There are nights when nothing satisfies quite like a good pizza, and in our house, it’s one of our favorite meals to make from scratch. And honestly — give this dough just 24 hours, and you’re on your way to one of the best pizzas of your life.

So what makes a Neapolitan crust so special? It’s all about the texture and flavor: a chewy, airy interior with a delicate, blistered exterior that’s slightly charred in spots. To achieve that perfect crust requires a long, slow rise — 24 hours — which allows the yeast to work its magic and develop those complex flavors that you just don’t get with quick-rise doughs. The result is a dough that’s light and flavorful with that taste you’d expect from a pizzeria, right from your own oven.

This 24-hour Neapolitan pizza dough has become a favorite for those nights when we’re craving that the best restaurant style pizza, but don’t feel like eating out. With a handful of simple ingredients, a little planning ahead for that long slow rise, I get restaurant-quality results from my home oven.  You can too.

What Ingredients Do I Need?

Just a few ingredients to a great pizza dough.
  • ‘00’ Flour: The secret to that classic Neapolitan texture. Ultra-fine and soft, it creates a chewy, airy crust with just the right bite. I use this one.
  • Instant Yeast: Helps your dough rise slowly over 24 hours, developing rich flavor and that irresistible, slightly tangy aroma.
  • Sugar: Just a touch to give the yeast a little boost and enhance the natural flavors in the dough.
  • Salt: Essential for flavor balance and strengthening the gluten, giving your pizza crust structure and chew.




Kitchen Notes & Tips

Making Neapolitan pizza dough at home is easier than you might think, but a few simple tricks can take your crust from good to restaurant-quality. Here’s what we’ve learned:


  • Room Temperature Ingredients Matter: Yeast works best when it’s gently awakened. Make sure your dough ingredients are at room temperature so the fermentation happens evenly.
  • Flour Your Surface Generously: When stretching the dough, a lightly floured countertop (and hands) keeps it from sticking while preserving that airy, soft interior.
  • Use a Pizza Stone if You Can: Preheating a pizza stone creates a hot surface that mimics a pizzeria oven, giving your crust the perfect blistered, crisp bottom. If you don't have one see below for alternatives.
  • Stretch, Don’t Roll: Use your fingers to gently coax it into a circle by stretching the dough. Rolling the dough can squash the bubbles that make a Neapolitan crust light and airy.
  • Bake Hot & Fast: Your home oven set to 500ºF is ideal. The high heat ensures the edges puff up and char slightly while the center stays soft and chewy.
  • Keep Toppings Simple: Less is more when it comes to toppings. Too many can weigh down the dough and prevent that signature airy texture. Choose quality ingredients, and let the dough shine.
  • Experiment & Enjoy: Don’t stress about perfection. Every home-baked pizza is a little different — embrace the rustic charm and savor the process.
  • Storing Your Dough for Later: Refrigerate: After the first rise, wrap unused dough tightly in plastic wrap or place it in an airtight container. It will keep in the fridge for up to 3 days. Let it come to room temperature for about 30–60 minutes before shaping and baking. Freeze: Divide the dough into portions, wrap tightly in plastic, then place in a freezer-safe bag. Dough can be frozen for up to 1 month. Thaw overnight in the fridge, then bring to room temperature before stretching.

Essential Pantry and Fridge Staples for Every Beginner Cook

Having a well-stocked pantry and a few key refrigerated items makes cooking faster, easier, and more enjoyable. Even if you don’t have fresh ingredients on hand, these basics allow you to whip up a simple meal without a last-minute grocery run.

Spices & Herbs: salt, pepper, dried herbs (bay leaf, oregano, thyme), garlic powder, paprika, cinnamon

Canned Goods: tomatoes (whole, diced, crushed), tomato sauce, tomato paste, low-sodium broths (chicken, beef, vegetable), beans

How to Cut Watermelon Spears


If you're entertaining this summer I'm sure that watermelon will be on your menu.  Let's learn to cut this refreshing an hydrating watermelon in to long spears that are easy to handle and visually appealing.    This is an easy way for a crowd to grab and eat watermelon.  With the rind serveing as a handle to grab and eat from you have a cute presentation and less mess!

What Ingredients do I need?

  • A personal sized watermelon works great but any size watermelon will do.


Kitchen Tips and Notes

  • Make sure to have a sharp large chef's knife so you can easily cut through the rind.
  • Some people like to cut off the 4 sides (just to remove the white rind) which will give you a more square shape to begin with.  This isn't necessary though.
  • Place watermelon spears in a large bowl with the rind sticking out for easy grabbing.

How to Cut Watermelon Spears


1 personal sized watermelon

Cut your watermelon in half.  Lay one half of the watermelon cut side down on your board.  Make vertical slices 1 inch apart across the watermelon.  Turn the watermelon and cut more vertical 1 inch slices across the watermelon to give your cube-like spears.

Making a good hearty dinner salad is a great way to eat light yet still get a good filling meal.  A lot of times salad have a lot of hidden ingredients that can make it full of calories if you aren't careful. 

So how do we make it worthy of dinner and still keep it healthy?  I'll show you.

THE BEST HEALTHY SALAD FORMULA

This formula is a great base recipe to ensure that you get a satisfying mix of leafy green and add-ins without going overboard with the carbs or the calories.

So let's talk about this formula.  This mix of greens, produce, some grains or starch, plus lean protein will give you that hearty salad that you crave.  Then you get to put in some treats like cheese, garnish and a nice small portion of dressing to top it off.

I've gone ahead and given you some handy examples of each of the components so you can mix and match and make artistic salads of your own.  

Salad greens = 3 cups
Escarole
Baby Kale
Bibb Lettuce
Red Leaf Lettuce
Romaine
Baby Spinach
Spring Mix

Other Produce = 1/2 cup, non-starchy, cooked or raw
Bell Peppers
Carrots
Cucumbers
Green Beans
Mushrooms
Radishes

Grains or Starch - 1/2 cup
Bulgur
Whole-wheat couscous
Farro
Baby Potatoes
Quinoa
Winter squash

Lean Protein = 3 oz.
Chicken breast
Chickpeas
Hard-boiled eggs
Pork Tenderloin
Shrimp 
Salmon
Flank Steak
Tofu

Cheese = 1/2 oz.
Blue Cheese
Cheddar
Feta
Goat Cheese
Monterey Jack
Moaazrella
Parmesan

Garnish = 1/2 oz.
Avocado
Almonds

Dressing = 2 Tbsp., Olive-oil based
Balsamic vinaigrette
Lemon vinaigrette
Red-wine vinaigrette

So what do we do with all of this?  Let's make a salad!  I made a wonderfully crisp and light salad bursting with fall flavors.  Perfect for a light dinner with some crusty bread this salad features shredded chicken for the protein along with sweet potatoes for the starch.  I included apples for the other produce and delicious buttery avocado and pepitas as a garnish, as well as a little sharp cheddar cheese.  All topped with a lip-smacking good apple cider vinaigrette.  YUM!  This really tops the list for my favorite salad thus far this fall season.

Enjoy the recipe below which is a base recipe for 1 serving.  Increase the ingredients as necessary to serve additional people.  Now go make some great salads and let me know what you come up with!




Shredded Chicken & Sweet Potato Salad

1 serving


3 cups torn butter lettuce
1/2 cup cooked diced sweet potato
3 oz shredded cooked chicken
1/4 cup sliced apple (I used pink lady)
1/4 cup chopped avocado
2 Tbsp unsalted pepitas
1/2 oz. cubed cheddar cheese
2 Tbsp Apple Cider Vinaigrette (see recipe below)

Apple Cider Vinaigrette:
2 Tbsp apple cider vinegar
1/8 tsp each, salt and pepper
1/4 cup olive oil

To make the vinaigrette: In a bowl, whisk 2 Tbsp. cider vinegar with ⅛ tsp. each salt and pepper. Slowly whisk in ¼ cup extra-virgin olive oil until blended. Extra dressing will keep, covered, in the refrigerator for up to 5 days. 

In a large bowl add all salad ingredients and toss with 2 tablespoons of Apple Cider Vinaigrette.  Serve immediately.

Easy Food Processor Pie Crust

My mom has been making pies all her life.  Every kind of cream pie you can imagine along with some excellent fruit pies thrown in the mix!

She's old school though.  She learned from her mom and went by feel when making the pie dough using a base recipe passed down from my Grandma.



Fast forward many years as an adult and I'm making the pies, and my mom is teaching me how to make the dough from scratch.  I know a lot of you are mystified by making homemade pie crust but trust me when I say, it is REALLY EASY.

Now I usually use my Grandma's recipe but this year I switched it up a bit.  I wanted something that had both butter (for flavor) and shortening (for flakiness) and is made using a food processor.  Off I go searching through my multitude of cookbooks where I found the perfect recipe that met all my wishes.  The King Arthur 200th Anniversary Cookbook is full of wonderful recipes.  I recommend you picking up a copy.  This cookbook is so fabulous and it has so many recipes in it that will fulfill ALL your baking needs.  They had a multitude of recipes for pie crust including the one I am showing you today. 




So I got out my handy dandy food processor (I use this one) and the ingredients, and made this in about 5 minutes.  No kidding.  It's so EASY in a food processor.  Dump and pulse, pulse, pulse.  Then in the frig goes the dough for 45 min to an hour and then you are ready to make pie!


Go for it!  Make your pie crust from scratch, and try this recipe.  The dough was so easy to work with, it rolled out like a dream, and held together really well when forming the edges.  The taste?  Heavenly!  The butter flavor stood out and the crust was flaky to boot!  You are sure to love this crust.



The pie you see here is my favorite Pumpkin Pie with Orange Marmalade.  I've been making this for years and the light citrusy flavor brings an extra special something to your dessert!

Easy Food Processor Pie Crust

source:  The King Arthur 200th Anniversary Cookbook

1 3/4 c All Purpose Flour
1/2 tsp salt
1 T sugar (optional)
1/2 c (1 stick) unsalted butter, cold or frozen, cut into 4 pieces
2 T solid shortening
about 6 Tablespoons ice water

Using the steel blade of the food processor, quickly blend flour, salt, sugar, butter and shortening.

Slowly pour in the ice water through the feed tube while pulsing the machine.  Process only until a mass of dough has formed on the side of the bowl.  Don't overdo it.  Wrap the dough in plastic and chill for at least an hour. (You can also freeze the dough at this point.)

Roll out and place inside pie dish.  Makes enough pastry for a 8 inch, double-crust pie or a single crust for a 9 - 11 inch pie.  This crust can be filled and baked at this point, or baked blind.
