The best way to make your day start off right is to eat a hearty helping of French toast that is topped with soft tender apples dripping with a cinnamony syrup!  

Breakfast can be on the table in about 20 minutes with this quick Apple Cinnamon French Toast recipe.  Apples are in season right now and this is the perfect way to incorporate them into your diet.  This is indulgence at it's best!  There are so many wonderful apples to choose from so pick your favorite and enjoy a great breakfast at the start of a great day!

I love the apples and I look forward to them every year.  I also love trying new varieties of apples so I chose a Sugar Baby apple for today's dish, but use your favorite.  The apples will stew away while you cook the French toast so you want an apple that stays firm and won't fall apart.  I left the skin on the apples for the nutrients and structure but you can certainly peel them if you choose. 

This is a wonderful winter weekend end breakfast.  One that the whole family will love.  I love the combination of apples and cinnamon and this takes your basic French toast up a notch or two!

Apple Cinnamon French Toast

serves 2

    Apples: 
    1 large apple - choose your favorite firm apple 
    1/4 cup white sugar 
    1/4 tsp cinnamon 
    1 1/2 tbsp butter 
    2 tbsp water

    French Toast: 
    4 slices white bread , preferably slightly stale 
    2 eggs 
    1/4 cup milk 
    2 tbsp butter
    a pinch of salt

Place the sugar, butter and cinnamon in a small saucepan over medium high heat.  Cut the apple into 1/4" thick wedges, leaving the skin on.  Add the apple and water to the saucepan.  Allow to simmer until apple have softened and syrup thickens slightly.  Stir occasionally.  

Meanwhile in a small bowl whisk together the egg, milk, and salt.  Melt 1 tablespoon of butter in a large skillet, over medium high heat. 

Dip the bread into the mixture, then remove, allowing any excess egg to drip off. Place in the skillet and cook until golden brown on each side - about 1 1/2 minutes. Remove from the skillet and keep warm.  Repeat with the remaining butter and dipped bread.  

To serve, place French toast on a plate and top with the apple mixture, spooning over the syrup.

Welcome to Part II of my leftover canned pumpkin recipes.  Last week we made my delectable Small Batch Pumpkin Chocolate Chip Muffins and today we are going to use up the remaining pumpkin in my recipe for:

FARMSTYLE PUMPKIN FRENCH TOAST

A lot of times I struggle between choosing French toast and pancakes.  My mom made both all the time growing up and I think I lean toward pancakes, but every now and then I get a hankering for luscious, decadent French toast.

So I pulled out my mom's old recipe for French toast that she got from her Aunt Grace and tweaked it a bit to create a pumpkin version.  Wonderfully pumpkin pie spiced bread that's dripping with warm cinnamon syrup will make your breakfast irresistible.  You'll have this pile of deliciousness on the table in the time it takes you to say "I'm hungry"!

My great aunt lived on a farm in Oklahoma and she came up with some great homestyle recipes.  I treasure those dearly.  To keep in that tradition use a good country bread that's on the thick side.  It's preferable if the bread is slightly stale as it will soak up all that deliscious custard better.  

Enjoy a great winter breakfast this season using leftover canned pumpkin.  It's a great staple to have in your house, and one the whole family (especially the kids) will enjoy!






Farmstyle Pumpkin French Toast

Yield: 2- 4 servings
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

Ingredients:


2 large eggs
1/2 cup milk
1/3 cup canned pumpkin
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
1/2 loaf Country bread, thick sliced 

2 Tablespoons unsalted butter, divided 

Syrup:
1/2 cup maple syrup 
1/2 teaspoon cinnamon

Powdered sugar (optional)


Directions:
In a large bowl, whisk together eggs, milk, pumpkin, pumpkin pie spice, and vanilla. Dip bread slices into the egg mixture, allowing to soak for at least 20 seconds and coating both sides.

Melt 1 tablespoon of butter in a large skillet over medium heat. Add the bread slices to the skillet, working in batches, and cook until evenly golden brown, about 2-3 minutes on each side. Use additional butter and repeat with remaining bread.

Meanwhile in a small pan add maple syrup and cinnamon and simmer over low until heated through but not bubbling.  Stir to combine.  
Serve immediately with maple syrup, garnished with powdered sugar, if desired.

    Country French Toast

    There is nothing better than down home cooking.  The kind that reminds you of your mom's or grandma's food.  It's comfort food for sure, but also the kind that sticks to your ribs and keeps you wanting more!

    Our weekends are for lazing around and having big breakfasts.  Especially on a Sunday.  It's something we look forward to each week, so last night I went digging in the family heirloom recipe box and came across a real winner.

    COUNTRY FRENCH TOAST

    This recipe comes from my mom's Aunt Grace.  She lived in Oklahoma and really new he way around "country food".  Her Buttermilk Pancakes are to die for and you should definitely check them out.  So I knew that her Country French Toast was going to be a winner as well and boy did these not disappoint!  Light and tender, fluffy thick pieces of country bread fried to a golden brown, and smothered in real maple syrup.  It doesn't get much better!

    These are easy to whip up.  Just a few ingredients and you are set.  Using a thick sliced county bread makes these decadent and really "country style".  And don't substitute the butter for margarine as it makes a difference in the flavor and end result.

    Country French Toast

    8 slices country bread (such as Italian country bread - thick sliced bread)
    2 large eggs
    1 cup whole milk
    1½ teaspoons real vanilla extract
    1 teaspoon butter
    Pinch of salt

    Preheat a large skillet or griddle over medium-low heat.

    In a large bowl, and eggs, vanilla, milk, and salt.  Beat until combined.  

    Melt butter on your skillet or griddle.

    Place bread into batter to coat the first side, then flipping to coast the other side. Place the coated bread on the griddle and cook 1-2 minutes on the first side until golden brown.  Flip and cook until golden and cooked through.  

    Serve warm with butter and warm maple syrup.

    Cinnamon Orange Baked French Toast Muffins

    I always seem to have bread which you could consider "day old" around. Do you?

    Last night we had a wonderful steak dinner and I made garlic toast from French sandwich rolls.  They were the perfect accompaniment, but we didn't use them all, so today I had a lonely roll staring at me, saying "use me!"

    So French toast came to mind.  But I wanted to try something I was inspired to try, muffin tin French toast.  Basically it is baked French toast, but in a muffin tin instead of a casserole dish.  The only thing I had to settle on was the flavor.  Being citrus season I decided to add the brightness of orange and the warmth of cinnamon since it's still a bit chilly in the mornings.

    CINNAMON ORANGE BAKED FRENCH TOAST MUFFINS


    The recipe is fast, easy, and tastes wonderful.    They are baked in the muffin tins, so there is no butter or oil (healthier).  Once you bake them in the tins, out comes these cute little things I'm calling French Toast Muffins.  They are perfect little gems.  Slightly crisp on the outside and soft and tender on the inside. 

    Perfect for a weekend breakfast, or a brunch, plus the kids will love them!  The flavors of cinnamon and orange coming from the oven is enough to wake the whole family and have them come running.  When they taste them, they will be begging for more!  To keep the sugar count down I served them with a sugar-free syrup.

    With the presentation being so cute and the flavors so warm and comforting, these were definitely a hit and I'll sure you and your family will love these.  Bake up something good this weekend!

    Cinnamon Orange Baked French Toast Muffins


    Serves - 8 cups

    3 large eggs
    1/2 cup milk
    1 tablespoon light brown sugar, packed
    1 tablespoon granulated sugar
    2 teaspoons cinnamon
    1 teaspoons orange extract
    1 loaf French sandwich roll, diced into 1-inch cubes
    sugar-free syrup, for serving

    Preheat oven to 350 degrees. Spray 8 wells of a muffin tin with cooking spray.  Set aside. 

    In a large bowl, add the eggs, milk, sugars, cinnamon, and orange extract.  Whisk to combine. 

    Add the bread cubes and coat evenly.  All bread to soak up the custard about 3 minutes.  Distribute the bread cubes evenly among the muffin wells lightly piling the cubes on top of each other.  Pour any remaining custard over the cubes.  I filled each one just to the top with bread. 

    Bake at 350 degrees for 22-25 minutes or until tops are golden brown.  Custard should be set and the muffins should look dry.  Remove from the oven and allow to the tin for 5 minutes.  Remove each muffin with the help of a knife and serve with syrup.

        Jolly Holiday French Toast

        It's almost Christmas!

        One of my favorite times of the year.  All the excitement and joy that goes along with Christmas morning, and being surrounded by family makes me all warm and fuzzy inside.


        After the flurry of unwrapping presents we will settle down to eat breakfast.  Something festive will be in order, but I also want something easy and quick to make.  (The day ahead will be filled with cooking.)



        JOLLY HOLIDAY FRENCH TOAST

        My Jolly Holiday French Toast is the perfect solution to an easy festive breakfast.  The family will come running when they smell the aromas of nutmeg and cinnamon.  This is no ordinary French toast!  This festive breakfast is one the whole family will enjoy.  

        While this recipe serves 4 you can easily double or triple it to feed a crowd.  I made this version on a griddle on the stove.  You can easily alter this to bake this in the oven as a casserole if you would like. (Tip: Bake at 400 degrees for about 35-40 minutes)


        So get in and out of the kitchen in no time on Christmas Day with my Jolly Holiday French Toast, so you can spend that quality time with your family and friends.

        Jolly Holiday French Toast

        serves 2 or 4

        4 slices or French or Brioche bread, sliced thick
        3 eggs
        1 c milk
        1/4 teaspoon cinnamon
        1/4 teaspoon fresh grated nutmeg
        1/4 teaspoon salt
        Garnish:  powdered sugar, raspberries
        warm syrup

        Heat a griddle on medium heat. 

        In a baking dish add eggs, milk, cinnamon, nutmeg, and salt.  Whisk until incorporated.  Place bread in the egg mixture turning over so that each side is well coated.

        If necessary, spray your griddle with nonstick cooking spray.  Remove bread slices from the egg mixture allowing any excess to drip off.  Place bread on the griddle and allow to cook 2-3 minutes or until golden brown.  Flip the bread over and continue to cook until golden brown and cooked through.

        Remove bread and place on serving plates.  Sprinkle with powdered sugar, dusted over the top and garnish with raspberries if desired.  Serve with warm syrup.

        Orange Nutmeg French Toast


        Just coming back from a wonderful vacation made me want to try my hand at a breakfast with a citrus twist.

        We had some terrific breakfast in Hawaii that you can read about here.  One thing MGG had that I just drooled over was french toast.  I love me some good french toast.  Even if you eat it in Hawaii there is something about the atmosphere that makes you feel outdoorsy, healthier and fit.  So I tell myself that if you eat this over there that you are not really being that bad.....you can work it off with a nice swim, kayaking, paddle boarding or snorkeling.  (Ha! Good justification right?)

        One thing that scream tropics is all the fresh fruits.  So I wanted to bring that into the dish with the orange extract and the zest.  You can get the orange extract here.  this is a great items to have on hand for cake batters, muffins, etc.  Almost anything you would use vanilla for you can substitute this flavor....it's yummy.  To go along I wanted to bring a little warmth so I thought cinnamon was typical, so let's mix it up a little and use some fresh grated nutmeg.  Oh so good!


        The rest is simple, and just like basic french toast.  I used a loaf of day old french bread, which had perfect texture to soak up the custard.  This dish was just perfect, and exactly what I was looking for.  An ode to our favorite breakfast restaurant in Hawaii!  Aloha!




        Orange Nutmeg French Toast

        Serves 4

        2 eggs
        ½ cup fat-free milk
        ½ teaspoon orange extract
        ½ teaspoon orange zest
        1/4 teaspoon fresh ground nutmeg
        8 slices French bread
        Powdered sugar, or maple syrup

        In a shallow bowl, combine eggs, milk, orange extract, zest, and nutmeg. Whisk until well blended. Set aside.

        Heat a non-stick skillet over medium heat.


        Dip bread slices into egg mixture, coating both sides of the bread.  Place in hot skillet.  Cook on first side until golden brown, about 3-4 minutes.  Flip and cook the other side another 3 minutes.  Sprinkle with powdered sugar or drizzle with warm syrup.

        Nutella French Toast


        I was bad.

        I'm sorry, I couldn't help myself.  I promise to do better, really I do.  But I was overcome with a craving for chocolate.  Do you ever get that?

        I think us women know about chocolate cravings.  There's something about it...it's creamy smoothness when it hits the tongue.  Melting in your mouth and the warm sensation that follows.  Oh my!  


        So I had this craving the other night and it wouldn't stop...I had to have some chocolate.  All I had in the house was a jar of Nutella, cause I don't really keep chocolate in the house.  Plus, I was craving warm....melted chocolate.  You know the kind...like a hot baked chocolate chip cookie with the chips all melty and good.

        So I decided to be very, very bad...I was going to make French Toast.  Late at night.
        Not just any french toast.  Stuffed...with Nutella. AND made with half and half...cause that was all I had.  (I tried to make them seem less self indulgent by cutting them into cute little triangle sandwiches...cute..but I think I'm fooling myself)


        And I did...and I ate it all...and it was GOOD!

        No regrets.  Maybe tomorrow though.  I'm sure I'll get over it.

        So if you are craving chocolate, and I know you are, try this french toast.  It's killer!

        Nutella French Toast

        serves 4 (2 triangles each)

        4 slices of day old white sandwich bread
        2 eggs
        1 T splenda
        1/2 c half and half
        1 t vanilla
        2 T butter
        Nutella (about 1/4 cup)
        Confectioner's sugar (if desired)

        Slice each bread into 4 triangles, cutting diagonally.  

        In a bowl whisk together eggs, Splenda, half and half and vanilla.  Dip the bread pieces on the bowl, dipping them down to ensure they are soaked.  

        In a skillet over medium heat add 1 T of butter and allow to melt.  Add half the bread pieces to the skillet and allow to cook about 2 minutes, or until browned.  Turn over and cook the other side another 1-2 minutes.  Transfer to a plate and cook the remaining batch of french toast.  

        Meanwhile add a dollop of Nutella to 4 of the cooked bread triangles, and top with another bread triangle   Remove the second batch from the skillet and continue to coat with Nutella making the remaining sandwiches.  Sprinkle with confectioner's sugar if desired and serve immediately.

        Banana Stuffed French Toast



        It's almost Valentine's Day...!

        While I love the holiday I don't particularly buy in to all the retail hype surrounding it.  Don't get me wrong, who doesn't love flowers?  But to buy a dozen roses for $80.00 for this special day, when you can get the same for $25.00 next week just doesn't make sense to me.  Then there's the restaurants.  Around here they all have a special 3 or 4 course meal (planned out for you) at a pre-set price of $80 to $100 per person.  I don't know about you, but I like to select my meal, and again, the price on a "normal" day would be around $40 a person.  It just doesn't add up for me.

        That is why we usually celebrate Valentine's in a different way.  Sometimes we spend a whole day doing fun things like visiting a museum, or going to Descano gardens.  Something "we" like to do.  Often, we just went to Vegas and that became our Valentine's trip.  All of these are nice and special, but I don't also love the times we stayed home to enjoy a nice quiet meal.  It's so special cause it's made with love!

        This dish is great to make for your loved one...can you say breakfast in bed?  Or brunch if you will.  Banana Stuffed French Toast adds a little flair to the ordinary!  The flavors of the banana spring to life and dance in your mouth!  This dish is made using your oven, so it does most of the work!  I hope you try this recipe and surprise someone special in your life with some homemade loving goodness!

        Banana Stuffed French Toast

        adapted From BHG

        Serves 2

        2 eggs
        1/2 cup low fat milk
        1/2 teaspoon vanilla
        1/8 teaspoon ground cinnamon
        4 1-inch-thick slices French bread
        2/3 cup thinly sliced banana
        Maple syrup or powdered sugar (optional)

        Preheat oven to 450 degrees. Spray a baking sheet lightly with nonstick cooking spray. In a shallow bowl, combine eggs, milk, vanilla, and cinnamon. Whisk until well mixed. Set aside.
        Cut a horizontal pocket in each bread slice, cutting from one end almost to, but not through, the other end.  Fill  pockets with banana.
        Dip bread slices into egg mixture, coating both sides. Place on the baking sheet. Bake for 10 to 12 minutes or until golden, turning once half way through the cooking time. If desired, sprinkle with powdered sugar or serve with syrup. Makes 4 slices.
