Every summer, we patiently wait for our fig tree to start producing its little treasures. Sometime around late July into August, the figs begin to ripen, and suddenly I'm making my way into the backyard with a basket, checking for the ones that are perfectly soft and ready to pick.

The funny thing is, I have a hard time keeping enough figs around to actually cook with because my husband eats them almost as fast as I can pick them! But every year, I manage to save enough to make a few of my favorite fig dishes, and I always come back to some version of crostini.

There's just something unique and special about fresh figs piled onto crisp toasted bread that works any time of day. We've enjoyed them for breakfast, a light lunch, and as an appetizer when we're entertaining. This version pairs the figs with a creamy ricotta and mascarpone mixture seasoned with cinnamon, cardamom, and vanilla bean powder, then finishes everything with honey, pistachios, and a sprinkle of flaky sea salt.

Fresh figs have such a short window, which is part of what makes them special. When you start seeing them at farmers' markets, grocery stores, or on the trees in late summer, grab them while you can. And if you're lucky enough to have a fig tree of your own, you may want to make these before someone eats all the figs first!

This is one of those recipes where a few basic kitchen tools are all you need. A good knife, a small bowl for the creamy spread, and a baking sheet for the crostini will get the job done.

Spread a generous layer of the mascarpone mixture over each toasted baguette slice. Top each with two fresh fig rounds.

Drizzle with honey, then finish with chopped pistachios and a sprinkle of flaky sea salt. Arrange on a platter and serve.

That's it. A handful of ingredients and just a few minutes of assembly gives you a beautiful late-summer bite.

  • Choose figs that are ripe but still hold their shape - You want figs that feel soft and yielding when gently pressed, but aren't so ripe that they collapse when sliced. Since the figs are one of the stars of this recipe, their flavor and texture really matter.
  • Don't skimp on the creamy layer - A generous layer of the ricotta-mascarpone mixture balances the sweetness of the figs and honey. It also gives the warm spices somewhere to shine.

What kind of figs should I use?
Any fresh, ripe fig variety will work beautifully. Choose figs that are soft and fragrant but still firm enough to slice without falling apart.
