Southern Sundays


Welcome to Southern Sundays !

I'm running out the door to go cook and sample some new Thanksgiving side dishes, but before I go I wanted to put up the party for you.  Hopefully we have some winner side dishes that I can share with you shortly.

Before we start I wanted to give you some Thanksgiving decor inspiration courtesy of my talented sister, Sue.  What a great tablescape!

Southern Sundays



Southern Sundays is back!

I've been out celebrating our 12 year Anniversary and wasn't around to host Southern Sundays last week.
So Sorry...

But, I'm back now.

Time to bring your best dishes and join the party.  It's almost Halloween time!

Before we start, here are some cute Halloween decor pics to take a look at.  These were taken at Disneyland.  They are having their annual Halloween Time and since this is a favorite holiday of mine we decided to take advantage of the season and make this one of our anniversay celebration days.



I especially like the Tinkerbell pumpkin carving.  So adorable!

Southern Sundays


Welcome to Southern Sundays!

Well it's felt like fall around here all week long.  We even had a storm or two roll through.
And then I gave in...



I forgot all about long summer nights...I was longing for fall

longing for comfort food!

So I've been busy this weekend trying out some new dishes, and a few family favorites that remind me of fall. I can't wait to bring them to you!  How does Apple Crisp sound?  or, a lightened version of Chicken Saltimboca, or Italian Chicken and Bean Soup?  Exciting huh! So stay tuned for those excellent dishes.  They will warm your heart...and your soul.

But, there was some relaxing time too.
Driving by the coast this weekend.  Just look at the view!



Remember to take time to take in the beauty around you!

Southern Sundays & Pinon Crusted Grilled Chicken


Welcome to Southern Sundays!

Since my mini vacation I've been remiss in posting any recipes.  So I thought I'd bring a little something to the party this week!

It's time for a Southwestern Fiesta.  The combination of chips, pine nuts and salsa turns chicken breasts into a dish with Latin flair!  The best part?  The chicken is grilled!


Crusted chicken usually involves an egg wash and flour, and messy fingers.  This technique skips all that by grilling the chicken briefly and then dipping the grilled side in salsa (a smooth version works best) and then in the pine nut and tortilla mixture.  Finish it up on the grill.  



The end result is that you have a wonderful one-sided crusted Southwestern dinner!  Oh, and don't forget to make the guacamole, it's a perfect compliment to this dish.  All this can be made in less than 30 minutes!  What a deal!

I served this with my jazzed up Refried Beans.  That recipe is coming up next!


Pinon Crusted Grilled Chicken

Serves 4

Guacamole:
2 large avocados, pitted and chopped
2 T fresh lime juice
2 T cilantro, chopped
1 jalapeno, seeded and minced
Salt

For the chicken:
¼ c chopped pinons (pine nuts)
½ c crushed tortilla chips
½ c salsa (use your favorite)
4 boneless, skinless chicken breasts
salt & pepper

Preheat grill to medium-high.

Mash the avocado, lime juice, cilantro, and jalapeno in a medium bowl using a fork just until chunky.  Add salt to taste.  Cover and chill until use.

In a flat dish add pinons, and tortilla chips.  Stir to combine and set aside.  In another dish add salsa.  Set aside.

Salt and pepper both sides of your chicken.  Grill on medium high heat, covered, on the first side for about 5 minutes or until browned.  Take the chicken breast and dip the “cooked” side into the salsa.  Then dredge that same salsa side into the pinon crumb mixture. 

Return chicken to the grill with the crust side up.   Grill until cooked through, another 5-6 minutes.  Serve chicken over the guacamole.

Welcome to Southern Sundays!

Everyone keeps talking about the end of summer.  Here in Southern California we are still in full swing.  It's still hot and will most likely be hot well into September.  I just love that, because I'm not ready for the end of summer.  I don't want to lose the long evenings.  I'm not ready for fall colors, clothes, or flavors.  Nope, not yet.  I want to savor the summer fruits and vegetables until the very last moment!
