A couple of weeks ago, I shared my Weekend Prep. Weeknight Easy. philosophy with my Harissa Chicken Quinoa Bowls—a simple reminder that spending a little time prepping one ingredient over the weekend can make weeknight dinners come together with very little effort. This Grilled Steak Quinoa Bowl is another perfect example of that idea in action.

Instead of cooking quinoa from scratch after a busy day, all that's left to do is roast a pan of butternut squash, grill your favorite steak, and quickly sauté a handful of cherry tomatoes until they're just beginning to burst. Toss everything together with the pre-cooked quinoa, fresh spinach, and a drizzle of olive oil, and dinner is ready before you know it.

What I love most about this recipe is how completely different it feels from the Harissa Chicken Bowl, even though they both start with the same batch of quinoa. The steak brings hearty, classic flavors, while the roasted squash adds a touch of sweetness and the burst tomatoes create little pockets of bright, juicy flavor throughout the bowl. The warm quinoa gently wilts the spinach, tying everything together into a satisfying meal that's both fresh and comforting.

It's exactly the kind of recipe that reminds me why I love meal prep—not because every dinner tastes the same, but because one simple head start makes it easier to put wholesome, homemade meals on the table all week long.

One of my favorite things about this recipe is how quickly it comes together once the quinoa is already waiting in the refrigerator. While the butternut squash roasts, grill the steak and let it rest while the tomatoes soften and begin to burst in the skillet.

Once everything is ready, simply warm the quinoa and toss it with the roasted squash, tomatoes, and fresh spinach. The warmth from the quinoa gently wilts the spinach, creating a fresh, colorful base without any extra effort. Top each bowl with slices of grilled steak and dinner is ready.

It's proof that a little weekend prep doesn't mean eating the same meal over and over—it simply gives you a head start.

Can I cook the quinoa the same day?
Absolutely! The recipe works either way. Preparing it ahead simply makes dinner come together much faster.

What cut of steak works best?
Top sirloin is a great choice, but flank steak, New York strip, ribeye, or flat iron steak all work beautifully.

Can I use frozen butternut squash?
Yes. Roast it directly from frozen, adding a few extra minutes to the cooking time until it's tender and lightly browned.

Can I make this recipe ahead?
Yes. Roast the squash, grill the steak, and cook the quinoa in advance. Store everything separately, then warm and assemble the bowls just before serving.

Substitutions

  • Butternut squash → Sweet potatoes, acorn squash, or pumpkin
  • Fresh thyme & rosemaryDried thyme & rosemary (use half the amount) or Italian seasoning
  • Crushed red pepper flakesa pinch of cayenne for mild heat

Variations

  • Swap the Feta cheese:  Use goat cheese, ricotta salata, or queso fresco
  • Add Nuts for Crunch: Toss in some walnuts, pecans, or pine nuts during the last few minutes of roasting for a crunchy texture that pairs nicely with the soft squash.
  • Zucchini or Summer Squash Variation:  Substitute the butternut squash: Slice zucchini or summer squash into 1/2-inch thick rounds or half-moons.  Reduce the roasting time to 15-20 minutes at 450°F.  Use goat cheese instead of feta and marinate with the same herbs.

  • Buy pre-cut squash for ease:  cutting your own will produce the freshest results but is often found a little hard to cut.  Find pre-cut squash that are cut in cubes as they are typically more fresh. This will cut down on cutting time.
  • Roasting Tip: Don’t overcrowd the baking sheet when roasting the squash. If the pieces are too close together, they may steam rather than roast, affecting the texture. Use two baking sheets if needed.
  • Herb Substitution: If you don’t have fresh herbs, you can substitute dried thyme and dried rosemary. Just use about half the amount to avoid overwhelming the dish. Dried herbs are more potent than fresh.
  • Roasting Tip: Don’t overcrowd the baking sheet when roasting the squash. If the pieces are too close together, they may steam rather than roast, affecting the texture. Use two baking sheets if needed.
  • Serving Tip: If you’re serving the roasted squash with marinated feta as a side, consider pairing it with a protein like grilled chicken, pork, or salmon to make it a complete meal.

Savory Roasted Butternut Squash with Zesty Marinated Feta


Serves: 6

1 butternut squash, peeled and cut into bite-sized cubes
5 tbsp. Extra Virgin Olive Oil, divided
1 tbsp. fresh thyme, chopped
1 tbsp. fresh rosemary, chopped
1⁄4 tsp. crushed red pepper flakes
4 oz. block of feta
1 dash Salt and pepper, to taste

Preheat the oven to 450°F. Line a large, rimmed baking sheet with parchment paper.

In a large bowl, toss the cubed squash with three tablespoons of olive oil, then salt and pepper to taste. Pour out onto the prepared pan. Bake for 20 minutes, tossing once, or until tender and charred in spots.

Meanwhile, cut the feta into thin strips, then break into shards and place in a shallow dish. In a small bowl, combine the remaining olive oil, fresh herbs, red pepper flakes, and additional salt and pepper. Pour over the feta and toss once to coat. Allow to sit for 10-15 minutes.

When the squash is cooked through, pour it onto a serving platter. Scatter the marinated feta over top.

Fall Flavors: Harvest Spinach Salad

My Harvest Spinach Salad is loaded with fall favorites like butternut squash, chopped apples, pecans, cranberries and couscous.  It's the perfect side salad this fall.

I have the perfect side salad that's easy to make and has all the fall flavors.  It has no fuss ingredients you crave:  chopped apples, pecans, dried cranberries, roasted butternut squash, couscous, and spinach.  Plus it's all doused with with an apple cider vinaigrette.  

Here are some occasions that this salad would be perfect for:

  • Side Salad with weekday dinners
  • fall picnic
  • entertaining friends
  • Friendsgiving 
  • Thanksgiving 

There is a little prep work to roast the butternut squash and cooking the couscous,  however, you can use leftovers if you have them, or cook them on the weekend and store them until ready to use during the week.  The salad has it all going on, flavors, crunch, savory, and sweet.  This is one heck of a salad!




What Ingredients do I need?


Produce
Butternut squash 
Apples
Baby spinach

Nuts and Dried Fruit
Pecans
Dried Cranberries

Israeli couscous

Apple Cider Vinegar
Dijon Mustard

Substitutions and Variations

  • Change up the salad greens:  Use any dark leafy green such as kale, red leaf lettuce, arugula, or swiss chard
  • Try a different squash: Use roasted acorn or kabocha squash. Or go with roasted sweet potatoes
  • Change up the fruit:  Pears would be a great substitute
  • Any nut will work:  Think pepitas or pumpkin seeds, walnuts, almonds - or go nut free
  • Change up the dried fruit:  go with raisins, golden raisins, dried cherries, or even apricots
  • Try a different grain:  bulgur, farro, or quinoa would all be great choices



Kitchen Tips and Notes

  • Butternut squash can be bought pre-cut in to cubes in the produce section
  • Apples come in many varieties:  try Gala, Jazz, or Golden Delicious
  • Israeli couscous aka pearl couscous are the larger balls of semolina.  Moroccan and North African dishes contain the more popular small couscous.  This is actually a pasta and not a grain. 
  • Make Ahead:  batch cook your couscous and roast your butternut squash on the weekend and then refrigerate until you make the salad during the week.

Harvest Spinach Salad

serves 2

4 cups fresh baby spinach, chopped
1 1/2 cups cooked Israeli couscous, cooked according to package directions (1/2 cup dry couscous)
1 - 1 1/2 cups butternut squash, chopped
1 medium apple, cored and chopped
1/3 cup pecans
3 Tablespoons dried cranberries

Vinaigrette
1/4 olive oil
2 Tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1 tsp garlic, minced
pinch of salt & pepper to taste


Preheat your oven to 450 degrees.  Add your chopped and cubed butternut squash to a baking sheet and drizzle with some olive oil.  Bake about 30 minutes until golden brown and soft.  Remove from the oven and set aside.

Meanwhile cook your Israeli couscous according to the package directions in a pot on the stove.  Remove from heat and allow to cool.

Make dressing:  in a small bowl or mason jar add all the vinaigrette ingredients and whisk or shake vigoursly until well combined.

To assemble salad:  In a medium bowl add spinach, apple, butternut squash, couscous, pecans, and cranberries.  Drizzle with salad dressing and toss to coat.  Serve.

Winter Quinoa Salad

This healthy salad is bursting with flavors and full of winter flavors like roasted butternut squash, apples, cranberries, and toasted almonds.  Topped off with an amazing cider vinaigrette this salad will have you doing a happy dance!




Winter Quinoa Salad

How do you get the flavors of winter but still keep a dish light?  Try this Winter Quinoa Salad for one!  It's bursting with good ingredients such as quinoa (an ancient grain), sweet and roasted butternut squash, juicy tart apples, tart cranberries, a little greens and toasted almonds for crunch and you have one heck of a salad. But wait!  It's not over until you add wrap it all in this amazing cider vinaigrette.  Heaven on a plate!

This is my version of comfort food in a salad.  I made this the other day to go along with some indoor grilled chicken and I must say the salad was better than the chicken!  It's the perfect side dish to go along with any type of protein, or along with a sandwich at lunch time.  Make sure to try this dish soon.  It's easy to make and the best part is it tastes soooo darn good!

What Ingredients do I need?

  • quinoa
  • butternut squash
  • apple
  • green onion
  • fresh spinach
  • dried cranberries
  • slivered or sliced almonds
  • apple cider vinegar
  • olive oil
  • shallot
  • dijon mustard
  • honey


Substitutions and Variations

  • Use a lemon vinaigrette
  • Use sweet potato instead of butternut squash
  • Add dried cherries, or apricots
  • Use kale instead of spinach
  • Use another grains such as, long grain and wild rice, Israeli couscous, farro, or barley
  • Add pepitas, sunflower seeds, or leave out the nuts
  • Pick your favorite apples, or use a pear

Kitchen Tips and Notes

  • Use left over roasted butternut squash or roast ahead of time and allow to cool
  • This is beast made ahead so that everything cools to room temperature before serving.
  • Best served at room temperature but may be served cold.
  • Will keep in the refrigerator for 2-3 days.
  • Buy already cubed butternut squash for easy prep.

Winter Quinoa Salad


serves 6-8



1 cup quinoa
1 1/2 cups butternut squash, cubed
1 large Envy apple, diced
1 green onion, sliced
2 cups fresh spinach, rough chop
1/3 dried cranberries
3 Tablespoons slivered or sliced toasted almonds


Vinaigrette:
2 Tablespoons apple cider vinegar
6 Tablespoons olive oil
1/2 small shallot, minced
1 teaspoon Dijon mustard 
1 teaspoon honey
pinch of salt and pepper


Preheat oven to 425 degrees.  Place cubed butternut squash on a roasting pan and roast for 20-25 minutes until golden brown, turning once.  Remove from the oven and allow to cool to room temperature.

Meanwhile in a saucepan add to 2 cups of water and bring to a boil.  Rinse and drain the quinoa in a mesh drainer.  Add to the boiling water along with a pinch of salt.  Reduce the heat to low, cover and cook for 15 minutes.  Check the quinoa.  All the water should be absorbed.  Remove from the heat, fluff with a fork, and allow to cool to room temperature.

Prepare the vinaigrette.  In a small bowl add the vinegar, shallot, mustard, honey, and a pinch of salt and pepper.  Slowly add the olive oil while whisking.  Whisk until emulsified.  Set aside.

In a large bowl add the quinoa, butternuts squash, apple, green onion, spinach, cranberries, and almonds.  Stir to combine.  Add the vinaigrette and stir to combine.  Serve.

Holiday Best Snacking Board

For a weekend or a pre-holiday meal, enjoy my Holiday Best Snacking Board with savory dips, a variety of dippers, along with some nuts, fruits, and sweets.

What better way to get people to join you at the table than with a wonderful snacking board that holds a plethora of delectable goodies.  A snacking board is the ultimate and easy way to gather.  They are great for parties when we can all have them, but for now they are the perfect way to bring the family together.

With some help from Trader Joe's I was able to pull together two outstanding snacking boards.  You don't have to make things homemade all the time, so take some help from some special gourmet items and put together a spread that's healthy, appetizing, and filling.  



The first board is full of toppings and dipping vessels.  From hummus, to a goat cheese log, to crostini that you put together your way with a variety of toppings.  The second board is full of finger snacks.  From dried fruits, to various nuts, and some sweets thrown in the mix.  This is definitely a sweet & salty board.  

All together we have one decadent meal ahead of us!

Substitutions and Variations
  • For the dips try pico de gallo, tzatziki, white bean dip, other flavored hummus, spinach & artichoke, jams, fruit salsa
  • For the dippers try pita bread, pretzel chips, bagel chips, or pita chips, 
  • For the vegetables try celery, broccoli, endive, and snap peas
  • Don't like nuts, do an olive tray, or a sweets only tray
  • Add more fresh fruits such as strawberries, grapes, and sliced apples
  • Add other dried fruit such as apples, pineapples, figs, and dates


Kitchen Notes and Tips
  • Use a large wooden tray or platter as your board
  • Make sure your tray is food safe, otherwise line with a piece of parchment paper
  • Arrange big items first on your board and fill in with the smaller items
  • Use most of the space on your board for an abundant look
  • Dips and spreads should be placed in small bowls and spread out in different areas on the board 
  • Fill in the spaces under the dips and spreads with the dippers. 
  • Fan pieces for a nice look
  • Groups similar items together for impact






Butternut Squash Crostini


cubed butternut squash (store-bought)
olive oil
salt & pepper
garlic powder
ground sage

Preheat oven to 400 degrees.

Cut the cubed butternut squash into small bite sized pieces.  Place on a large rimmed sheet pan, and drizzle with olive oil.  Season well with salt, pepper and garlic powder plus a small sprinkle of ground sage.
Toss to evenly coat and roast about 25-30 minutes or until the squash is fork tender but not too soft.  To serve use place feta cheese and some squash on a crostini.



Bruschetta


    2-3 ripe Roma tomatoes seeds removed, finely diced, and gently patted dry 
    3-4 fresh basil leaves sliced into thin ribbons
    2 cloves garlic finely minced
    1 1/2 - 2 Tablespoons olive oil

Combine diced tomatoes, basil, and minced garlic in a bowl.  Drizzle olive oil enough to coat.  Stir to combine and allow to rest for flavors to develop 30 minutes.   Place in a small bowl to serve.



Crostini

1 baguette, cut into 1/2" slices
2 Tablespoons extra-virgin olive oil
flaky kosher salt

Preheat oven to 400 degrees.

Lightly coat both sides of bread with olive oil and arrange in single layer on a baking sheet.
Bake on the center rack for 10 minutes, flipping them halfway through, until golden and slightly crisp. Sprinkle with salt and serve.
