I recently purchased Trader Joe's Multigrain Baking & Pancake Mix. I was pleasantly surprised to come across this mix. I want to incorporate more whole grains in my diet and the grocery stores in my area do not carry a multi-grain all-purpose mix. I've been looking and looking...found whole wheat pancake mixes, or specialty waffle mixes. Never found an all-purpose one....until now!
So I immediately grabbed a box to try. First I made the pancakes...wow..such a nice, nutty flavor. They rose nicely, and were light, and didn't have the strong wheaty taste that some other wheat mixes do.
Next, I was in need of a quick breakfast, so I tried making biscuits. I made drop biscuits. I'm kinda a purist with biscuits (white flour), but these were really quite good.
So on Sunday, I decided to try the Blueberry Coffee Cake recipe on the box. Wow! This was excellent, moist and cakey full of flavors.
This mix is a definite winner, and at $1.99 it is also a steal! In fact, I stopped by Trader Joe's tonight and bought another box!

ReplyDeleteYou can use this mix with anything recipe that calls for an all purpose mix such as this. The Betty Crocker site has a lot of savory dishes to choose from that utilize a baking mix as an ingredient. One of my favorites it the Italian Pizza Bake.
It's 2021 and I have searched for this pancake mix I used to buy at Trader Joe's. To me this is a healthy choice. But why discontinue. Each time there is something good out there they stop selling it. There was also a minty snack for dogs that worked for their breath and teeth they stop selling it. There is actually a lot more just to mention a couple of them. They are so upsetting. Why can we not have what is good for our body?
ReplyDeleteWell to thank you for your blog I am able to say what I need to say. I know it's been maybe 4 to 5 years now cannot remember when the last time I asked trader Joe's about this special kind of pancake mix. It was the best out there and just disappeared from the shelf. Whatever
