Everyone needs a good side dish in their repertoire!  Living with a Persian means we end up eating a lot of rice.  It's a staple in MGG diet even though we've tried to curb that carb craving many times, we still crave it.

MGG typically wants rice as a side dish when we grill chicken, whether it be kabobs, breasts, drumsticks...whatever, rice is always foremost in his mind.  So last week we decided to grill some Latin Grilled Chicken (soooo yum!) and with that we needed a quick and easy side dish.  So I knew he was leaning toward rice along with some veggies, and I don't mind his cravings because truth be told, I love it too.

Let's talk about rice!  There are so many varieties of rice out there which one to choose?  Basmati, a white long grained rice that is aromatic is the choice of Persians and many other cultures.  But there are others that are wonderful as well such as Jasmine, brown, mixed with wild rice, red rice...and the list goes on and on.  So one consideration I had was that I didn't want to spend 20 minutes on a weeknight cooking rice, so I chose a converted rice that cooks in minutes.  No shame here.  You can use what you want but this turned out beautifully and it is a real time savor during the week.

Rice is boring!  True, rice tends to be bland, but there are ways you can jazz it up. I wanted a rice that mirrored the flavors in my Latin Grilled Chicken so I added aromatics.  Swapping out chicken broth for the water gives rice a nice flavor boost.  Some simple touches to finish the rice also add some pep to it.  I added lemon zest, lemon juice, and fresh chopped dill to give it tons of flavor. 

So there you have it, Lemon Dill Rice!  It's the perfect side dish for chicken, fish, pork, and beef, and works well with most Latin, Mediterranean, and Middle Eastern dishes.  Make sure to try this simple side dish this week.  It's one the whole family will love.

Lemon Dill Rice

serves 3-4


1 cup minute rice
3/4 cup low sodium chicken broth
1/4 cup water
zest of 1 lemon
1/2 lemon, lemon juice
2 Tbls. fresh dill, chopped

Place chicken broth and water in a saucepan.  Turn on heat to high and boil water.  Add rice to boiling water, turn off heat and cover.  Wait 5 minutes.  Add lemon zest, and juice of 1/2 of a lemon, plus the chopped dill.  Stir to combine and serve hot.

California cuisine is all about eating fresh.  Since our state is full of agriculture, local ingredients are treasured and are in abundance and often paired with lean meats or seafood.  Regional cultures are also a big influence in the dishes.

Today's recipe is influenced by all the Mexican culture around us in Los Angeles.  Bold savory spices mixed with bright citrus flavors hit all the right flavor notes when mixed together.  Since it's summer and we want to keep the heat out of the kitchen we are going to do some grilling outdoors.  Our go to meat is usually chicken, but this recipe would work well with fish or pork too.  To impart the most flavor in the chicken it is important to marinate it in a mixture of spice, acid, and oil.  Then the chicken is left to soak up all the flavors and produce a succulent and flavorful piece of meat.

Let's talk ingredients.  When cooking on a weeknight simple is best.  Cumin (a wonderful spice used in many Latin dishes) is used for the spice (salt & pepper to taste) along with lime juice as the acid, and a good olive oil.  This makes the BEST Latin flavored marinade.  This is all you need!  Trust me, this packs such a flavor punch that you won't believe it. 

It's all about the marinade!  You also want a quick marinade time for weeknight cooking.  So take out your chicken and place it along with the marinade in a sealable bag and leave it on the counter to come to room temperature about 30-45 minutes before grilling.  This will give it a quick, but powerful marinating time to seal in the flavors in the chicken.  A good marinade is the basis for flavoring your meat!

So did I mention that this dish is EASY to make?  It practically makes itself!  Really, this will become a go to recipe in your house this summer.  It's great during the week or on the weekend for entertaining.  This dish does it all!

Latin Grilled Chicken

Serves 4

1/4 cup olive oil
1/4 lime juice, fresh squeezed
1 Tablespoon ground cumin
salt & pepper
4 chicken breasts, boneless, skinless

In a large re-sealable bag add the ingredients for the chicken marinade and the chicken breasts.  Close tightly and toss to coat all the pieces.  Place the chicken mixture on the counter for 30-45 minutes allowing the chicken to come to room temperature.


Preheat a gas grill to medium high heat.  Remove the chicken from marinade (discard marinade) and grill, turning once, until the center is no longer pink and reaches an internal temperature of 160 degrees.  About 8- 10 minutes depending upon the thickness and size of the chicken breasts.  Transfer chicken to a platter and allow to rest 10 minutes.  Serve.

Homestyle Banana Blueberry Muffins

I would say that my Mom passed on her love of baking muffins to me.  She used an old recipe from a book that is completely falling apart from usage.  This recipe is the base for a homestyle muffin that's made with love.  It's an adaptable basic recipe that I still use today.

We are going to change up that basic recipe and make some exciting muffins this morning.  I always have an overripe banana in our house, just waiting for me to make a smoothie, banana bread, or as in today, a muffin. 

Since it's summertime we always have an abundance of fruit around as well.  Sometimes MGG goes way overboard with the fruit buying (that's another story!) which leaves us with bits and pieces of leftover various fruit.  Today I found a scant 1 cup of blueberries hidden in the frig that were just calling my name.

Blueberries and Bananas?  Yes ma'am!  The flavor of tart blueberries and sweet bananas pair so well together.  You are gonna love this flavor combination.  The banana lends a sweetness and makes a really moist muffin and there's nothing better than biting into a hot juicy blueberry.  What's better than a piping hot muffin spilling with berries fresh from the oven, made with love?  Nothing!

Homestyle Banana Blueberry Muffins

1 large ripe banana, mashed
1 large egg
1/2 c 2% milk
1/4 c canola oil
1 1/2 c flour
1/2 c sugar
2 tsp baking powder
1/2 tsp salt

3/4 c fresh blueberries

Preheat oven to 400 degrees.  Spray a muffin tin with non-stick cooking spray and set aside.

In a large bowl mash the banana.  Add the egg, milk, and oil.  Mix together using a whisk to completely incorporate.


Add the flour, sugar, baking powder, and salt to the egg mixture.  Stir just until combined.  Do not over mix.  Fold in the blueberries.

Using a cookie scoop, add batter to the prepared muffin tins. Bake 18-20 minutes.  Remove from the oven and allow to cool 5-10 minutes in the tin.  Serve warm or at room temperature.
