Winter Wonders: Loaded Apple Nachos for Two

With only 5 ingredients, this sweet variation on nachos is a great snack or dessert to share with a friend.



Loaded Apple Nachos for Two


A sweet take on nachos with apples?  I'm all in!  I love apples, so when I cam across this Weight Watcher's recipe for apple "nachos" I knew I had to make this right away.  And it's not about being diet food, it's really about healthy food.  Just let me say this is really easy to pull together.  5 ingredients, and about 15 minutes and you have a wonderful dish.  MGG and I had this as a snack and it was gobbled up in no time.

Thinly sliced apples (use your favorite) are arranged on a platter and doused with some softened peanut butter.  Then comes the toppings of mini chocolate chips, sliced almonds, and coconut flakes.  Heaven!  Don't walk, RUN and make this now!  You can thank me later.

What Ingredients do I need?

  • an apple - choose your favorite
  • peanut butter - smooth works best here
  • sliced almonds - make it easy on yourself and buy sliced almonds. I keep them in the house all the time for salads, yogurt toppings etc.
  • mini chocolate chips - for just a hint of chocolate
  • unsweetened coconut flakes  - Bob Mills makes a great product


Substitutions and Variations

  • try pear nachos
  • drizzle on a different nut butter, almond or cashew are good choices
  • Shaved chocolate works instead of chips
  • sprinkle on some granola



Kitchen Tips and Notes

  • Watch the almonds closely when toasting, they burn quickly.
  • Microwave the peanut butter in 30 second increments until pourable.  Watch closely.
  • Don't let the sliced apples sit too long or they will turn brown.

Loaded Apple Nachos for Two


serves 2
WW Points: 7-9


2 Tablespoon sliced almonds
1 apple, cored and sliced into about 1/8" thick slices
1 1/2 Tablespoons peanut butter
1 Tablespoon mini chocolate chips
2 Tablespoons unsweetened coconut flakes

In a small skillet over low heat add almonds and toast, stirring often for about 3-4 minutes.

Arrange apple slices on a serving platter or plate.  Add peanut butter to a small microwave-safe bowl or cup and microwave on high for 30 seconds or until pourable.

Drizzle the peanut butter over the apple slilces.  Sprinkle the chocolate chips, coconut and slice almonds over the apples.  Serve.

5 Ingredient Creamy Mushroom Tortellini

Tortellini is combined with sautéed mushrooms and spinach and covered with a wonderful cream sauce.  Easy and fast!



I can only think of one thing better than a quick weeknight dish and that's one with only 5 INGREDIENTS!  Yes, that is what we are making for dinner tonight.  A Creamy Mushroom Tortellini dish that requires 5 ingredients to make.  And it's GOOD!



Tortellini should be a pantry staple in your house if you are wanting to make deliscious but quick meals.  It's budget friendly, everyone love it, and it cooks in a matter of minutes.  Today we aren't just going to through some marinara sauce on it, no...we are going to jazz these babies up!



I chose chicken tortellini for a little protein but you can use cheese if you like.  Add in some mushrooms, a little garlic, and some spinach doused with a cream sauce...heaven!



You can't beat these easy quick weeknight meals that come together in under 30 minutes.  Give this a try and let me know what you think.

5 Ingredient Creamy Mushroom Tortellini


serves 4


2 (9-ounce) packages chicken tortellini (or cheese)
2 tablespoons olive oil
8 ounces sliced cremini mushrooms
2 minced garlic cloves
1/2 cup half & half or heavy cream
2 packed cups baby spinach

Bring a large pot of salted water to a boil. Add cheese tortellini; cook according to package instructions until al dente. Drain well.

Heat olive oil in a large skillet over medium heat until shimmering. Add mushrooms, season with salt and pepper, and sauté until browned and tender, 5 minutes. Add garlic and sauté until fragrant, 1 minute. Add half & half and simmer until slightly thickened, 5 minutes. Add cooked tortellini and toss to coat. Add baby spinach, toss until wilted. Serve.

A steamy hot bowl of delicious tomato soup loaded with plump gnocchi and a dash of spinach.  Served with a salad and some crusty hot bread, this dinner is a nice hearty meal on a cold winter night.

Hi everyone!  It's been a couple of weeks since I posted anything.  We took a little time off for the holidays!  Hope everyone had a wonderful Thanksgiving filled with family and love (and good food!).

I wanted to pop in today with a quick recipe.  Well, it's not really a recipe because you don't actually have to make anything from scratch!  When we are in holiday mode and there are a zillion things to do to get ready I don't have all day to cook.  Do you feel that way too?  The question becomes "how do we get all this done and still put something hearty and satisfying on the table?  Today's I'm bringing your the perfect convenience item recipe to solve that dilemma.

3 INGREDIENT TOMATO GNOCCHI SOUP

Picture a steamy hot bowl of delicious tomato soup loaded with plump gnocchi and a dash of spinach.  Served with a salad and some crusty hot bread, this dinner is a nice hearty meal on a cold winter night.  

It only takes 3 ingredients to make this....yes 3!  And, I purchased all of them at Trader Joe's.  But, don't worry if you don't have a Trader Joe's near you, you can find similar items at Target, or your local grocery store!

What ingredients do I need?

  • tomato soup
  • frozen or fresh gnocchi
  • baby spinach

That's all it takes and it couldn't be simpler than heating it all up!  Trader Joe's frozen gnocchi are stuffed with tomato sauce and mozzarella, so they create and extra creamy bite in your soup.  But don't stop there....you can substitute the gnocchi with tortellini or ravioli.  Both of which will make an excellent soup add-in and you cook them right in the heating soup!

So take a break from all the holiday rush and serve up a warm bowl of soup with the held of some store bought items.  The recipe below will show you how!

3 Ingredient Tomato Gnocchi Soup

make 4 cups


32 oz carton tomato soup (such as Trader Joe's Creamy Tomato Soup)
16 oz. bag frozen gnocchi (such as Trader Joe's Outside-In  Stuffed Gnocchi)
2 handfuls baby spinach

In a medium sauce pan over medium heat, add tomato soup and gnocchi.  Bring soup to a boil and then reduce heat to a simmer and allow to cook about 5-7 minutes.  Once gnocchi are heated through add in spinach and stir until wilted.  Serve immediately.
