, beat cream cheese with an electric mixer on medium to high speed until smooth. Beat in vanilla. Gradually add powdered sugar, beating until smooth. Thaw 1-1/2 cups frozen light whipped dessert topping. Fold about 1/2 cup of the topping into the cream cheese mixture to lighten. Fold in the remaining whipped topping. Makes about 1-3/4 cups.
