Making homemade pizza dough makes pizza night a little more special, and it just plain tastes better. There’s something so satisfying about starting with simple ingredients and turning them into a crust that’s crisp, light, and full of flavor. Over the years, I’ve grown to really love making my own dough, and most of the time I rely on my bread machine to do the heavy lifting.

But recently, while browsing recipes on King Arthur Baking Company, I came across this light and crispy pizza dough and immediately paused when I saw the rise time.

Thirty minutes.

No overnight rest. No multi-hour wait. Just a short rise and you’re ready to move on.

That’s when I thought, I can absolutely do this by hand.

So I grabbed my bag of King Arthur 00 flour, pulled out my mixing bowl, and decided to give it a try. From the very first batch, I was hooked. The dough was smooth, easy to work with, and baked up beautifully — light, crisp, and exactly what I want in a homemade pizza crust.

This dough is made with simple pantry staples, but each one plays an important role in creating that light, crisp texture.

You don’t need anything complicated — just good-quality basics and a little time.

  • Lukewarm Water - Activates the yeast and helps create a soft, workable dough.
  • Olive Oil - Adds flavor and keeps the crust tender inside while crisping outside.
  • Table Salt - Balances flavor and strengthens the dough structure.
  • King Arthur 00 Flour or All-Purpose Flour - 00 flour creates a lighter, more traditional pizza texture, while all-purpose works beautifully if that’s what you have.
  • Instant Yeast - Gives the dough its quick, reliable rise.
  • Baking Powder - A small boost that helps create extra lightness in the finished crust.

Let’s walk through this together — it’s easier than you think.

Start by measuring your flour carefully. If you’re not weighing it, spoon it lightly into your measuring cup and level it off. This keeps the dough from becoming too dense.

In a large bowl, combine the flour, yeast, baking powder, and salt. Add the lukewarm water and olive oil, then mix until everything comes together into a soft dough.

Turn the dough out onto a lightly floured surface and knead for a few minutes, until it feels smooth and elastic. It should be soft but not sticky.

Place the dough in a lightly oiled bowl, cover, and let it rise at room temperature for about 30 minutes, or refrigerate for a longer rise if needed.

Once risen, roll the dough into a 12-inch circle. Transfer it to parchment paper or a lightly oiled pan and let it rest for about 20 minutes while the oven preheats to 450°F.

  • Salt: Essential for flavor balance and strengthening the gluten, giving your pizza crust structure and chew.

Making Neapolitan pizza dough at home is easier than you might think, but a few simple tricks can take your crust from good to restaurant-quality. Here’s what we’ve learned:


  • Room Temperature Ingredients Matter: Yeast works best when it’s gently awakened. Make sure your dough ingredients are at room temperature so the fermentation happens evenly.
  • Flour Your Surface Generously: When stretching the dough, a lightly floured countertop (and hands) keeps it from sticking while preserving that airy, soft interior.

  • Stretch, Don’t Roll: Use your fingers to gently coax it into a circle by stretching the dough. Rolling the dough can squash the bubbles that make a Neapolitan crust light and airy.
  • Bake Hot & Fast: Your home oven set to 500ºF is ideal. The high heat ensures the edges puff up and char slightly while the center stays soft and chewy.
  • Keep Toppings Simple: Less is more when it comes to toppings. Too many can weigh down the dough and prevent that signature airy texture. Choose quality ingredients, and let the dough shine.
  • Experiment & Enjoy: Don’t stress about perfection. Every home-baked pizza is a little different — embrace the rustic charm and savor the process.
  • Storing Your Dough for Later: Refrigerate: After the first rise, wrap unused dough tightly in plastic wrap or place it in an airtight container. It will keep in the fridge for up to 3 days. Let it come to room temperature for about 30–60 minutes before shaping and baking. Freeze: Divide the dough into portions, wrap tightly in plastic, then place in a freezer-safe bag. Dough can be frozen for up to 1 month. Thaw overnight in the fridge, then bring to room temperature before stretching.

The Best Pizza Dough



I'm on a pizza dough quest to find the best homemade thin crust pizza.

I think I found it...

I recently took a pizza dough class using various types of flour.  It was a wonderful and informative class.  It was amazing and enlightening to delve into the world of flours.  Their different compositions and baking properties lend to the finished product.

My favorite was by King Arthur flour called King Arthur Pizza flour. a custom blend of durum and all-purpose flours for the best flavor and texture for any pizza dough recipe. Durum flour adds flavor and color, dough conditioner makes it easier to shape, and a bit of baking powder gives extra rise and crispness. It is a great flour to use for pizza dough, calzone, flatbreads, focaccia...you get the picture!

This flour makes a really tender dough. It's soft and easy to work with. Best of all it produces a light as air, tender, crisp pizza dough.

This crust the best, by far, that I've ever tasted! Certainly the best out of the several we made in class. I immediately went home and ordered some of this incredible flour. I could hardly wait when the box arrived. I made pizza immediately. Please note: the recipe below makes two pizza crusts. You can either half the recipe or make both and freeze half of the dough so you have pizza in a flash on another night!

I used a pesto dipping oil for the sauce, and just topped it with heirloom tomatoes and fresh mozzarella cheese. Delicious!!!

Thin Crust Pizza Dough


makes 2 crusts


2 t instant yeast
2 t sugar
1 1/2 t salt
1 T Baker's Special Dry Milk (optional) or nonfat dry milk
3 t pizza dough flavor (optional) (available at www.kingarthurflour.com)
3 c King Arthur Pizza Flour
1 c water
2 T olive oil

In a bread machine set on dough cycle, combine all ingredients. Allow machine to mix and complete the first rise. Remove dough from the machine and place on a well floured surface, or board.

Divide the dough in half. Roll one half of the dough out to your desired thickness and then place on a prepared pizza pan, either using cooking spray, or a light cover of cornmeal.

Preheat oven to 450 degrees, and allow dough to rest in the pan, covered for another 15-30 minutes. Top with your favorite sauce and toppings. Place in the oven and bake for 10 minutes or until golden brown, and toppings are bubbly.
