Grilled Veggie Naan Pizza

The last day of summer is here and we're celebrating in style with grilled pizza!

We love pizza and have it often.  I've used so many different bases for pizzas such as Zucchini and Sausage Flatbread Pizza, The BEST Pizza Dough, and this French Bread Pizza..but today we are going to use Naan bread, AND we are going to fire up the grill while we still can!

Naan is an Indian style flatbread and is the perfect base for a quick pizza.  It's sturdy enough to hold up against hearty toppings yet soft enough for a nice bite.

It's all about the GRILLED VEGGIES!  Yes, today's pizza is bursting with flavors from the addition of grilled vegetables for the toppings.  Just forage in your frig for your favorite veggies that will hold up on the grill and get going.  We used red onion, zucchini, tomatoes, and summer squash.

Grilling brings on the FLAVOR!  When grilling vegetables make sure to douse them in oil and season them with a little Italian herbs for extra flavor.  Get some good grill marks on your veggies too, cause that's where the flavor is!

Show your pizza a little love!  Top your naan bread with your favorite pizza sauce, then sprinkle on a seasoning mix to give it some more flavor.  Pile on the grilled and chopped veggies then add a little Parmesan cheese.  Pop it back on the grill to heat it all up then add a sprinkle of fresh basil and a douse of good olive oil!

Try this recipe out this weekend while the weather still allow for grilling.  You will be surprised by how easy this is to make, but you won't be surprised at how GOOD it tastes!

Grilled Veggie Naan Pizza

serves 1

1 medium sized Naan flatbread (I used Stonefire's)
1 zucchini, sliced into planks
1 summer squash, sliced into planks
1 tomato sliced
1 red onion, sliced and left in whole slices
olive oil
1 tsp Italian seasoning
pizza sauce
pizza seasoning
shaved Parmesan cheese
basil, chopped

Preheat your grill over medium heat.  Drizzle olive oil on the sliced vegetables, both sides, and sprinkle with the Italian seasoning.  Place on grill and cook until tender, about 5 minutes.  Turning when necessary.

Remove vegetables to a cutting board and chop into bite sized pieces.  Set aside.

To assemble pizza take your Naan flatbread and add some pizza sauce to the bottom.  Sprinkle with some pizza seasoning.  Add your grilled, chopped vegetables and place back on the grill.  Cook, covered, for about 7-8 minutes until warmed through.  Remove and sprinkle with Parmesan, douse with a little olive oil, and sprinkle chopped basil on top.  Cut and serve.

Cajun Pot Roast - Slow Cooker Heaven

Winter seems to have finally come to Southern California.  

In a time where most of the country was dealing with rain and snow we've been experiencing an unusually dry and hot winter.  Like 80's hot...crazy I know.  We're tired of the heat and we crave water so that we won't be in a drought situation but the weather doesn't want to cooperate.  Finally, last week we got what they called out biggest storm of the season and we had rain.  Quite a bit I might add, and it's actually really, really cold.  

Out came the coats and the slow cookers!  Time for some comfort food to eat on a cold winter's night.

It's March and I missed Mardi Gras, but that doesn't stop me from craving Cajun flavors.  And when I want slow cooked comfort food I always think of my Mom's Famous Pot Roast.  So I decided to turn her pot roast into a Cajun flavored one.   Meat that is tender but spiced just right, surrounded by soft flavorful vegetables.  Yum!  This Cajun Pot Roast is a twist on a classic but will have your mouth bursting with flavor and craving more!

I typically use chuck roast or sirloin, or top round roast for my cut of meat.  However, you can use your favorite cut.  To get extra flavor in your dish make sure to sear the meat prior to putting it in the slow cooker.  It makes a big difference in the flavor so don't skip this step.  

My favorite slow cooker is this one.  I've used it for a couple of years and just love it!  The size is perfect and the features make this handier than your average slow cooker.

This dish is a definite winner and should be part of your rotation.  Make sure to fix this soon and tell me how you like it.  As I write this it's raining.  Another storm has made it's way down to So. Calif.  Although is bone chilling cold, we need the rain, and I enjoy being cozy in the house on a weekend!  Keep warm, and pull out your slow cookers.  They are top notch in my book!

Cajun Pot Roast

serves 4

2 Tbsp canola oil
3 lb chuck or top round roast
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1 tsp salt
1 tsp ground black pepper
1 tsp cayenne pepper
1/2 tsp thyme
1/2 tsp oregano
2 stalks celery, chopped
2 cloves garlic, chopped
1 onions, sliced
1 red bell pepper, sliced
1 orange bell pepper, sliced
14 1/2 oz can diced tomatoes
2 tsp tomato paste

In a large skillet or in slow cooker on sauté mode, add the canola oil until hot and sear the roast on all sides until brown.  If using the skillet remove and place meat on the bottom of a slow cooker.  

In a small bowl add all the seasonings, through oregano, and mix.  pour over meat in slow cooker.  Add sliced onion, celery, garlic, bell peppers on top of meat.  Add the diced tomatoes with their juices over the vegetables.  Add the tomato paste toward the side of the pan to blend with the juices.

Cook on low 8 hours or on high 4 hours.  Remove meat and shred or chunk and place back in the slow cooker.  Serve meat along with vegetables and sauce over mashed potatoes or rice if desired.

Sheet Pan Beef Fajitas

I just love sheet pan meals, don't you?

The are so easy to put together because the whole meal cooks on the same sheet. That's right, meat and vegetables, (chicken, beef, pork, and fish) can be combined on the same tray and roasted in the oven! It's a new marvel and I'm loving it! This is the perfect weeknight meal.

Today we are going to take a walk on the Latin side. How about some delicious, sizzling fajitas? Sounds great, right! All those caramelized onions and peppers mixed with your choice of meat, wrapped up in a hot fluffy tortilla. Oh man!

So today I'm craving steak, so lets make Sheet Pan Beef Fajitas.

With this easy supper, slices of sirloin steak, bell peppers and onion are roasted together, then tucked inside warm tortillas and served with Mexican rice and slices of lime.

Since it all cooked on one pan, clean up is a breeze!







Sheet Pan Beef Fajitas



serves 4

1 lb. sirloin steak, left whole
1 red bell pepper, seeded an thinly sliced
1 yellow bell pepper, seed and thinly sliced
1 yellow onion, thinly sliced
2 Tbs. canola oil
2 Tbs. fajita seasoning
1 tsp. kosher salt
8 flour tortillas
Mexican rice for serving
Lime wedges for serving


Preheat an oven to 425°F

Place bell peppers, onion, and steak on a baking sheet. Steak should be in the middle surrounded by the vegetables. Drizzle oil over peppers, onion, and steak. Tossing to coat. Sprinkle fajita seasoning over the steaks, both sides, and rub in to cover surface area.

Place in the oven and roast, stirring the vegetables once halfway through, until the steak is cooked through and the vegetables are tender, 12 to 15 minutes.

During the last 5 minutes of cooking, wrap the tortillas in aluminum foil and place in the oven.

Remove the steak from the pan and allow to rest 5 minutes, then slice thinly Plate steak slices and vegetables. Serve with flour tortillas, Mexican rice (optional) and lime wedges.

Slow Cooker Shredded Chicken (Mexican Style)

Last year I brought you a great semi-homemade way to make Shredded Chicken Taco Meat using a slow cooker.  It's super simple and tastes great in a pinch, but now we are going to explore an even better version.  A totally, made from scratch version.

From scratch?  Yes!  You will be using all your own spices rather than taco seasoning and adding in some flavors and textures that will produce a chicken dish that is outstanding!  You'll still get to use the slow cooker and therefore the benefit of hands off cooking.  Here's the one I use.  Prepare your food in the slow cooker in the morning, and when you get home from work the house will smell like your favorite
taqueria!

SLOW COOKER SHREDDED CHICKEN (MEXICAN STYLE)

So what can you do with Mexican Style Shredded Chicken??  Well, how about filing for tacos, burritos, chimichangas, tostadas, flautas, chicken tortilla soup, enchiladas....it's endless I tell you!  And there is another plus to this recipe.  Make a big batch and freeze the shredded meat in portioned batches for future meals.  How great is that!

We ended up making street tacos with our chicken.  I found really small flour and corn tortillas at our Smart & Final store and they were the perfect bite sized vehicle for our tacos. 

This chicken meat is so versatile and has the BEST flavor you will want to keep this recipe handy because you'll be making this one often!

Slow Cooker Shredded Chicken (Mexican Style)

1-1/2 - 2 pounds chicken breasts
1/2 cup medium salsa
1 4 oz. can mild diced green chilies
1 14.5 oz. can low sodium diced tomatoes, drained
1 tablespoon chili powder
1 teaspoon salt
1 tsp ground cumin
1 tsp garlic powder 
1 tsp onion powder
1/2 tsp paprika
1/2 tsp dry oregano
1/2 tsp black ground pepper
1 tsp chipotle chili pepper seasoning (I used Mrs. Dash, no salt)


Place the chicken breasts in your slow cooker.

Add the remaining ingredients and place the lid on the slow cooker. Cook on high for 2-4 hours or on low for 6-7 hours.

Remove chicken and place on a cutting board and allow it to cool, enough to handle.  Shred chicken and return to the slow cooker so it absorbs some of that seasoned juice.  Strain the meat from the juices to use.

Beth's Confetti Rice

Everyone needs a good side dish that will go with many types of meat and that's what we are going to talk about today.

It's still late summer here in Southern California and we are still grilling every chance we get.  Actually, we'll be grilling well into October as the weather tends to be warm.  So I wanted to make a rice dish to go with some shrimp and scallops we were grilling (recipe coming).  You know rice goes well with any type of meat.  But I wanted to jazz this up a bit.  Something sort of like a pilaf with veggies, or like a Caribbean confetti rice, but my style.  Thus,  Beth's Confetti Rice was born!

BETH'S CONFETTI RICE

Imagine a nice basmati rice cooked until fluffy and tender, then tossed with an array of veggies.  Spicy sweet bell pepper, tender peas, crisp sweet corn, and sweet onion are combined with the heavenly rice and sprinkled with cilantro for extra flavor.  Amazing!  This is the PERFECT rice to serve with any grilled meat.

This side dish is perfect for late summer gatherings.  It goes well with pork, steak, fish, and chicken dishes whether they are grilled or baked or pan fried.  It's just a great compliment that you will want to eat over and over.

Beth's Confetti Rice

serves 4-6

1 cup long grain basmati rice, rinsed well
1½ cups chicken broth, low sodium
2 Tablespoons butter
1/2 cup red bell peppers, diced
1/2 medium sweet onion, diced
1/2 cup frozen peas
½ cup frozen or fresh corn
2 cloves garlic, minced
salt and pepper
¼ cup cilantro, chopped 

Add the rice, and broth medium sauce pot. Set over medium heat and cover. Bring to a boil, then stir and lower the heat. Cover and allow the rice to cook until the liquid is absorbed about 15-20 minutes. Remove from heat.

Meanwhile, add the butter to a large skillet over medium heat. Add the bell peppers and onions. Sauté for 2-3 minutes, to soften.  Add the peas, corn and garlic. Season with salt and pepper.   Stir and cook for another 2 minutes until heated through.  Add the cooked rice to the skillet and toss well to combine.  Sprinkle with the cilantro and toss.  Serve warm as a side dish.

Soup in the Summer?  Heck yea!

Soup is not just for winter my friends.  A good soup can be enjoyed all.year.long.  So why not take advantage of the farmer's market bounty of fresh vegetables!  That's just what I did last weekend.

My girlfriend and I went to check out the Farmer's Market held in Calabasas.  Of course we picked the hottest weekend to go, and even though we went early it was smoldering hot at 9am!  Not to be deterred we plunged in among the sea of stands where local farmers were selling the best fresh fruits and vegetables.  Armed with a large shopping bag I intended to get a variety of fresh summer veggies to make a wonderful soup that evening.  Boy did I hit the jackpot!

Just look at this bounty!  I couldn't resist the tempting fruit as well, and totally overloaded my bag.  So bearing the heat and the crowd I would say this shopping spree was a huge success!  I love the variety of items at the Calabasas Farmer's Market, so if you are in the area on a Saturday morning, put this on your list.

I'm also sharing with you a little trick to add extra flavor in the soup.  It will taste as if the soup has been cooking all day.  The secret is to add a little concentrated stock base such as this one.  It gives you the boost that you need to create that long simmered flavor.  Shhhh! don't tell anyone, they'll never know you weren't slaving away all day for this awesome soup!

Farmers Market Bounty Summer Vegetable Soup with Chicken

1 medium sweet onion, chopped (1/2 cup)
2  stalk celery, thinly sliced
2 tablespoon olive oil
3 cloves garlic, minced
2 1/2 cups reduced-sodium chicken broth
1 cup water
1 - 1 1/2 tsp chicken stock (such as Knorr Chicken Homestyle Stock)
1/2 lb. 2-inch-diameter red potatoes, quartered
1/2 lb. fresh green beans, trimmed and cut into 1-inch pieces (1 1/2 cups)
1 yellow summer squash, halved lengthwise, and cut into thick slices
1 zucchini, halved lengthwise, and cut into thick slices
2 cups coarsely shredded cooked fresh chicken meat (light and/or dark meat)
1 large tomato, coarsely chopped
1 tablespoon snipped fresh thyme
1 teaspoon ground sage
1/4 teaspoon ground black pepper

In a Dutch oven or large stock pan cook onion and celery in hot oil over medium heat for 5 minutes.  Stir occasionally. Add garlic and cook and stir for 30 seconds. Add broth and water and bring to a boil. Add potatoes, beans, and squashes. Return to a boil and reduce heat. Cover and simmer for 15-20 minutes or until vegetables are tender.

Stir in the chicken meat, tomato, thyme, sage, and pepper. Heat through about 10 minutes. Ladle soup into bowls.

    Cucumber, Tomato, and Avocado Salad

    I do love a fancy salad, but a lot of the time I prefer simpler recipes that aren’t a lot of trouble.  A honeycrisp apple and romaine salad is awesome, but I’m happiest when you give me a simply fresh salad that I can throw together easily and still get oohs and aahs out of MGG and my friends.  (This Caribbean Chicken Salad may be an exception though...!)

    Plus, if you have to travel with this salad it's guaranteed to arrive beautifully, and not look like it fell in the floorboard of the back seat of your car!  This simple and fresh salad looks beautiful no matter how it lands!

    EASY CUCUMBER, TOMATO, AND AVOCADO SALAD TO THE RESCUE
    If you need a versatile, yet simple salad recipe, that goes well with everything from steak to hot dogs then this Cucumber, Tomato, and Avocado Salad is the one for you.  It's a completely fresh and juicy salad with accents of rich buttery avocado for good measure.  It's satisfying and healthy, offering a multitude of vitamins, anti-inflammatory properties, and healthy fats.



    This is a great fresh salad that will keep well in the refrigerator for several days.  This delightful salad easily pairs with burgers, chicken, fish, or steak.  It's versatility makes it the perfect go to salad of the summer.  Not to mention that people will just flip over this salad and quickly ask you for the recipe!

    Did I mention that it's easy to put together?  Well it is.  A large serving bowl is all that's needed, so you save on dishes.  The vegetables are chopped in larger chunks making the prep work go fast.  Adding some salt & pepper and a drizzle of really good olive oil tops this easy-peasy salad off.    You can't mess up and you can't go wrong with this salad.

    Cucumber, Tomato, and Avocado Salad

    1 English cucumber
    3 Roma tomatoes
    3 avocados
    1/4 red onion,
    1/3 cup cilantro, chopped
    1 lemon
    salt and pepper
    Olive oil

    Slice the cucumber into half lengthwise, then cut each half into medium to large slices.  Place in to a large bowl.  Cut the tomatoes in half lengthwise and then cut each half lengthwise again and cut into chunks.  Add to the bowl.   

    Cut open avocados and remove the pits.  Peel skin off and cut lengthwise and then into chunks.   Add to the bowl.   Peel and slice the red onion into thin strips.  Add to the bowl.  Add the chopped cilantro to the bowl. 

    Slice the lemon in half and drizzle the juice over the salad in the bowl.  Sprinkle with salt and pepper to taste.   Drizzle with olive oil until moist (about 1/4 cup) and stir to combine.  Serve.

    Any leftover may be placed in an air-tight container and refrigerated for several days.
