Taco Soup


It's still been cold here in LA and with weather like this I always turn to soups to warm my soul. (Or at least my tummy!)  Do you feel that way?

They are easy to make, and soooo good for you.

This is a great dish, taking the flavors of one of my favorite food, tacos, and putting them in a soup.  It comes together quickly, so you can certainly make this up during the week when time is short.

Hope you enjoy this, the flavors blend nicely.

To make, you will need:  Ground Sirloin, onion, a can of diced tomatoes, a can of red kidney beans, tomato juice, cumin, garlic powder, taco seasoning (use my homemade seasoning here:  Homemade Taco Seasoning) and beef stock. 

In a large pot add oil and heat on medium.  Add onion and cook for 5 minutes to soften. 


Add ground sirloin and cook 8-10 minutes until cooked through.  Break up meat in to pieces while cooking.



Add the tomatoes, beans, tomato juice, spices, and stock.



Bring to a boil.  Turn heat down and simmer, covered, for about 15 minutes.


Look how yummy!



Serve with your favorite garnishes!  Enjoy!


Taco Soup
1 T oil
1 small onion, finely chopped
½ lb. ground sirloin
salt and pepper
14 oz can of diced tomatoes
14 oz can red kidney beans
1 c tomato juice
1/4 t. cumin
1 ¼ t. chili powder
1 t. taco seasoning
½ t. garlic powder
1 ½ c beef stock

Garnishes:
Sour cream
Shredded cheese
Tortilla Chips
Avocado

Heat oil in a large soup pot over medium heat.   Add onion and cook 5 minutes.  Add ground sirloin and cook, breaking up meat in to pieces, for 8-10 minutes. Season with salt and pepper.
Add tomatoes, kidney beans (including their juices), tomato juice, spices, and stock.  Bring to a boil.  Reduce heat, cover and simmer for 15 minutes.  Stir occasionally. 
Serve with garnishes of your choice such as sour cream, shredded cheese, tortilla chips or avocado pieces.
