Sheet Pan Burrata Gnocchi with Roasted Peppers & Basil

This Sheet Pan Burrata Gnocchi with Roasted Peppers & Basil is an easy California-inspired dinner made with fresh basil, sweet roasted peppers, pillowy gnocchi, creamy burrata, and balsamic glaze—perfect for warm weather nights and alfresco dinners.

Sheet Pan Burrata Gnocchi with Roasted Peppers & Basil

This is exactly the kind of dinner I start craving when the weather turns warm and the farmers markets are overflowing with color again. Sweet bell peppers, fresh basil, creamy burrata, good olive oil—it’s the kind of ingredient combination that feels effortlessly California fresh while still delivering the comfort of a cozy bowl of gnocchi.

What I love most about this recipe is how little work it actually takes. Everything roasts together on one sheet pan until the peppers become soft and caramelized and the gnocchi turns golden around the edges. Then it’s finished with torn burrata, fresh basil, and a drizzle of balsamic glaze that melts into everything while still warm.

It’s simple enough for an easy weeknight dinner but beautiful enough to serve outside on the patio with a glass of wine and a big salad on the table. The whole dish feels relaxed, vibrant, and very much like the kind of warm-weather cooking I gravitate to, and you will too.

And honestly, this is one of those dinners that tastes like you spent far more time on it than you actually did.

Enjoy!

- Ingredients

  • Fresh gnocchi - Gnocchi roast beautifully on a sheet pan, becoming crisp on the outside while staying soft in the center.
  • Bell peppers - Use a mix of red, orange, and yellow peppers for sweetness, color, and that California farmers market feel.
  • Garlic
  • Extra-virgin olive oil
  • Kosher salt + black pepper + crushed red pepper flakes
  • Burrata - The creamy finish that turns this from a simple sheet pan dinner into something that feels restaurant-worthy.
  • Fresh basil - Adds brightness and freshness that makes the whole dish taste like summer.
  • Balsamic glaze - Brings sweetness, acidity, and a glossy finish that ties everything together. (Store bought glaze is an option)

- Equipment

  • Large sheet pan
  • Mixing bowl
  • Chef’s knife
  • Cutting board
  • Small saucepan (if making homemade balsamic glaze)
  • Serving platter or shallow bowls

My Go-To’s

Large Rimmed Sheet Pan - Gives the gnocchi and peppers enough space to roast properly instead of steaming.

Good Olive Oil - Since the ingredient list is simple, quality olive oil makes a noticeable difference here.

Microplane or Garlic Press - Makes quick work of the garlic and helps it distribute evenly throughout the dish.

- Let’s Make It Together

- Start by preheating the oven and adding the gnocchi, chopped bell peppers, and garlic directly onto a large sheet pan. Drizzle with olive oil and season generously with salt, black pepper, and a pinch of red pepper flakes.

- Toss everything together right on the pan until evenly coated, then spread it into a single layer so the gnocchi can roast properly.

- As the peppers soften and caramelize in the oven, the gnocchi begins turning golden around the edges while soaking up all the flavor from the garlic and olive oil.

- Once everything is beautifully roasted, transfer the pan from the oven and immediately tear the burrata over the warm gnocchi. Finish with fresh basil, a drizzle of olive oil, and balsamic glaze.

- Serve warm while the burrata is still soft and creamy.

- Perfecting the Cooking Process

The biggest key to this recipe is giving the gnocchi enough space on the sheet pan. If the pan is overcrowded, the gnocchi will steam instead of roast. Spreading everything into an even layer allows the gnocchi to develop golden edges while the peppers caramelize and become sweet and jammy.

Remember, if the gnocchi isn't browning as like, add on a few additional minutes in the oven to get those crispy edges.

- Add Your Touch

One of my favorite things about this recipe is how flexible it is. The base combination of roasted peppers, gnocchi, burrata, and basil already feels complete, but it’s also the kind of dinner you can easily adapt depending on what’s in season, what you have in the refrigerator, or whether you want to make it a little heartier for the evening.

  • Add hot Italian sausage for extra heartiness
  • Toss in cherry tomatoes during the last 10 minutes of roasting
  • Finish with arugula for a peppery fresh bite
  • Add toasted pine nuts for crunch
  • Swap basil for fresh oregano or thyme

- Set the Mood

Meals taste even better when the table feels inviting. Here are a few simple ways to set the mood for this recipe.

This is exactly the kind of dinner I like to make on warm evenings—fresh ingredients, minimal cleanup, and flavors that feel bright and comforting at the same time. The roasted peppers become sweet and silky, the gnocchi turns golden around the edges, and the burrata melts into everything in the best possible way.

It’s simple enough for a weeknight but easily feels special enough for casual entertaining or an alfresco dinner with friends.

If you love relaxed California-inspired cooking with fresh produce and cozy Mediterranean flavors, you’d probably also enjoy my Sicilian Lemon Butter Chicken with Garlic Thyme Rice, Roasted Tomato Spinach Artichoke Crostini, and Honey Roasted Rhubarb & Strawberry Labneh Plate for another fresh seasonal dish with an elevated feel.

And if you make this one for a patio dinner night, don’t skip the extra basil and balsamic drizzle right before serving—it completely brings the whole dish together.

- Before You Start

Do I need to boil the gnocchi first?
No. Fresh shelf-stable gnocchi roast directly on the sheet pan without boiling.

Can I make this ahead?
This dish is best served fresh while the burrata is creamy and soft, but leftovers reheat surprisingly well.

What if I can’t find burrata?
Fresh mozzarella works well, though burrata gives the dish a much creamier finish.

Can I add protein?
Absolutely. Italian sausage, grilled chicken, or even white beans pair beautifully with these flavors.

How do I make balsamic glaze?
Simmer balsamic vinegar in a small saucepan for about 10 minutes until reduced and glossy. Let cool slightly before drizzling.  Another option is to buy store bought balsamic glaze.

Roasted Tomato Bruschetta with Whipped Goat & Ricotta

This Roasted Tomato Bruschetta with Whipped Goat & Ricotta is the perfect balance of creamy, savory, and fresh. Sweet blistered tomatoes are layered over toasted bread with a whipped goat cheese and ricotta spread for an easy appetizer, summer lunch, or entertaining recipe everyone will love.

Roasted Tomato Bruschetta with Whipped Goat & Ricotta

Lately I’ve been on a bit of an Italian cooking journey in my kitchen — slowing down, using simple ingredients, and letting those classic flavors really shine. Some recipes are comforting, some are impressive, and then every once in a while you make something that feels like both.

This Roasted Tomato Bruschetta with Whipped Goat & Ricotta was one of those recipes for me.

I’ve actually been making this whipped ricotta and goat cheese mixture constantly lately because it’s just that good. Creamy, tangy, rich, and incredibly versatile — it instantly makes simple ingredients feel elevated. The second I paired it with these warm roasted tomatoes and crispy toasted bread, I knew I had to share it with you.

The sweet burst tomatoes, creamy whipped cheese, crispy toasted bread, and all those savory juices soaking into every bite… it immediately felt like something I’d order at a cozy little wine bar and then think about for days afterward. After the first bite, I knew it was one I had to share with you.

It’s simple enough for a casual lunch, beautiful enough for entertaining, and honestly one of those recipes that makes ordinary ingredients taste incredibly special.

Enjoy!

Ingredients

  • Cherry or grape tomatoes
  • Olive oil
  • Garlic
  • Salt & Black pepper
  • Goat cheese
  • Ricotta cheese
  • Thick sliced Multi-grain bread - or any rustic Italian bread or sliced baguette will work.

Equipment

-- Let’s Make It Together

Preheat your oven to 400°F.

Add the tomatoes to an oven-safe baking dish and drizzle with olive oil. Add in minced garlic and season with salt and black pepper, then toss to coat. Roast for 15–20 minutes, or until the tomatoes are blistered and beginning to burst.

While the tomatoes roast, whisk together the goat cheese and ricotta until smooth and creamy.

Heat a skillet over medium-high heat. Drizzle the bread slices with olive oil and toast until golden on both sides.

To assemble, spread the whipped cheese mixture onto the toasted bread and spoon the warm roasted tomatoes and juices over the top.

Serve immediately and enjoy warm.

-- Perfecting the Cooking Process

The key to making this bruschetta truly exceptional is roasting the tomatoes just until they blister and release their juices without fully collapsing. Blistering simply means the tomato skins begin to wrinkle, split slightly, and develop lightly roasted spots while the inside becomes soft and juicy. Those garlicky concentrated juices mix beautifully with the whipped cheese and soak slightly into the toasted bread, creating layers of flavor and texture in every bite.

-- Add Your Touch

This recipe is incredibly flexible and easy to personalize depending on the season or occasion.

Try adding fresh basil, hot honey, balsamic glaze, or a drizzle of pesto for even more flavor. You could also top it with prosciutto for a more substantial appetizer or swap in whipped feta for a slightly saltier twist.

For entertaining, I love serving this on a large wooden board with olives, marinated vegetables, and a chilled glass of white wine.

Set the Mood

Food is about more than just the recipe—it’s about the moment around the table. Here are a few simple ideas to set the mood when you serve this dish.

If you love recipes that feel elevated without being complicated, this Roasted Tomato Bruschetta with Whipped Goat & Ricotta is one you’ll come back to again and again. It’s simple, beautiful, and packed with flavor in the best possible way.

If you make it, I’d love to hear how you served it and what personal touches you added.

And if you’re enjoying these cozy Italian-inspired recipes lately, be sure to check out my other fresh appetizers, easy entertaining recipes, and seasonal favorites.

Before You Start

Can I make this ahead of time?

You can roast the tomatoes and whip the cheese mixture ahead of time, but assemble the bruschetta just before serving so the bread stays crisp.

What bread works best?

You want a bread that toasts really well and has some heft to it so it doesn't sink when you add toppings to it.  A hearty multi-grain, Rustic Italian or baguette slices work beautifully because they hold up well to the toppings.

Can I use only goat cheese?

Yes, but the ricotta helps mellow the tanginess and creates a creamier texture.

How should I store leftovers?

Store the tomato mixture and whipped cheese separately in the refrigerator for up to 3 days. Toast fresh bread before serving again.

Can I serve this cold?

It’s best served warm or room temperature, though the leftovers are still delicious chilled.

Mediterranean Quinoa Salad (Fresh & Flavorful)

This Mediterranean Quinoa Salad is fresh, colorful, and full of bright flavor. Made with crisp vegetables, chickpeas, quinoa, and a lemon herb dressing, it’s the perfect healthy summer salad for meal prep, cookouts, or easy lunches.

Mediterranean Quinoa Salad (Fresh & Flavorful)

This is the kind of salad that disappears fast at summer gatherings.

It’s bright, colorful, fresh, and somehow manages to feel both light and satisfying at the same time. The quinoa gives it heartiness, the vegetables keep it crisp and refreshing, and the lemon herb dressing pulls everything together with bold fresh flavor.

I especially love this recipe because it works for almost everything—meal prep lunches, backyard dinners, cookouts, or as an easy side dish alongside grilled chicken or kabobs. It’s one of those versatile recipes that tastes even better after it sits for a little while, making it perfect for warm weather entertaining.

Enjoy!

Ingredients

  • Quinoa — adds protein, texture, and makes the salad extra satisfying
  • Red bell pepper — brings sweetness and beautiful color
  • English cucumber — crisp, refreshing, and perfect for summer salads
  • Grape tomatoes — juicy bursts of freshness throughout the salad
  • Red onion — adds sharpness and balance
  • Chickpeas — hearty, filling, and packed with texture
  • Olive oil — forms the rich base of the dressing
  • Fresh lemon juice — keeps everything bright and fresh
  • Red wine vinegar — adds tang and depth
  • Fresh parsley — gives the salad a vibrant Mediterranean flavor
  • Garlic — adds bold savory flavor to the dressing
  • Salt — helps bring all the flavors together

Equipment

  • Medium saucepan
  • Fine mesh strainer
  • Large mixing bowl
  • Cutting board and knife
  • Small whisk or fork for dressing

My Go-To Tools

-- Let’s Make It Together

Rinse the quinoa well and cook according to package directions. Let cool slightly while preparing the vegetables.

Dice the bell pepper, cucumber, and red onion, then halve the tomatoes.

In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, parsley, garlic, and salt.

Add the quinoa, vegetables, and chickpeas to a large bowl. Pour over the dressing and toss until everything is evenly coated.

Serve immediately or chill for a bit to let the flavors blend together.

-- Perfecting the Cooking Process

The biggest key to great quinoa salad is texture. Rinsing the quinoa well removes bitterness, while allowing it to cool slightly before mixing helps keep the vegetables crisp and fresh instead of softening them.

-- Add Your Touch

This salad is incredibly flexible depending on the season or what you have in the fridge.

Add feta cheese for a creamy salty bite, avocado for richness, or grilled chicken for extra protein. Fresh herbs like basil or dill also work beautifully if you want to change the flavor profile slightly.

Set the Mood

Before You Start

Do I need to rinse quinoa first?
Yes. Rinsing removes the natural coating that can taste bitter.

Can I make this ahead of time?
Absolutely. This salad tastes even better after chilling for a few hours.

How long does it keep?
Stored in an airtight container, it keeps well for 3–4 days in the refrigerator.

Can I add protein?
Yes. Grilled chicken, shrimp, or salmon work wonderfully.

Can I serve this warm?
You can, but it’s best slightly chilled or at room temperature for the freshest flavor.

The Mediterranean Table: Spinach Feta Turkey Burgers with Lemon-Dill Yogurt & Salad

These Spinach Feta Turkey Burgers with Lemon-Dill Yogurt and Mediterranean Salad are bursting with bright, fresh flavor. Juicy, tender, and easy enough for a weeknight, this recipe is inspired by Primal Gourmet’s healthy Mediterranean-style dishes.

The Mediterranean Table: Spinach Feta Turkey Burgers with Lemon-Dill Yogurt & Salad

My husband and I have always been drawn to Mediterranean flavors — the brightness of lemon, the freshness of herbs, and the way a drizzle of olive oil can make even the simplest ingredients feel special.

One evening while scrolling Instagram, I came across a recipe from Primal Gourmet, one of my favorite creators for Whole30 and healthy spins on global cuisines. His Mediterranean turkey burgers immediately caught my eye — juicy patties packed with spinach and feta, paired with a tangy yogurt sauce and crisp salad. I had to try it.

I didn’t stray far from his version, because honestly, it was perfect as-is. The flavors are incredible — the turkey stays juicy and tender, the feta adds a creamy bite, and that lemon-dill yogurt ties everything together. It’s simple enough for a weeknight, yet fresh and elegant enough to serve for guests.

This has quickly become one of my new favorites — a dish that tastes like sunshine, simplicity, and the kind of meal that makes you slow down and savor every bite.

Enjoy!

What Ingredients Do I Need?

These Mediterranean-inspired turkey burgers come together with a handful of fresh, flavorful ingredients that balance brightness and comfort beautifully. Here’s what you’ll need:

  • Ground Turkey: Lean yet tender, turkey provides the perfect canvas for Mediterranean herbs and creamy feta. Choose 93% lean for juicy, flavorful patties.
  • Baby Spinach: Adds color, moisture, and a subtle earthy note that keeps the burgers tender and nutrient-packed.
  • Feta Cheese: Brings salty, tangy flavor and little creamy pops in every bite. Look for authentic Greek feta packed in brine for the best flavor.
  • Garlic: Freshly grated garlic deepens the flavor and ties together the lemon, dill, and herbs.
  • Egg: Acts as a binder to hold the burger mixture together while adding a little richness.
  • Fresh Dill: Adds a bright, herbal kick to the yogurt sauce that complements the feta perfectly.
  • Greek Yogurt: Thick, creamy, and tangy — it’s the base for that dreamy lemon-dill sauce that cools and balances the savory burgers.
  • Lemon Juice: Brings brightness and acidity, essential to achieving that true Mediterranean flavor.
  • Olive Oil: The heart of Mediterranean cooking — use a good-quality extra-virgin oil for both the salad and cooking the burgers.
  • Fresh Vegetables (Tomatoes, Cucumbers, Lettuce): Crisp, juicy, and colorful, they round out the plate with texture and freshness.
  • Fresh Parsley: A little sprinkle adds color, freshness, and that classic Mediterranean green note.

Substitutions and Variations

These turkey burgers are wonderfully flexible — you can adjust them for what you have on hand or give them a new flavor twist altogether.

Basic Substitutions

  • Protein: Swap ground turkey for ground chicken for a similar lean option. For a richer flavor, try ground lamb or beef.
  • Greens: Use finely chopped kale or arugula instead of spinach. Both add a slightly different flavor and extra nutrients.
  • Cheese: If you’re out of feta, try goat cheese for a creamy tang or crumbled cotija for a saltier bite.
  • Yogurt: Regular Greek yogurt is best, but dairy-free alternatives like coconut or almond yogurt work for a lighter option.
  • Herbs: No dill? Try fresh mint, basil, or oregano for a different Mediterranean spin.

Variation 1: Greek Island Style

Add a few chopped Kalamata olives and a pinch of lemon zest to the burger mixture, then top the finished burgers with sliced cucumber and a drizzle of olive oil. The olives bring depth and briny balance to the creamy feta.

Variation 2: Spicy Mediterranean Twist

Mix a teaspoon of harissa paste or a pinch of cayenne into the turkey mixture and top the burgers with a spoonful of tzatziki instead of the lemon-dill yogurt. This version brings heat and depth while keeping that fresh, Mediterranean vibe.

Kitchen Tips & Notes

  • Chill the Patties: Refrigerating the burger mixture for at least 30 minutes before cooking helps them firm up and hold their shape beautifully.
  • Don’t Overmix: Gently combine the ingredients just until mixed — overworking the meat can make the burgers dense.
  • Use Damp Hands: Lightly wet your hands before forming the patties; this prevents sticking and gives you smooth, even shapes.
  • Cook in Batches: Avoid crowding the pan so the burgers brown evenly and develop that golden crust.
  • Make Ahead Friendly: The burger mixture and the yogurt sauce can both be prepped a day ahead — perfect for easy weeknight dinners.
  • Serving Idea: Serve these burgers over the salad, wrapped in lettuce leaves, or tucked into warm pita with extra lemon-dill yogurt for a handheld version.
